Avaliação do efeito da aplicação de manoproteÃnas comerciais no incremento da qualidade de vinhos brancos
Face à exigência dos consumidores atuais, as caracterÃsticas sensoriais de um vinho, assim como a sua estabilidade, são fatores determinantes para a sua aceitabilidade no mercado. A instabilidade proteica do vinho e consequente desnaturação/precipitação das proteÃnas depende de fatores
(intrÃnsecos e extrÃnsecos) e é responsável pelo aparecimento de turvação nos vinhos brancos. Para
prevenir a instabilidade proteica são usados vários produtos enológicos, com objetivo de remover
as proteÃnas instáveis, no entanto com várias limitações, tais como eficiência e modificação das caracterÃsticas
fÃsico-quÃmicas e sensoriais no vinho.
Nos últimos anos têm surgido diversos aditivos comerciais à base de manoproteÃnas, já que as mesmas
podem ser uma via alternativa para a estabilização proteica do vinho.
Neste trabalho foram selecionadas onze manoproteÃnas comerciais para avaliar o seu efeito na estabilização
proteica, bem como o seu efeito na composição fenólica e nas caracterÃsticas cromáticas
e sensoriais num vinho branco.
Os resultados obtidos mostraram que 9 das 11 manoproteÃnas testadas apresentaram efeito positivo
na estabilização proteica do vinho. Além disso, todas as manoproteÃnas diminuÃram o potencial
de acastanhamento dos vinhos, e de um modo geral conduziram a um aumento da luminosidade.
Na análise sensorial, apesar de não haver diferenças significativas relativamente ao vinho controlo,
tendencialmente os vinhos mais pontuados foram os tratados com manoproteÃnas, nomeadamente
ao nÃvel da diminuição da cor, equilÃbrio gustativo e na componente aromática, frutado e floral.
Pelos resultados obtidos neste trabalho, podemos concluir que as manoproteÃnas parecem ser uma
alternativa eficiente na estabilização proteica de vinhos brancos e que podem simultaneamente melhorar
as caracterÃsticas sensoriais do vinho, porém, convém salientar que estes resultados devem
ser encarados como preliminares, sendo necessário realizar mais estudos com outros tipos de vinhos.info:eu-repo/semantics/publishedVersio

Effect of different fining agents and additives in white wine protein stability
Proteins in white wine could become insoluble and precipitate causing the appearance of a haze
in bottled wine. Protein instability may be due to intrinsically or extrinsically factor such as
protein molecular weight, isoelectric point, ionic strength, alcohol degree and wine pH or
storage temperature. These modifications may occur during aging, storage or when diverse
wines are blended. The type and concentration of proteins in the wine depends on grape variety,
maturation degree and winemaking operations (pre-fem1entative grape maceration, application
of tannins, enzymes or bentonite fining). Usually, the treatment for wine protein instability is
sodium bentonite fining. The adsorption of wine proteins onto bentonite is due to the cationic
exchange capacity of bentonite, which carries a net negative charge and the wine proteins are
mostly positive charged at wine pH, and thus can be exchanged onto bentonite. Sometimes even
with high level of sodium bentonite wines do not stabilize.
Thus, the main purpose of this work is to understand the interaction of different types of
bentonites, tannins, carboxylmethylcellulose (CMC) and mannoproteins on white wine protein
stability, to get new approaches to stabilize them. Some trials were performed in four white
wines with high protein instability. Preliminary results showed that sodium bentonite and
mannoproteins increase protein stability, in opposition, CMC and tannins seems to increase
turbidity after stability tests, which means more instability. Final results could provide important
information to the wine industry to select alternative treatments to remove unstable proteins to
maintain or improve wine quality
Avaliação da eficiência de diferentes produtos enológicos na remoção de ocratoxina A de vinho
As micotoxinas são metabolitos secundários tóxicos produzidos por certos fungos, sendo a ocratoxina A (OTA) das mais importantes. A presença de OTA nos vinhos pode constituir um risco para a saúde dos consumidores, sendo por isso aconselhado que se tomem medidas para atingir nÃveis seguros para o consumo humano [1]. De acordo com o Regulamento n.º 1881/2006 da Comissão Europeia, o limite máximo para a OTA em vinho é de 2 µg/kg [2]. Sendo assim, foi objetivo deste trabalho conhecer a eficiência de diferentes produtos enológicos na remoção de OTA de vinhos, bem como o seu impacto nas suas caracterÃsticas organoléticas. Foram testados onze produtos enológicos diferentes, com origem mineral, sintética, microbiana, vegetal e animal, de forma a avaliar a sua eficiência na remoção de OTA de vinhos. Os ensaios foram realizados em vinhos artificialmente suplementados com OTA numa concentração final de 10 µg/L. O produto enológico mais eficiente na remoção de OTA do vinho branco (80%) é composto por gelatina, bentonite e carvão ativado. Reduções entre 10-30% foram também obtidas com o caseinato de potássio, paredes de células de levedura e proteÃna de ervilha. Com a aplicação de bentonite, carboximetilcelulose, polivinilpolipirrolidona e quitosana não se verificou nenhuma remoção considerável de OTA dos vinhos brancos. The molecular signaling of exercise and obesity in the microbiota-gut-brain axis
Obesity is one of the major pandemics of the 21st century. Due to its multifactorial etiology, its treatment requires several actions, including dietary intervention and physical exercise. Excessive fat accumulation leads to several health problems involving alteration in the gut-microbiota-brain axis. This axis is characterized by multiple biological systems generating a network that allows bidirectional communication between intestinal bacteria and brain. This mutual communication maintains the homeostasis of the gastrointestinal, central nervous and microbial systems of animals. Moreover, this axis involves inflammatory, neural, and endocrine mechanisms, contributes to obesity pathogenesis. The axis also acts in appetite and satiety control and synthesizing hormones that participate in gastrointestinal functions. Exercise is a nonpharmacologic agent commonly used to prevent and treat obesity and other chronic degenerative diseases. Besides increasing energy expenditure, exercise induces the synthesis and liberation of several muscle-derived myokines and neuroendocrine peptides such as neuropeptide Y, peptide YY, ghrelin, and leptin, which act directly on the gut-microbiota-brain axis. Thus, exercise may serve as a rebalancing agent of the gut-microbiota-brain axis under the stimulus of chronic low-grade inflammation induced by obesity. So far, there is little evidence of modification of the gut-brain axis as a whole, and this narrative review aims to address the molecular pathways through which exercise may act in the context of disorders of the gut-brain axis due to obesity
Estabilização proteica de vinhos brancos por adição de manoproteÃnas e impacto na qualidade
As proteÃnas, embora em reduzida concentração no vinho branco, podem ser fatores de instabilidade,
e podem afetar a limpidez e/ou originar depósitos amorfos. Para prevenir a instabilidade proteica
é tradicionalmente efetuada a colagem dos vinhos brancos com bentonite. Contudo, esta cola
inorgânica apresenta algumas limitações, particularmente quando aplicada em doses elevadas. Neste
contexto, foram avaliadas várias manoproteÃnas comerciais para a estabilização proteica dos vinhos,
como possÃveis alternativas à bentonite. Para o efeito caracterizaram-se onze manoproteÃnas, quanto
à sua composição proteica e em açúcares. A sua eficácia foi avaliada relativamente ao seu potencjal
de estabilização proteica, bem como ao seu efeito no potencial de acastanhamento, composição
fenólica e nas caracterÃsticas sensoriais do vinho
Tartaric stabilization of Rosé wine by ion exchange resins: impact on phenolic and sensory profile
Wine tartaric stabilization is essential to satisfy the wine quality criteria, and consequently the consumer’s acceptance.
Several techniques are available to prevent tartaric precipitation (potassium hydrogen tartrate and calcium tartrate) in wine.
Beside the addition of enological products, the use of ion exchange resins is also an acceptable technique for wine tartaric stabilization by the OIV (OIV, 2016). However, according to our knowledge, there are no studies in Rose wine concerning ionexchange
resins for tartaric stabilization. Furthermore, Rose wine consumption shows an increase in consumption trend in
the last years (between 2008 and 2014), representing nowadays near 10% of the world wine production.
Therefore, the aim of this study was to evaluate the effect of ion exchange resins on wine tartaric stabilization efficiency and
the impact on wine quality, compared to the effect of the addition of conventional enological additives. For this objective, a
Rose wine from the Douro Valley, vintage 2015, was used. The experimental design was developed in a winery at a semiindustrial
scale.
After wine treatments tartaric stability was measured by the mini contact test. In order to, understand the impact of the
treatments on Rose wine quality, wines phenolic composition - total phenols, flavonoid and non-flavonoid compounds as well
as the chromatic characteristics by the CIELab method were also evaluated. Finally, wine sensory analysis was performed by
a panel composed by seven trained panelists.
As expected, the treatments stabilized the wine against tartaric precipitation. Also, results so far obtained showed, that in
general, the use of ion exchange resins impacted mainly in the color of Rose wine. In addition, decrease in color intensity was
also observed by sensory panel, but wine treatment with ion exchange resins was further scored for attributes usually
appreciate by wine consumers, like limpidity and fruit aroma, and less scored for astringency.
These results suggested that ion exchange resins could be an alternative to conventional enological additives to prevent Rose tartaric stabilization.Chemistry Research Centre for the financial support, Mountain Research Centre, Bragança. Composition and temporal patterns of larval fish communities in Chesapeake and Delaware Bays, USA
Comparing larval fish assemblages in different estuaries provides insights about the coastal distribution of larval populations, larval transport, and adult spawning locations. We simultaneously compared the larval fish assemblages entering 2 Middle Atlantic Bight (MAB) estuaries(Delaware Bay and Chesapeake Bay, USA) through weekly sampling from 2007 to 2009. In total,43 taxa (32 families) and 36 taxa (24 families) were collected in Delaware and Chesapeake Bays,respectively. Mean taxonomic diversity, mean richness, and evenness were generally lower in Delaware Bay. Communities of both bays were dominated by Anchoaspp., Gobiosomaspp.,Micropogonias undulatus, and Brevoortia tyrannus; Paralichthys spp. was more abundant in Delaware Bay and Microgobius thalassinus was more abundant in Chesapeake Bay. Inter-annual variation in the larval fish communities was low at both sites, with a relatively consistent composition across years, but strong seasonal (intra-annual) variation in species composition occurred in both bays. Two groups were identified in Chesapeake Bay: a ‘winter’ group dominated by shelf-spawned species and a ‘summer’ group comprising obligate estuarine species and coastal species.In Delaware Bay, 4 groups were identified: a ‘summer’ group of mainly obligate estuarine fishes being replaced by a ‘fall’ group; ‘winter’ and ‘spring’ groups were dominated by shelf-spawned and obligate estuarine species, respectively. This study demonstrates that inexpensive and simultaneous sampling in different estuaries provides important insights into the variability in community structure of fish assemblages at large spatial scales
