    Cassava chips quality as influenced by cultivar, blanching time and slice thickness

    Cassava forms part of diets in Kenya with both the roots and leaves being consumed as food. The short shelf-life of 72 hours and cyanogenic glucosides limit the extent of utilization. Currently, fried cassava chips and crisps are increasingly being consumed as snacks; and fried cassava chips are produced by street processors. The quality and safety of these products is not known, therefore, the current study was to establish the influence of cassava cultivar, blanching time and slice thickness on quality of fried cassava chips. Moisture, vitamin C and cyanide content in the raw cassava cultivars were determined before processing. The three raw cassava cultivars coded as MH95/0183, MM96/2480 and Fumba chai were washed, peeled and sliced into thickness of 6 mm, 10 mm and 20 mm. Equal groups of the slices were blanched at 950C for 0 minutes, 5 minutes and 10 minutes each and then subjected to frying temperature of 1700C. The physico-chemical and sensory properties of fried cassava chips were determined. Dry matter content, vitamin C content and cyanide levels significantly (p < 0.05) differed among the three raw cultivars except in MH95/0183 and MM96/2480. A strong positive relationship (r = 0.98) existed between moisture and cyanide contents in the raw cultivars. Mean cyanide levels in the three roots was: 37.04 mg/kg, 16.37 mg/kg and 48.48 mg/kg in MH95/0183, MM96/2480 and Fumba chai, respectively. Dry matter content was 36.79 %, 37.69 % and 30.42 % in MH95/0183, MM96/2480 and Fumba chai. The physico-chemical and sensory properties significantly (p < 0.05) differed within and across the cultivars as affected by processing conditions. Mean cyanide range was 1.4 - 11 mg/kg, oil content ranged 3.78 - 18.48 % and vitamin C content ranged 7.59 - 50.48 mg/100 g. Significant (p < 0.05) relationship (r = 0.707) existed between slice thickness and the redness color parameter. Cultivar, slice thickness and blanching time form important yardsticks in processing fried cassava chips. Proper choice of these parameters is, therefore, important in processing quality and safe cassava fries. Slice thickness of 6 mm combined with long blanching time of 10 minutes result in fried cassava chips with low and acceptable cyanide content as well as satisfactory consumer preference based on color, texture, oiliness and overall acceptability.Key words: cyanide, quality, cassava, slice thickness, cultivar, blanching, consumer preferenc

    Cytokine expression in malaria-infected non-human primate placentas

    Malaria parasites are known to mediate the induction of inflammatory immune responses at the maternal-foetal interface during placental malaria (PM) leading to adverse consequences like pre-term deliveries and abortions. Immunological events that take place within the malaria-infected placental micro-environment leading to retarded foetal growth and disruption of pregnancies are among the critical parameters that are still in need of further elucidation. The establishment of more animal models for studying placental malaria can provide novel ways of circumventing problems experienced during placental malaria research in humans such as inaccurate estimation of gestational ages. Using the newly established olive baboon (Papio anubis)-Plasmodium knowlesi (P. knowlesi) H strain model of placental malaria, experiments were carried out to determine placental cytokine profiles underlying the immunopathogenesis of placental malaria. Four pregnant olive baboons were infected with blood stage P. knowlesi H strain parasites on the one fiftieth day of gestation while four other uninfected pregnant olive baboons were maintained as uninfected controls. After nine days of infection, placentas were extracted from all the eight baboons through cesarean surgery and used for the processing of placental plasma and sera samples for cytokine sandwich enzyme linked immunosorbent assays (ELISA). Results indicated that the occurrence of placental malaria was associated with elevated concentrations of tumour necrosis factor alpha (TNF-{\alpha}) and interleukin 12 (IL-12). Increased levels of IL-4, IL-6 and IL-10 and interferon gamma (IFN-{\gamma}) levels were detected in uninfected placentas. These findings match previous reports regarding immunity during PM thereby demonstrating the reliability of the olive baboon-P. knowlesi model for use in further studies.Comment: Open Veterinary Journal 1st June 2012.     Idealised EPR states from non-phase matched parametric down conversion

    Entanglement of high dimensional states is becoming increasingly important for quantum communication and computing. The most common source of entangled photons is spontaneous parametric down conversion (SPDC), where the degree of frequency and momentum entanglement is determined by the non-linear interaction volume. Here we show that by reducing the length of a highly non-linear material to the micrometer scale it is possible to relax the longitudinal phase matching condition and reach record levels of transverse wavevector entanglement. From a micro-sized layer of lithium niobate we estimate the number of entangled angular modes to be over 1200. The entanglement is measured both directly using correlation measurements and indirectly using stimulated emission tomography. The high entanglement of the state generated can be used to massively increase the quantum information capacity of photons, but it also opens up the possibility to improve the resolution of many quantum imaging techniques.Comment: 5 pages, 5 figure

    E. coli and Salmonella Contamination of Tomato Marketed and Consumed in Nairobi Metropolis

    Tomato, a worldwide consumed commodity for its nutritive values can harbour Salmonella and E.coli. Tomato can contribute to diarrheal illnesses; and associated burden in households. Seasonal bacterial analyses to detect enterobacteria were conducted from January to June 2017 in Nairobi. The study shows that, the vegetable during the study period is 94% contaminated with E. coli and 28% with Salmonella. February had the highest contamination during the dry season (2.37 log10cfu.ml-1 >2; p≤ 0.05) and May (2.8 log10cfu.ml-1 >2; p≤ 0.05) the highest in wet season. Thus, seasons have influence on microbial contamination in tomato. Bacteria multiplication slows in dry period and increases in wet season. Increase of bacteria from March (end of dry season or beginning of rains) to high presence in May (end of rains) might come with more health concerns if attention is not paid to ready-to-eat vegetables. Consumers purchasing from open air markets seem more at risk of bacterial infection (Kangemi 1.84±0.159; Githurai 2.02±0.1815; Wakulima 1.97±0.24 of E. coli contamination) compared to those who use supermarkets (Nakumatt W. 1.54±0.134; Uchumi Sarit C. 1.27±0.105). Although most tomatoes were washed and cleaned, bacteria levels were still a threat to health. Surfactants from pesticides might contribute to tomatoes infection as they are able to wound skins of crops and open ways to bacterial contamination. With sudden bacterial increase in wet seasons (Kangemi 2.98±0.225kl; Githurai 2.75±0.157efghi; Wakulima 2.69±0.067ghijk; Nakumatt 1.78±0.092bcd; Uchumi 1.54±0.215cde), consumers might experience more symptoms of enteric bacteria. Special attention should be paid in wet times as best quality of tomato at sight is not necessarily safe for direct consumption without further processing. These findings might help in understanding why consumers of salad might be exposed to symptoms of enteric bacteria in wet times.     Multi-locus sequence typing of African swine fever viruses from endemic regions of Kenya and Eastern Uganda (2011–2013) reveals rapid B602L central variable region evolution

    The central variable region (CVR) within the B602L gene of the African swine fever virus (ASFV) is highly polymorphic within the 23 ASFV genotypes defined by sequencing of the C-terminal end of the p72 locus. Sequencing the p54 gene further discriminates ASFV genotypes that are conserved at the p72 locus. Variation in the thymidine kinase locus is a novel additional tool for ASFV genotyping whose application for this purpose is described for the first time herein. We evaluated genetic variation at these four polymorphic loci in 39 ASFV isolates obtained from outbreaks in Kenya and a region of Eastern Uganda between 2011 and 2013. Analysis of the p72 and p54 loci revealed high genetic conservation among these isolates; all clustered within p72 genotype IX and were similar to isolates associated with earlier outbreaks in East Africa. The thymidine kinase gene of the Kenyan isolates in this study were distinct relative to Southern African isolates and synonymous substitutions were observed among viruses from central Kenya. Analysis of the CVR within the B602L gene revealed two previously unknown polymorphisms that were restricted to Western Kenya and Eastern Uganda. A novel variant was revealed within CVR subgroup XXIV and a novel CVR subgroup XXIVa that contains tetrameric repeat F which has previously only been associated with p72 genotype I, was also identified for the first time in East Africa.     Sporadic paediatric diarrhoeal illness in urban and rural sites in Nyanza province, Kenya

    Objective: Investigate differences in the infectious aetiology, health seeking behaviour, and provider practices with regard to diarrhoeal illness among children presenting to urban versus rural clinics in Western Kenya.Design: Laboratory-based, passive surveillance.Setting: The urban portion of the study was conducted at the paediatric outpatient clinic of Nyanza Provincial Hospital in Kisumu. The rural portion of the study was conducted at four outpatient clinics in the Asembo Bay community approximately 20 kilometers west of Kisumu.Subjects: Children aged less than five years presenting to medical facilities for the treatment of diarrhoea from October 2001-October 2003 at the urban site and May 1997-April 2003 for the rural sites.Results: Among the 1303 urban and 1247 rural specimens collected, 24% of specimens yielded a bacterial pathogen (24% urban, 25% rural). Campylobacter was the predominant bacterial pathogen (17% urban, 15% rural), followed by Shigella and nontyphoidal Salmonella (both 4% urban and 5% rural). In both communities, susceptibilities of these pathogens to the most commonly prescribed antibiotics was low

    The idea of a new Zimbabwe post- Mugabe

    Zimbabwe has gone through deep political, economic and social challenges for close to three decades. Once known as the shining light of Africa, Zimbabwe is now often known for dominating international headlines for the wrong reasons. In November 2017, the country experienced a radical change to the constitutional and political order, which brought an end to former President Robert Mugabe’s 37-year reign. Emmerson Mnangagwa, who was once Mugabe’s right-hand man, assumed leadership of both the country and the ruling Zimbabwe African National Union–Patriotic Front (ZANU–PF). He was reelected in the July 2018 harmonised elections, although under disputed circumstances. The removal of Robert Mugabe has provided the country an opportunity to break from the past, and hopes have been raised for the birth of a new Zimbabwe. This chapter explores some of the measures that the administration post-Mugabe should implement to set the country on a new path. Thus, the purpose of this chapter is not to argue for a particular political formation or political leaders to govern. Rather, its objective is to explore whether the idea of a new Zimbabwe is possible and what it would take to realise this objective. Before discussing the prospects for this desired state of affairs, it is important to examine the current situation, which is explored in the first part of the chapter. A brief overview of the fall of Mugabe and rise of Mnangagwa is then provided to show how a leader who commanded respect beyond the shores of our continent could exit in such an undignified manner. The core section is dedicated to a discussion of the prospects for a new Zimbabwe, and concluding remarks end the chapter
