    Antioxidants are compounds that can inhibit or prevent oxidation reactions, which are the result of chemical reactions and metabolic processes that occur in the body. Enhalus acoroides is a type of seagrass found in Indonesian waters, generally living in sandy sediments with high bioturbation. Lamun has good nutrition and fiber so that it can be a source of food and medicine. The aim of this study was to examine the antioxidant activity of the seagrass extract Enhalus acoroides against ABTS radicals (2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid). The results of the study of seagrass extract using ethanol solvents had a very strong antioxidant category ie 38,008 µg /ml, the smaller the absorbance value, the higher the inhibitory value in which the antioxidant activity of the extract is higher, but when compared with the routine compound control of 0.500 µg /ml, seagrass ethanol extract is still lower

    Chitosan has the potential to be used as an antimicrobial agent, as it contains the enzyme lysozyme and aminopolisakarida groups which can inhibit the growth of microbes. Physical modification of chitosan in the form of nanoparticles add value to chitosan as an antimicrobial material. In this research, anti-acne cream was formulated by using nanoparticles chitosan with variations emulsifier  that are Novemer®, Span-Tween, and Viscolam®. The cream  then evaluated for physical stability include kriming volume, the thickness (viscosity), drops dispersed, and phase inversion before and after accelerated storage conditions. Then, test of antibacterial activity against Propionibacterium acne was performed. The results showed that the three creams were physically stable during storage. Formula cream with tween span emulsifier (FII) showed the greatest inhibition against Propionibacterium acne with a diameter of 13.46 mm zone of inhibition.

Terhadap Aktivitas Antioksidan: Correlation Between Total Phenolic and Flavonoid Contents of Jati Putih (Gmelina Arborea Roxb.) Leaves Extract and Fraction Toward Antioxidant Activity

    This experiment aims to determine the correlation of total phenolic and flavonoid content of jati putih leaves fraction (Gmelina arborea Roxb.) towards Antioxidant activity .  Sample was extracted by maceration method using ethanol 70% to obtain the ethanol extract (EE), followed by liquid-liquid extraction method to obtain fraction of ethyl acetate (EA) and n-Hexane (EH). The phytochemical screening  and determination of total phenolic and flavonoid content were done by colorimetric method. Antioxidant activity were done by DPPH, FRAP and ABTS methods. Phytochemical screening showed positive results for flavonoids, phenolic and saponins.  The largest total phenolic content was found on EA (11,59 µg/ml ± 0,3 %b/b EAG) and the largest total flavonoid content was on EA (3,88 µg/ml ± 0,02 %b/b EK). The total phenolic and flavonoid content of Jati putih leaves has a correlation with antioxidant activity. The coefficient correlation of activity on reducingDPPH radical was 56,7% (total of phenolic content) and 57,8% (total of flavonoid content) and on iron reduction power in FRAP method  was 99,9% (total of phenolics and flavonoids content). The relationship with the activity in reducing radical ABTS obtained coefficient correlation of 57,0% and 58,1% for total phenolic and flavonoids contents, respectively

    Education About Healthy School Snacks and Early Identification of Borax Using SpiceNutrition for school-age children are a significant factor in developing small and medium-scale food businesses. Unfair competition in the food business encourages the addition of hazardous chemicals to extend the shelf life of foods such as borax and formalin. This community service aims to understand students, parents, and teachers about healthy snacks and how to identify borax content in food using spices (turmeric). This community service is carried out at Ali Imran Kindergarten, Rappocini District, Makassar. Forty students attended this counselling, 35 parents and eight teachers. This activity begins with the presentation about the importance of healthy snacks and the dangers of borax and formalin. A demonstration of the use of turmeric to detect the presence of borax was carried out in front of parents and teachers. In the end, they were allowed to practice. The results showed an increase in the ability of parents and teachers (100%) to identify borax in food using turmeric.Keywords : Borax, Healthy snack, Turmeric, CounselingKebutuhan siswa akan makanan dan jajanan merupakan faktor utama berkembangnya usaha makanan skala kecil dan menengah. Pesatnya perkembangan usaha makanan tersebut bukan tidak mungkin mendorong timbulnya persaingan antar pedagang yang kurang sehat termasuk penambahan bahan kimia berbahaya untuk memperpanjang masa simpan makanan seperti boraks dan formalin. Pengabdian masyarakat ini bertujuan untuk memberikan edukasi terhadap siswa, orang tua dan guru mengenai pentingnya jajanan sehat dan cara mengidentifikasi kandungan boraks dalam jajanan menggunakan bumbu dapur. Pengabdian ini dilakukan di Taman Kanak-kanak (TK) Ali Imran, Kecamatan Rappocini, Makassar. Penyuluhan ini diikuti oleh 45 orang siswa, 40 orang tua siswa dan 6 orang guru. Kegiatan ini diawali dengan pemaparan materi mengenai pentingnya jajanan sehat serta bahaya boraks dan formalin. Demonstrasi penggunaan kunyit (Curcuma domestica) untuk mendeteksi adanya boraks dilaksanakan di depan orang tua siswa serta guru dan di akhir kegiatan mereka diberikan kesempatan untuk mempraktikkan. Hasil penyuluhan menunjukkan adanya peningkatan kemampuan orang tua siswa dan guru untuk mengidentifikasi boraks dalam makanan menggunakan kunyit yang ditunjukkan dengan semua peserta (100%) berhasil mempraktikkan.Kata kunci: Boraks, Jajanan, Kunyit, Penyuluha

    UJI AKTIVITAS ANTIOKSIDAN DARI BEBERAPA EKSTRAK KULIT BATANG JAMBLANG (Syzygium cumini) MENGGUNAKAN METODE PEREDAMAN RADIKAL 2,2-DIPHENYL-1-PICRYLHYDRAZYL (DPPH)

    Jamblang (Syzygium cumini) merupakan salah satu buah lokal Indonesia. Semua bagian tanaman ini dapat digunakan untuk pengobatan salah satunya sebagai antioksidan. Tujuan dari penelitian ini adalah untuk menentukan potensi antioksidan dari beberapa ekstrak kulit batang jamblang dengan menggunakan kuarcetin sebagai pembanding. Kulit batang jamblang diekstraksi secara refluks dengan menggunakan pelarut etanol, etil asetat, dan n-heksan kemudian di uji potensi antioksidannya. Hasil penelitian diperoleh nilai IC50 ekstrak etanol kulit batang jamblang sebesar 164,3 ppm, ekstrak etil asetat kulit batang jamblang sebesar 237,7 ppm, ekstrak n-heksan kulit batang jamblang sebesar 5235,6 ppm. Berdasarkan hasil tersebut dapat disimpulkan bahwa ekstrak etanol kulit batang jamblang memberikan aktivitas antioksidan yang lebih kuat jika dibandingkan dengan ekstrak lainnya. Namun hasil tersebut masih lebih kecil jika dibandingkan dengan kuarcetin dengan nilai IC50 4,57 ppm
