    The study of the rheological characteristics of pasta dough based on poly-cereal flour raw

    The article presents the results of studies of indicators of rheological characteristics of dough for the production of non-traditional pasta based on whole-ground poly-cereal raw materials. The main purpose of the research is to study the indicators of the rheological characteristics of dough based on flour produced from nontraditional poly-cereal raw materials. Modern technologies make it possible to obtain pasta enriched with targeted food additives. Such pasta has a number of advantages and will be in high demand among consumers. Experimental studies have shown that the rheological properties of flour dough obtained from wholemeal flour have poor characteristics. Therefore, in order to improve the rheological characteristics of the dough, it is possible to introduce a biologically active additive in the form of dry wheat gluten (DWG) in an amount sufficient to achieve standard values of flour strength indicators. In terms of the total mass of the test sample, DWG was introduced in the ratio of 5, 10, 15 and 20 %. In the course of experimental studies, the quantitative values of the coefficients of elasticity (Ie, %) of the prototypes were determined, characterizing the tensile strength of the dough during deformation along two axes. With the addition of 5 % dry wheat gluten, the numerical value of Ie was 14.6 % for a dough based on wholeground barley flour. A further increase in the content of DWG in the  dough recipe led to an increase in the values of Ie. The analysis of experimental data showed that the rheological characteristics of the dough obtained from flour based on whole grains of cereals and legumes are significantly improved with the addition of DWG (10 % DWG – to 29.2 %, 15 % DWG – 43.8 %, 20 % DWG – 58.4 %). This confirms that the main goal of the article has been achieved

    Randomized controlled trial comparing laparoscopic greater curvature plication versus laparoscopic sleeve gastrectomy

    Laparoscopic greater curvature plication (LGCP) is a new restrictive bariatric procedure, which has a similar restrictive mechanism like laparoscopic sleeve gastrectomy (LSG) without potential risk of leak. Aim of the study was to compare 2-year outcomes of LSG and LGCP. Multicenter prospective randomized trial was started in 2010. A total of 54 patients with morbid obesity were allocated either to LGCP group (n = 25) or LSG group (n = 27). Main exclusion criteria were: ASA [III, age[75 and BMI [65 kg/m2 . There were 40 women and 12 men, and the mean age was 42.6 ± 6.8 years (range 35–62). Data on the operation time, complications, hospital stay, body mass index loss, percentage of excess weight loss (%EWL), loss of appetite and improvement in comorbidities were collected during the follow-up examinations. All procedures were completed laparoscopically. The mean operative time was 92.0 ± 15 min for LSG and 73 ± 19 min for LGCP (p[0.05). The mean hospital stay was 4.0 ± 1.9 days in the LSG group and 3.8 ± 1.7 days in LGCP group (p[0.05). One year after surgery, the mean %EWL was 59.5 ± 15.4 % in LSG group and 45.8 ± 17 % in LGCP group (p[0.05). After 2 years, mean %EWL was 78.9 ± 20 % in the LSG group and 42.4 ± 18 % in the LGCP group (p\0.01). After 3 years, mean %EWL was 72.8 ± 22 in the LSG group and only 20.5 ± 23.9 in the LGCP group (p\0.01). Loss of feeling of hunger after 2 years was 25 % in LGCP group and 76.9 % in the LSG group (p\0.05). The comorbidities including diabetes, sleep apnea and hypertension were markedly improved in the both groups after surgery. The short-term outcomes demonstrated equal effectiveness of the both procedures, but 2-year follow-up showed that LGCP is worse than LSG as a restrictive procedure for weight loss

    THE TWO-SIDED ESTIMATES OF THE FREDHOLM RADIUS AND COMPACTNESS CONDITIONS FOR THE OPERATOR ASSOCIATED WITH A SECOND-ORDER DIFFERENTIAL EQUATION

    In this paper we consider the properties of the resolvent of a linear operator corresponding to a degenerate singular second-order differential equation with variable coefficients, considered in the Lebesgue space. The singularity of the specified differential equation means that it is defined in a noncompact domain - on the whole set of real numbers, and its coefficients are unbounded functions. The conditions for the compactness of the resolvent were obtained, as well as a double-sided estimate of its fredgolm radius. The previously known compactness conditions of the resolvent were obtained under the assumption that the intermediate-term of the differential operator either is missing or, in the operator sense, is subordinate to the sum of the extreme terms. In the current paper these conditions are not met due to the rapid growth at infinity of the intermediate coefficient of the differential equation, and the minor coefficient can change sign. The property of compactness of the resolvent allows, in particular, to justify the process of finding an approximate solution of the associated equation. The Fredholm radius of a bounded operator characterizes its closeness to the Fredholm operator. The operator coefficients are assumed to be smooth functions, but we do not impose any constraints on their derivatives. The result on the invertibility of the operator and the estimation of its maximum regularity obtained by the authors earlier is essentially used in this paper

    The impact of the nonlinear effects on thermally stimulated depolarization currents in ion dielectrics

    In this paper, the methods described the calculation of thermally stimulated depolarization currents in materials of the HBC class. In the identification of nonlinear processes of thermally stimulated depolarization, at this stage of the research, as defining criteria the authors consider the calculation of the dielectric initial polarization in the infinite approximation of perturbation theory (at the fundamental frequency fields) and calculation of kinetic coefficients in functions of the polarizing field intensity. Generalized nonlinear expressions for the complex dielectric constant and polarization are formulated, which are performed at the fundamental frequency of the alternating polarizing field. The generalized equations that are nonlinear by the field for kinetic coefficients of the kinetic equation are formulated. The obtained theoretical results are of current interest from the perspective of further development of analytical and computer methods of research and prediction of HBC properties as perspective nonlinear materials for a number of branches of modern industry

    Scientific justification of the co-extruded foodstuffs preparing method

    The article is devoted to the scientific substantiation of the optimal modes of the method of mechanical processing of flour poly-cereal mixtures prepared from whole-ground grain of cereals in the production of co-extruded food products. Functional thermostable fillings based on vegetable and animal raw materials for enrichment of products of a high degree of readiness increase the nutritional value and expand the range of finished poly-cereal products for therapeutic and prophylactic purposes. The novelty of the research is the acquisition of deeper scientific, technical and practical knowledge about the biologically active substances of co-extruded poly-cereal products of a high degree of readiness, about the enrichment of products with physiologically functional ingredients that have health-improving and prophylactic properties. The production of highly prepared poly-cereal products with fruit and berry and meat and dairy filling will help expand the range of new food products, improve the nutritional structure, strengthen health, and increase the immune defense of the human body

    Initial State Fluctuations and Complete Destruction of the Projectile Nucleus in Interactions of Asymmetric Nuclei at High Energies

    A study of characteristics of the events of complete destruction of the projectile nucleus in the interactions between asymmetric nuclei for different initial states of the collision, is performed. In the interactions of the sulfur nuclei with heavy emulsion nuclei at energy 200 AGeV, anomalous high number of events the complete destruction of the projectile nuclei, is observed. The high probability of such events depends on the energy of interaction (it is not detected in the interactions of the sulfur nuclei with emulsion nuclei at energy of 3.7 AGeV), on the degree of asymmetry of the interacting nuclei (it is not detected in interactions of the sulfur nuclei with light emulsion nuclei) and on initial state of interaction (it is not detected in peripheral collisions). These events are characterized by high multiplicity of secondary particles and narrow angular distribution at large angles (they form narrow peak in the region of small values of average pseudorapidity)
