    Stability of black carrot anthocyanins in the turkish delight (LOKUM) during storage

    In this research, traditional Turkish delight (lokum) was colored with black carrot juice concentrate, and the variations in anthocyanin content, during storage at different temperatures (12, 20 and 30C) for 5-month periods, were observed by spectrophotometer and high-performance liquid chromatography. Analysis of kinetic data suggested a first-order reaction for the degradation of black carrot anthocyanins in Turkish delight. Degradation rates of anthocyanins of black carrot increased with increasing temperature. It was determined that the degradation rate of black carrot anthocyanins during the storage period at 12C increased faster than that of the other temperatures (20 and 30C). The k values for 12, 20 and 30C were found to be 6.91 × 10 -3, 4.21 × 10 -3and 9.21 × 10 -3/day, respectively. Effects of pH on the thermal stability of black carrot anthocyanins were also determined. Results showed that the stability of anthocyanins decreased as the pH value increased. Increase in pH values correlated well with the decrease in anthocyanin content of the samples during storage. In all of the samples, redness (a*) decreased during the storage at all temperatures; however, lightness (L*) increased. PRACTICAL APPLICATIONS Most of commercial anthocyanins used as a colorant in foods are obtained from fruits or vegetables such as: red grape, elderberry, blackcurrant, blackberry, raspberry, black chokeberry, red cabbage, black carrot, purple corn, red radish and purple sweet potato. Turkish delight (lokum), one of the most popular traditional food products in Turkey, is a famous Turkish desert known all over the world. Lokum is produced by using sugar, water, starch, citric acid, aromatic compounds, dried fruits and natural colorant. The color of foods, which is one of the initial properties noticed in foods, is one of the most important quality parameters affecting consumers. Because of consumer anxiety over the safety of synthetic food colorants, the demand for natural food colorants has increased. Particularly, there is an increasing request for natural red food colorants as alternatives to the most commonly used synthetic red colorant. Therefore, the availability and the suitability of black carrot juice concentrate as a natural colorant instead of synthetic colorants which are considered to have some negative properties for human health was investigated by this work. © 2009 Wiley Periodicals, Inc

    Parity-Projected Shell Model Monte Carlo Level Densities for fp-shell Nuclei

    We calculate parity-dependent level densities for the even-even isotopes 58,62,66 Fe and 58 Ni and the odd-A nuclei 59 Ni and 65 Fe using the Shell Model Monte Carlo method. We perform these calculations in the complete fp-gds shell-model space using a pairing+quadrupole residual interaction. We find that, due to pairing of identical nucleons, the low-energy spectrum is dominated by positive parity states. Although these pairs break at around the same excitation energy in all nuclei, the energy dependence of the ratio of negative-to-positive parity level densities depends strongly on the particular nucleus of interest. We find equilibration of both parities at noticeably lower excitation energies for the odd-A nuclei 59 Ni and 65 Fe than for the neighboring even-even nuclei 58 Ni and 66 Fe.Comment: 5 pages, 4 figures, submitted to Phys.     In vivo MRI with Concurrent Excitation and Acquisition using Automated Active Analog Cancellation

    Magnetic resonance imaging (MRI) provides excellent cross-sectional images of the soft tissues in patients. Unfortunately, MRI is intrinsically slow, it exposes patients to severe acoustic noise levels, and is limited in the visualization of certain tissues such as bone. These limitations are partly caused by the timing structure of the MRI exam which first generates the MR signal by a strong radio-frequency excitation and later acquires the weak MRI signal. Concurrent excitation and acquisition (CEA) can overcome these limitations, but is extremely challenging due to the huge intensity difference between transmit and receive signal (up to 100 dB). To suppress the strong transmit signals during signal reception, a fully automated analog cancellation unit was designed. On a 3 Tesla clinical MRI system we achieved an on-resonance analog isolation of 90 dB between the transmit and receive path, so that CEA images of the head and the extremities could be acquired with an acquisition efficiency of higher than 90% at sound pressure levels close to background noise. CEA with analog cancellation might provide new opportunities for MRI in tissues with very short T2 relaxation times, and it offers a silent and time-efficient MRI acquisition

    Digit ratio (2D:4D): relationship with freestyle swimming performance of adolescent well-trained swimmers

    Purpose: The purpose of this study was to determine whether there was a relationship between the digit ratios and freestyle swimming performance of adolescent well-trained swimmers. Material and Methods: Twenty-two well-trained male swimmers who had at least 3 years of swim training experience were recruited as participants. The participants’ mean age was 14.1±1.5 years, body height was 164.5±11.3 cm, and body mass was 54.4±11.2 kg. Participants’ body height, mass, index finger (2D) and ring finger (4D) lengths were measured and digit ratio (2D:4D) and body mass index of participants was calculated. To determine the swimming performance of participants, the short (50m and 100m) and middle (200m and 400m) distance freestyle time-trial swimming tests were performed on participants. The association between the 2D:4D ratio and the swimming performance were determined by the Pearson correlation coefficient. Results. Our findings indicated that there were strong negative correlations (r > .50) between the mean of BMI and swimming times of adolescent swimmers. ( p > .05 ). However, result of this study revealed no relationship between the digit ratio (2D:4D) and swimming performance in adolescent swimmers. ( p > .05 ). Conclusion. As a result, it may be stated that the 2D:4D ratio of swimmers is not a major parameter in predicting swimming performance for adolescent swimmers

    Semiaromatic polyamides with enhanced charge carrier mobility

    The control of local order in polymer semiconductors using non-covalent interactions may be used to engineer materials with interesting combinations of mechanical and optoelectronic properties. To investigate the possibility of preparing n-type polymer semiconductors in which hydrogen bonding plays an important role in structural order and stability, we have used solution-phase polycondensation to incorporate dicyanoperylene bisimide repeat units into an aliphatic polyamide chain backbone. The morphology and thermomechanical characteristics of the resulting polyamides, in which the aliphatic spacer length was varied systematically, were comparable with those of existing semiaromatic engineering polyamides. At the same time, the charge carrier mobility as determined by pulse-radiolysis time-resolved microwave conductivity measurements was found to be about 10-2 cm2 V-1 s-1, which is similar to that reported for low molecular weight perylene bisimides. Our results hence demonstrate that it is possible to use hydrogen bonding interactions as a means to introduce promising optoelectronic properties into high-performance engineering polymers.Peer ReviewedPostprint (author's final draft

    Retrospective analysis of injury trends in recreational skiers and snowboarders in Erciyes Ski Centre

    Purpose: The purpose of this study is to investigate the important differences in overall rates and frequency of injury cases and injury characteristics between the recreational alpine skiers and snowboarders in Erciyes Ski Centre. Methods: The data for this research was obtained from the Erciyes Ski Centre Injury Surveillance System. A total of 834 injury cases that ski patrols registered injury cases caused by recreational alpine skiing and snowboarding during the 2002 to 2017 winter seasons were respectively examined. The injury cases were grouped according to the skiing disciplines. All data were analysed using SPSS software. Results: Injury cases were 690 skiers (82.7%) and 144 snowboarders (17.3%). 397 (57.5%) male and 293 (42.5%) female were skiers and 91 (63.2%) male and 53 (36.8%) female were snowboarders. There was no statistically significant difference between the gender ratios in skiers and snowboarders (p > .05). Data analysis indicated that there were statistically significant differences in the ratios of lower and upper extremity injuries between skiers and snowboarders ( p < .05 ). Skiers suffered more lower extremity injuries while snowboarders suffered more upper extremity injuries ( p < .05 ). Contusion was the most common injuries type in both skiers and snowboarders ( p < .05) . Conclusions: The lower extremity injuries in skiers and the upper extremity injuries in snowboarders were more common with respect to body location of injuries. For both the recreational activities, contusion was the most common injury type
