Mecanismos de transferência de massa na desidratação osmótica de goiaba em soluções de sacarose, sucralose e açúcar invertido.
O objetivo deste trabalho foi avaliar o efeito da concentração de soluções de sacarose, sucralose e açúcar invertido sobre a cinética da desidratação osmótica de pedaços de goiaba. Frações de 1/12 do fruto foram imersas em soluções de sacarose a 0,5 e 0,4 g mL-1, de sacarose a 0,3 g mL-1 + sucralose a 0,2 g L-1 e em xarope de açúcar invertido, a 50 ºC, por 2 h, sob agitação de 60 min. A solução de açúcar invertido promoveu maior perda de água e redução de massa nas amostras de goiaba submetidas à desidratação osmótica. O melhor desempenho foi obtido para o tratamento em solução de sacarose a 0,4 g mL-1, com perda de água e redução de massa semelhantes aos valores obtidos na imersão em solução de sacarose a 0,5 g mL-1 e ganho de sólidos similar ao observado em solução de sacarose a 0,3 g mL-1
Qualidade nutricional de goiabas submetidas aos processos de desidratação por imersão-impregnação e secagem complementar por convecção.
Na desidratação por imersĂŁo-impregnação há transferĂŞncia de água e de compostos naturais do produto para a solução hipertĂ´nica, porĂ©m poucos trabalhos tĂŞm sido realizados para identificar e quantificar as perdas destes compostos. Sendo assim, o presente trabalho teve por objetivo avaliar as alterações nos teores dos minerais Na, K, Ca, Mg, Zn e Mn e de vitamina C em goiabas submetidas aos processos combinados de desidratação por imersĂŁo-impregnação (50 ÂşC por 2 horas) e secagem por convecção atĂ© teor de água de 20% b.u. Os solutos empregados foram: a sacarose, em soluções de 0,4 e 0,5 g.mL-1, e o açúcar lĂquido invertido, em soluções a 41% (p/p) e sem diluição. Utilizou-se ainda solução mista de sacarose a 0,3 g.mL-1 e sucralose a 0,2 g.L-1, alĂ©m do tratamento controle, que consistiu apenas na secagem por convecção, empregando-se um nĂvel de temperatura e velocidade do ar de secagem, 60 ÂşC e 1,25 m/s, respectivamente. O efeito das condições de armazenamento sobre a estabilidade do ácido ascĂłrbico foi avaliado sob duas temperaturas, 7 e 25 ÂşC, durante 60 dias. Os resultados indicaram reduções de 20 a 64% no teor de minerais ao final da desidratação por imersĂŁo-impregnação e perdas nĂŁo significativas de ácido ascĂłrbico, exceto no tratamento com açúcar invertido sem diluição. A secagem por convecção promoveu perdas significativas de vitamina C, de 32 a 68%; os valores correspondentes para as perdas de vitamina C durante o armazenamento a 7 e 25 ÂşC foram de 58 a 82% e de 70 a 86%, respectivamente
O teatro como ferramenta para a educação ambientalTheater as a tool for environmental education
Com o avanço da tecnologia e do acesso Ă mĂdia, torna-se necessário inovar na educação, inclusive ambiental, para se atingir os objetivos propostos com uma clientela cada vez mais exigente. Estimular as mĂşltiplas inteligĂŞncias atravĂ©s dos mais variados meios de percepção dos sentidos, leva a interiorização de conceitos e concretização de atos, e a arte teatral possibilita tal aprendizado, enquanto ação e reação, emoção e conhecimento. A peça teatral “Educação x Destruição” transmite conhecimentos ambientais atravĂ©s de relatos de personagens, foi apresentada para alunos da Educação Infantil e do Ensino Fundamental (1Âş e 2Âş ciclos), na Escola Municipal Silvanira Acyoli Lins Penha e no Parque Municipal das Araucárias, Guarapuava, PR, abrangendo aproximadamente 300 pessoas. A participação do pĂşblico/alunos demonstra ser o teatro uma ferramenta importante para sensibilização e percepção ambiental, transmitindo conhecimentos e valores na busca da formação de pessoas cidadĂŁs.Abstract With the advance of technology and the access to information, it becomes necessary to innovate in education, including the environmental one, in order to reach the objectives proposed taking into account a kind of public more and more demanding. The stimulation of multiple intelligences through the most varied ways of senses perception, leads to the internalization of concepts and to the performance of factual acts, possibly reached through the theatrical art, while action and reaction, emotion and knowledge. The theatrical playt “Education x Destruction”, which conveys environmental information through the characters reports, was performed for students from Children’s and Basic Education (1st and 2nd cycles), in Silvanira Acyoli Lins Penha city school and in Araucarias Park - Guarapuava/PR, reaching approximately 300 people. The participation of the public/students in it shows that the theater is an important tool for environmental sensitization and perception, sharing knowledge and values looking forward the citizenship formation
Drying kinetics of thyme
[EN] This work aimed to study the drying kinetics of thyme and subsequent adjustment of different
mathematical models to the experimental data and to determine the effective diffusivity and the activation
energy. In order to conduct the experiment the temperatures of 30, 40, 50, 60, 70 ÂşC were used. The
experimental design employed was in randomized blocks with three repetitions. For the adjustment of
the mathematical models to the experimental data non-linear regression was performed using SimplexQuasi-Newton
method. The results showed that the Page model was the one that promoted the best fit
of the experimental data to describe the drying kinetics of the thyme leaves. The values of effective
diffusivity coefficients ranged between 3.69 x 10-12 and 1.19 x 10-10 m2
s-1 and the value of activation
was 77.16 kJ mol-1

modelos matemáticos a los datos experimentales determinar los valores de la difusividad efectiva y
energĂa de activaciĂłn. Para el desarrollo del experimento de secado fueran utilizadas las temperaturas
30, 40, 50, 60 y 70 oC. El diseño experimental fue de bloques completamente aleatorizados, con tres
repeticiones. Para el ajuste de los modelos matemáticos a los datos experimentales fue realizado el

Manifestações clĂnicas em crianças infectadas pelo HIV na era HAART: um estudo seccional
The number of HIV infected children still grows gradually, becoming one of the five leading causes of pediatric death in the world. This study described HIV clinical manifestations in children from ages of 4 to 12 years who are in use of antiretroviral treatment or not. This was a descriptive, cross-sectional, observational and quantitative study performed with HIV positive children patients of the GafrĂ©e and Guinle Hospital (HUGG) and the Previdenciary Center of Niteroi (CPN), in the state of Rio de Janeiro – Brazil, during the year of 2005. After collecting data from medical charts, a descriptive statistical analysis was conducted, using simple frequency and χ² test. Sixty-three percent of the patients from HUGG and CPN were on HAART, and 48% showed no clinical manifestations (p=0.1376). The most frequently observed clinical manifestations were upper respiratory tract infection (6%) and herpes simplex (2%). The antiretroviral treatment (HAART) was successful in diminishing HIV related disease, contributing greatly to a better life style of patients in use of this therapy.O nĂşmero de crianças infectadas pelo HIV ainda cresce progressivamente, tornando-se uma das cinco principais causas de Ăłbito pediátrico no mundo. Este trabalho teve como objetivo escrever as manifestações clĂnicas da infecção pelo HIV em crianças de 4 a 12 anos com o uso ou nĂŁo de tratamento anti-retroviral. O estudo foi descritivo, seccional, observacional e quantitativo, realizado com pacientes pediátricos HIV+, dos Hospitais GafrĂ©e e Guinle (HUGG) e Centro Previdenciário de NiterĂłi (CPN), no Rio de Janeiro, em 2005. ApĂłs coleta de dados por ficha clĂnica e consulta dos prontuários, realizou-se análise estatĂstica descritiva por frequĂŞncia simples, com o uso do teste χ². 63% dos pacientes do HUGG e CPN faziam uso de HAART, com 48% sem manifestação clĂnica (p=0,1376). As manifestações clĂnicas mais frequentes foram infecções das vias aĂ©reas superiores (6%) e herpes simples (2%). Concluiu-se que a terapia anti-retroviral (HAART) fez as manifestações clinicas da infecção pelo HIV diminuĂrem, gerando uma melhoria na qualidade de vida desses pacientes

Chagasic Thymic Atrophy Does Not Affect Negative Selection but Results in the Export of Activated CD4+CD8+ T Cells in Severe Forms of Human Disease
Extrathymic CD4+CD8+ double-positive (DP) T cells are increased in some pathophysiological conditions, including infectious diseases. In the murine model of Chagas disease, it has been shown that the protozoan parasite Trypanosoma cruzi is able to target the thymus and induce alterations of the thymic microenvironment and the lymphoid compartment. In the acute phase, this results in a severe atrophy of the organ and early release of DP cells into the periphery. To date, the effect of the changes promoted by the parasite infection on thymic central tolerance has remained elusive. Herein we show that the intrathymic key elements that are necessary to promote the negative selection of thymocytes undergoing maturation during the thymopoiesis remains functional during the acute chagasic thymic atrophy. Intrathymic expression of the autoimmune regulator factor (Aire) and tissue-restricted antigen (TRA) genes is normal. In addition, the expression of the proapoptotic Bim protein in thymocytes was not changed, revealing that the parasite infection-induced thymus atrophy has no effect on these marker genes necessary to promote clonal deletion of T cells. In a chicken egg ovalbumin (OVA)-specific T-cell receptor (TCR) transgenic system, the administration of OVA peptide into infected mice with thymic atrophy promoted OVA-specific thymocyte apoptosis, further indicating normal negative selection process during the infection. Yet, although the intrathymic checkpoints necessary for thymic negative selection are present in the acute phase of Chagas disease, we found that the DP cells released into the periphery acquire an activated phenotype similar to what is described for activated effector or memory single-positive T cells. Most interestingly, we also demonstrate that increased percentages of peripheral blood subset of DP cells exhibiting an activated HLA-DR+ phenotype are associated with severe cardiac forms of human chronic Chagas disease. These cells may contribute to the immunopathological events seen in the Chagas disease
