Sensometrics: a análise sensorial de bebidas numa perspetiva estatística

Conferência plenária apresentada em 20 de Maio de 2016 no Fórum ALABE 2016A utilização de pessoas como instrumentos de medida, desde «simples» consumidores a participar em estu-dos de mercado até provadores treinados ou peritos integrando painéis de provadores, é cada vez mais importante no desenvolvimento e controlo de qualidade de produtos alimentares e de bebidas. O vinho é uma bebida fascinante e complexa, na qual uma grande multiplicidade de aromas e sabores po-dem ser identificados e dependem de vários fatores, das castas ao terroir ou ao processo de vinificação. A avaliação da sua qualidade é essencial e, tradicionalmente, realizada pelos enólogos, mas outros intervenien-tes na indústria têm a responsabilidade de avaliar a qualidade do vinho. Essa avaliação é, muitas vezes, reali-zada recorrendo à análise sensorial (viz. "ciência envolvida na avaliação das características organoléticas de um produto pelos sentidos"). Para além das condições ambientais e do “protocolo laboratorial”, os testes sensoriais são, em termos de planeamento e análise (estatística) de resultados, como testes de hipóteses estatísticas/significância estatística cujo modus operandi está relacionado com o método cientifico. Neste contributo, proponho a tradução e definição do conceito de Sensometria, apresento de forma ele-mentar e sumária algumas das técnicas e métodos estatísticos mais relevantes e/ou emergentes em análise sensorial, com referência ao software utilizável e que facilita a tarefa (com enfoque na linguagem de pro-gramação e sistema de computação R), assim como exponho os aspetos importantes a considerar no plane-amento e análise de resultados de provas/testes sensoriais que contribuem para a validade e generalidade das conclusões

Seasonal variations in gross biochemical composition, percent edibility, and condition index of the clam Ruditapes Decussatus cultivated in the Ria Formosa (South Portugal)

The grooved carpet shell clam, Ruditapes decussatus (L. 1758), is one of the most popular and profitable molluscs exploited in rearing plots in the Mediterranean. However, annual catch has been declining steadily since the early nineties. In order to understand the seasonality of its nutritional value, thus providing an improved basis for economical valuation of the resource, gross biochemical composition, percentage edibility and condition index were investigated during a year with monthly periodicity in a commercially exploited population of the clam Ruditapes decussatus in the Ria Formosa, a temperate mesotidal coastal lagoon located in the south of Portugal. Our results show that total and non-protein nitrogen co-varied during the year, resulting in a protein content that peaked in the warmest months. Although complementary in summer, carbohydrate and lipid contents showed irregular annual trends. The observed seasonality was comparable to that shown by studies elsewhere at similar latitudes, and are underpinned by the reproductive cycle of the species.
