Sifat Fisik Daging Domba Yang Diberi Perlakuan Stimulasi Listrik Voltase Rendah Dan Injeksi Kalsium Klorida
Effect of low voltage electrical stimulation (LVES; 45 volt, 3 amps for approx 100 sec) and calcium chloride (CaCl2) injection on physical properties of meat were evaluated. Six mutton were devided into 3 groups. One carcass of each group was subjected to within 30 min postmortem (PM). After LVES, longissimi thoracis et lumbarum muscles were removed and treated: without CaCl2 injection, CaCl2 injection (200 mM, 5% w/w) at about 2 h and 24 h PM. Samples were stored in vacuum pack at 1 + 10 C. Physical properties evaluated were Warner-Bratzler (WB) shear force, cooking loss and sarcomere length. The LVES had no significant effect on WB shear force, cooking loss and sarcomere length. Kualitas Spermatozoa Tikus Yang Diberi Tepung Kedelai Kaya Isoflavon, Seng (Zn) Dan Vitamin E
The objective of this experiment was to evaluate the effects of isoflavone-riched soybean flour, zinc (Zn) and vitamin E on quality of rats spermatozoa as animal model. Diet was given as isonitrogen and isocaloric with 15% of dietary protein. Thirty male Sprague Dawley post weaning rats (21 days old) were divided into six groups and treated with isoflavone-riched soybean flour, Zn and vitamin E in different combination. Isoflavone-riched soybean flour (3 mg/day) was given by oral administration, whereas Zn and vitamin E were mixed with the basic diet. The treatments were given for 2 months. Thirty female Sprague Dawley post weaning rats (21 days old) were used to observe male fertility. Results indicated that synergic interaction between isoflavone-riched soybean flour, Zn and vitamin E increased motility and concentration of rats spermatozoa. The treatment was not significant on relative weight of testis, conception rate and foetus size. The best results was shown by the group which was given isoflavone-riched soybean flour with diet containing both Zn and vitamin E, i.e. motility rate of 79.50±1.12%, sperm concentration of 1636.90±87.95 million/ml, and abnormality rate of 9.00±0.70%. Conception rate and the number of foetus on female rats were 100% and 11±0.71, respectively. It is concluded that combination treatment of isoflavone-riched soybean flour, Zn and vitamin E on male rats showed the best fertility in comparison with single treatment and the other combination
Karakteristik Konsentrat Protein Teripang Pasir (Holothuria Scabra J.) Dengan Bahan Pengekstrak Aseton
Sea cucumber (Holothuria scabra J.) is a fishery that has a nutrientcontent and high economic value. This study aims to know: (1) nutrient content(proximate) sea cucumber fresh meat, (2) the yield of protein concentratemanufacture of sea cucumbers, (3) nutrient content of sea cucumber proteinconcentrate, and (4) total amino acid content of protein concentrates of seacucumber.Penelitian in five stages of the experiment: (1) preparation of meat freshsea cucumbers, (2) analysis of nutrient content (proximate) sea cucumber freshmeat, (3) the analysis of protein concentrate yield of seacucumbers, (4) analysis ofnutrient content (proximate) protein concentrate sea cucumbers, and (5) analysisof total amino acid content of sea cucumber protein concentrate. The resultsshowed nutrient content (proximate) sand sea cucumber fresh meat that is 87.03%water (bb): 76.64% protein (bk); 4.16% fat (bk), 14.34% ash (bk), and 4 , 93%carbohydrate (bk). The average yield produced in the manufacture of seacucumber protein concentrate was 9.87%. While the nutrient content (proximate)sea cucumber protein concentrate that is 8.97% water, 66.07% protein, 0.89% fat;11.53% ash, and 12.54% carbohydrate. The highest amino acid content in seacucumber protein concentrate is a proline (5.17%) and glutamic acid (3.23%)
Hypoglycemic Activity of Some Indonesian Rice Varieties and Their Physicochemical Properties
Diabetes mellitus is a spectrum of inherited and acquired disorders characterized by elevating blood glucose levels. Diabetes is an abnormal carbohydrate metabolism, therefore, diet therapy for diabetics plays a key role in the management of the disease. Most Indonesian people consume rice as source of energy and protein. Generally, diabetics consume very limited rice because they believe that rice is the one of hyperglycemic food, even though different rice varieties have large range of glycemic index. The study aimed to evaluate hypoglycemic properties by using rat assay and chemical characteristics of 10 Indonesian rice varieties, i.e. Pandan Wangi, Rojolele, Bengawan Solo, Cenana Bali, Memberamo, Celebes, Ciherang, Batang Piaman, Cisokan, and Lusi. Taj Mahal, an herbal ponni imported rice, was used as a comparison. Male Sprague Dawley rats (150- 200 g body weight) were used for hypoglycemic assay. The rats were fasted overnight before the blood glucose was measured in the morning. The rats were then feed with 4.5 g rice per kg body weight by oral administration, followed by 1 ml of 10% glucose solution in the next 30 minutes. The blood glucose was measured for the next 30, 60, 90, and 120 minutes. Changes in blood glucose concentrations (mg dl-1) before and after the oral administrations were calculated for each rice variety tested. Results showed that Cisokan and Batang Piaman were categorized as low glycemic responses and Ciherang as high glycemic response, while the other varieties (Memberamo, Cenana Bali, Lusi, Bengawan Solo, Pandan Wangi, Celebes, and Rojo Lele) showed moderate glycemic responses. As the best hypoglycemic activity, Cisokan contained high amylose (27.6%), fat (0.87%), total dietary fiber (6.24%), resistant starch (2.02%), and lowest starch digestibility (52.2%), which are ideal for diabetic's consumption. Ciherang as the worst hypoglycemic activity had low resistant starch (1.78%), low total dietary fiber (4.52%), and medium amylose (23.0%). This study implies that Cisokan variety is suitable for diabetic's consumption

Enteropathogenic Escherichia coli (EPEC), dan untuk mendeteksi dampak terhadap
karakteristik imunomodulator (jumlah sel limfosit, kadar malonaldehid/MDA hati, dan
aktivitas antioksidan superoksida dismutase/SOD hati). Infeksi EPEC (10

dilakukan secara oral ke tikus selama tujuh hari berturut-turut secara nyata menyebabkan
diare ringan tanpa penurunan berat badan. Pemberian secara oral yogurt sinbiotik yang

Efektivitas Probiotik Lactobacillus Plantarum 2C12 Dan Lactobacillus Acidophilus 2B4 Sebagai Pencegah Diare Pada Tikus Percobaan
The aim of this study was to evaluate the effectiveness of probiotics Lactobacillus plantarum 2C12 and Lactobacillus acidophilus 2B4 to prevent diarrhea caused by enteropathogenic Escherichia coli (EPEC). Albino rats (Rattus norvegicus) were daily orally administered by 108 cfu/ml of both probiotics without or simultaneously infected with EPEC (106 cfu/ml) for 7 days. Negative control was not infected by probiotic and EPEC while positive control was challenged with EPEC alone. After 1, 2 and 3 weeks, total of lactic acid bacteria (LAB) and E. coli of mucosa of cecum and cecum content were evaluated. It was observed that rats administered by L. plantarum 2C12 and L. acidophilus 2B4 and challenged with EPEC had better performances when compared with the positive control for daily weight gain, feed consumption, feed efficiency rate. Diarrhea was determined by total of E. coli on cecum and watery fecal. Both probiotics could increase 1 log10 cfu/cm2 of total LAB on mucosa of cecum and also 1 log10 cfu/g of cecum content. Both probiotics also could reduce 1-3 log10 cfu/cm2 population of E.coli on mucosa of cecum and 1 log10 cfu/g of cecum content. L. plantarum 2C12 and L. acidophilus 2B4 were effective as probiotics against EPEC on rats
Production of Synbiotic Yogurt-Like Using Indigenous Lactic Acid Bacteria as Functional Food
Yoghurt is a product of fermented milk using Lactobacillus bulgaricus and Streptococcus thermophilus as culture starter. Indigenous probiotic lactic acid bacteria, Lactobacillus plantarum 2C12 or Lactobacillus acidophilus 2B4, were applied in the making of functional synbiotic yoghurt-like with 5% of fructo-oligosaccharide (FOS) as a prebiotic source. The aim of this study was to determine the best formula of functional synbiotic yoghurt-like among four formulas: F1 (L. bulgaricus + S. thermophilus), F2 (L. bulgaricus + S. thermophilus + L. plantarum 2C12), F3 (L. bulgaricus+ S. thermophilus + L. acidophilus 2B4), and F4 (L. bulgaricus + S. thermophilus + L. plantarum 2C12 + L. acidophilus 2B4) to be choosen and followed detection of it's flavor to improve the product quality and consumer acceptance. The results showed that the F3 synbiotic yogurt made from mixed culture L. bulgaricus, S. thermophilus, and L. acidophilus 2B4 had the highest antibacterial effect against Enteropathogenic Escherichia coli (EPEC). Addition of 1.75% natural corn starch as a stabilizer produced optimum improvement in yoghurt consistency and minimize whey separation. Result of sensory evaluation indicated that the yoghurt with addition of 1% strawberry flavor and 0.1% vanilla flavor were ranked at first and second. Yoghurts were still good to be consumed after 15 d storage period at the refrigeration temperature (10 oC)
