    Modelling of Thermal Sterilization of high-moisture snack foods: feasibility analysis and optimization

    High-moisture snacks, such as steamed buns and rice cakes, are traditional and popular in Asian countries. However, their shelf life is short, primarily due to microbial spoilage. Current manufacturing methods address this shortcoming through the use of chemical preservatives. To satisfy consumers’ demand for preservative-free food, thermal sterilization of a model high-moisture snack (steamed rice cakes) is investigated in this work. Bacillus cereus spores are heat-resistant pathogens typically found in rice products; hence, they constitute a suitable candidate to assess the effectiveness of thermal sterilization. A validated combination of predicted temperature profile of rice cakes based on thermal properties extracted experimentally with thermal inactivation kinetics of B. cereus spores allows us to assess the sensitivity of processing conditions to sterilization efficiency. Using both experimentation and modelling, it is shown that enhancement of heat transfer by improving convection from the heating medium (either water or steam) has a limited effect on inactivation due to the intrinsic kinetics of spore inactivation

    Efforts to capture high amylose in rice

    Screening of wild and cultivated rice in IRRI germplasm collection revealed that majority have intermediate apparent amylose content. It appears that ancient farmers selected rice based on texture of the lower amylose varieties, considering that the majority of rice consumers today prefer intermediate to soft-textured rice. Furthermore, 30% seems to be the natural upper natural limit of amylose levels in wild-type rice. If this is the case, the rich biodiversity of rice has been subjected to the bottleneck of domestication to select for grains that have superior cooking and eating but not nutritional or satiating qualities considering that the majority of rice consumers today eat rice three times a day. On the other hand, the amylose content of available rice mutants with deficient SBEIIb or an over-expressed GBSSI also revealed amylose levels of around 35% which is significantly lower by comparison with other high amylose cereals, whose amylose content ranges from 70–90%. Hence, to produce the high amylose phenotype in rice, one might need to target different sets of enzymes or regulatory pathways. Since increasing the amylose levels in rice might mean a concomitant increase in its resistant starch content and in its levels of satiety, and a decrease in its glycemic response, developing high amylose rice by biotechnology is imperative. This type of rice will be important not only in addressing the growing obesity epidemic which now also affects the developing countries but also as a basis of novel degradable biopolymers and for further elucidating the mechanisms of starch synthesis in the cereal endosperm. In this paper, we also present the status of our research project which aims to silence the expression of SBEIIa, SBEIIb and SSIIa singly or in combination using microRNA and RNAi silencing technologies with the aim of increasing the amylose levels in rice beyond its natural limits

    Ovarian hormones and pituitary responsiveness to gonadotrophin releasing hormone in mice

    In the present study the role of progesterone and oestradiol in modulating the responsiveness at the anterior pituitary gland to gonadotrophin releasing hormone (GN-RH) was investigated by measuring the release of luteinizing hormone (LH) in ovariectomised mice which had been pretreated with these steroids.A significant release of LH was seen in the animals receiving GN-RH. Pretreatment with oestrogen and progesterone depressed LH levels in the animals which did not receive GN-RH, and resulted in a larger release of LH in the animals receiving GN-RH in comparison with the control group pretreated with oil

    Extrusion induced low-order starch matrices: enzymic hydrolysis and structure

    Waxy, normal and highwaymen maize starches were extruded with water as sole plasticizer to achieve low-order starch matrices. Of the three starches, we found that only high-amylose extrudate showed lower digestion rate/extent than starches cooked in excess water. The ordered structure of high-amylose starches in cooked and extruded forms was similar, as judged by NMR, XRD and DSC techniques, but enzyme resistance was much greater for extruded forms. Size exclusion chromatography suggested that longer chains were involved in enzyme resistance. We propose that the local molecular density of packing of amylose chains can control the digestion kinetics rather than just crystallinity, with the principle being that density sufficient to either prevent/limit binding and/or slow down catalysis can be achieved by dense amorphous packing

    A viable superluminal hypothesis: Tachyon emission from orthopositronium

    Tachyons are hypothetical particles that travel faster than the vacuum speed of light. Previous experiments have searched for, but have not found evidence of tachyons. Long-standing, anomalous measurements of the orthopositronium (o-Ps) decay rate are interpreted as evidence for two tachyons being occasionally emitted when o-Ps decays. Restricting the coupling of tachyon pairs to a single photon (no tachyon coupling to matter) yields a new theory where tachyons are only observed in o-Ps decay and not in the previous tachyon experiments. Combining the single photon coupling theory with all previous experiments predicts that these tachyons must deposit energy while traversing scintillator detectors. A new tachyon search experiment will use this energy loss prediction to attempt to find tachyons passing through the apparatus or set limits disproving the original o-Ps to tachyon hypothesis. Viewing an intense o-Ps source, a time-of-flight spectrometer uses the superluminal property of tachyons for identification.     A search for massive neutral bosons in orthopositronium decay

    We have searched for an exotic decay of orthopositronium into a single photon and a short-lived neutral boson in the hitherto unexplored mass region above 900 keV/c2{\rm keV}/{\it c}^{2}, by noting that this decay is one of few remaining candidates which could explain the discrepancy of the orthopositronium decay-rate. A high-resolution measurement of the associated photon energy spectrum was carried out with a germanium detector to search for a sharp peak from this two-body decay. Our negative result provides the upper-limits of\mbox{ }2.0×10−42.0 \times 10^{-4} on the branching ratio of such a decay in the mass region from 847 to 1013 keV/c2{\rm keV}/{\it c}^{2}, and excludes the possibility of this decay mode explaining the discrepancy in the orthopositronium decay-rate.Comment: a LaTeX file (text 7 pages) and a uuencoded gz-compressed PostScript file (text 7 pages + figures 4 pages
