    Formation of Flavanol-aldehyde Adducts in Barrel-aged White Wine – Possible Contribution of These Products to Colour

    This paper describes the formation and diversity of new compounds resulting from the polymerisation of furanic andphenolic flavanol-aldehydes with HPLC‑DAD and LC‑ES/MS analysis. Polymerisation, resulting from nucleophilicreactions, formed dimers, trimers, soluble and insoluble polymers. Reactions in hydroalcoholic solution with purealdehydes (phenolic and furanic) and flavanols (catechin) were studied. The study was repeated with differentaldehydes in white wine. This research focused particularly on the colour properties of the released products and theirpotential impact on the colour of white wine. Some products were purified and isolated; these were mainly catechinfurfuraldehyde,catechin-methyl-5-furfuraldehyde, catechin-hydroxymethyl-furfuraldehyde,catechin-vanillin, andcatechin-syringaldehyde dimers. The most powerful coloured products resulted from furanic aldehydes. Over thecourse of the experiment, the reaction produced dimers, trimers and oligomers. After 50 to 60 days, the colour of thesolution was mainly due to soluble polymeric forms. In addition, the role of SO2, generally used during vinificationand ageing, was studied.     Le roman d'entreprise: breaking the silence

    This article looks at three recent French novels novels in order to explore key themes in what has become known as the roman d’entreprise: Pierre Mari’s RĂ©solution (2005), Nathalie Kuperman’s Nous Ă©tions des ĂȘtres vivants (2010) and Thierry Beinstingel’s Retour aux mots sauvages (2010). The figure of the entreprise functions both as a fictional representation of the post-Fordist workplace environment in companies such as France TĂ©lĂ©com, and also as a means of tackling wider issues of work and social organisation in an era of neoliberal managerialism. The concepts of capitalist realism, organisational miasma and virtuality are used to analyse the ways in which the three novels convey the distinctive affective landscape of the contemporary entreprise. Fiction is used to consider the prolix and self-referential nature of the managerialist entreprise, which enables it to exert a significant influence on the individual and collective subjectivities of employees. The three novels focus on the capacity of the entreprise to capture language and impose an affect of silence on employees

    Parody of political correctness or allegory of “Immaterial Labour”? A second look at Francis Veber’s Le Placard (2001)

    This article questions whether readings of Francis Veber’s Le Placard (2001) as simply a parody of political correctness have tended to overlook the allegorical significance of its depiction of a middle-aged executive forced to pretend to be gay, simulating libidinal investments he does not in fact possess, in order to protect his job. It argues that the film merits re-interpretation as being not only a parody of political correctness but also a powerful allegory for the increasing demands placed on employees to invest their most personal affects and aptitudes in their work. Drawing on the work of Yann Moulier Boutang, the article interprets such demands as symptomatic of a regime of ‘cognitive capitalism’, in which ‘immaterial’ forms of labour represent the primary source of surplus value. The article thus offers an alternative reading of the film’s treatment of questions of work, gender, sexuality, family, and nation, before situating Le Placard in the context of a broader range of recent French filmic representations of the contemporary workplace

    Potential of a multiparametric optical sensor for determining in situ the maturity components of red and white vitis vinifera wine grapes

    A non-destructive fluorescence-based technique for evaluating Vitis vinifera L. grape maturity using a portable sensor (Multiplex Ÿ) is presented. It provides indices of anthocyanins and chlorophyll in Cabernet Sauvignon, Merlot and Sangiovese red grapes and of flavonols and chlorophyll in Vermentino white grapes. The good exponential relationship between the anthocyanin index and the actual anthocyanin content determined by wet chemistry was used to estimate grape anthocyanins from in field sensor data during ripening. Marked differences were found in the kinetics and the amount of anthocyanins between cultivars and between seasons. A sensor-driven mapping of the anthocyanin content in the grapes, expressed as g/kg fresh weight, was performed on a 7-ha vineyard planted with Sangiovese. In the Vermentino, the flavonol index was favorably correlated to the actual content of berry skin flavonols determined by means of HPLC analysis of skin extracts. It was used to make a non-destructive estimate of the evolution in the flavonol concentration in grape berry samplings. The chlorophyll index was inversely correlated in linear manner to the total soluble solids (°Brix): it could, therefore, be used as a new index of technological maturity. The fluorescence sensor (Multiplex) possesses a high potential for representing an important innovative tool for controlling grape maturity in precision viticulture

    Neste artigo, o objetivo Ă© discutir os vĂ­nculos entre indivĂ­duo e organização, que caracterizam a permanĂȘncia, ou nĂŁo, de sujeitos indicados como sucessores na empresa da famĂ­lia, tendo como base de anĂĄlise as categorias inter-relacionadas de subjetividade e poder. Tal propĂłsito originou uma pesquisa qualitativa, na qual o foco foram as histĂłrias de vida dos trĂȘs filhos do fundador de uma empresa familiar. No tratamento dos dados, foi usada a tĂ©cnica da anĂĄlise do discurso para a identificação das estratĂ©gias discursivas usadas pelos entrevistados em seus depoimentos, tendo elas sido agrupadas em duas categorias discursivas: histĂłrias sobre o trabalho e histĂłrias sobre a famĂ­lia. Na primeira categoria, a partir do mito do herĂłi fundador, a histĂłria sobre o trabalho Ă© romanceada, em um processo que, por meio da socialização primĂĄria, esconde o controle por intermĂ©dio da inserção de valores do pai na precoce entrada na empresa por parte dos filhos do sexo masculino. Sobre a famĂ­lia, os depoimentos sugerem que a empresa Ă© sua continuação; sendo estendidos, ao negĂłcio, os laços familiares. A empresa liga, simbĂłlica e afetivamente, os fi lhos ao legado do pai, o que a torna um projeto de vida reapropriado e realimentado por eles. As conclusĂ”es alertam que as empresas familiares nĂŁo deixam de ser empreendimentos econĂŽmicos mesmo sendo intensas em afetividade, sendo os filhos vĂ­timas dos mesmos estratagemas que diversos autores denunciam em empresas capitalistas por aderirem a um sonho que nĂŁo lhes pertence, mas que lhes cabe manter vivo

    Procyanidin oligomers. A new method for 4->8 interflavan bond formation using C8-boronic acids and iterative oligomer synthesis through a boron-protection strategy

    Interest in the synthesis of procyanidin (catechin or epicatechin) oligomers that contain the 4→8 interflavan linkage remains high, principally due to research into their health effects. A novel coupling utilising a C8-boronic acid as a directing group was developed in the synthesis of natural procyanidin B3 (i.e., 3,4-trans-(+)-catechin-4α→8-(+)- catechin dimer). The key interflavan bond was forged using a novel Lewis acid-promoted coupling of C4-ether 6 with C8-boronic acid 16 to provide the α-linked dimer with high diastereoselectivity. Through the use of a boron protecting group, the new coupling procedure was extended to the synthesis of a protected procyanidin trimer analogous to natural procyanidin C2. © 2011 Elsevier B.V.
