    Nutrients retention in functional beef burgers with especial emphasis on lipid profile

    The true retention values of nutrients, with particular reference to fatty acids of dietary importance, were investigated in burgers with none or half of the pork backfat replaced with soybean oil ?healthier burgers (HB)- added with 0g/kg, 5g/kg, 10g/kg and 20g/kg of dry soybean sprouts (DSS) as additive. A multivariate analysis was applied in order to detect the main fatty acids to characterize the finished product. Cooking yield of samples increased with the amount DSS incorporated, meaning that this bulking agent improved retention of water and fat in the matrix. The higher concentration of additive the higher the protein and total fat retention. Respect to fatty acid profile in samples incorporated with 5g/kg, 10g/kg of DSS the loss of fat ?specially saturated fatty acids (SFA) - improved the ratio between polyunsaturated fatty acids (PUFA) and SFA. Also analyses of atherogenic and thrombogenic indices indicate that 10g/kg DSS presents the lower values for these parameters. Multivariate analysis shown that fatty acid descriptors with more contribution to variability of total data were miristic, palmitic, linoleic and linolenic fatty acid.Fil: Romero, Mara Cristina.     Assessment of heritage rammed-earth buildings. The Alcázar of King Don Pedro I (Spain).

    The conservation and maintenance of earthen buildings is crucial, especially when dealing with heritage sites. This normally involves considerable effort in preliminary studies, which must be well planned in order to efficiently manage any restoration. This case study proposes a methodology to briefly assess the current state of a historical rammed-earth wall, to bring to light specific information regarding approaches for subsequent studies or decisions. This methodology is based on the study of damage and risk as a tool to swiftly discern critical areas or issues needing immediate attention. The procedure is illustrated on an outstanding heritage building: the Alcázar of King Don Pedro I in Carmona (Seville, Spain). Our conclusions confirm that this methodology constitutes an efficient and straightforward means to obtain not only a preliminary assessment of rammed-earth walls, but also objective and useful criteria for decision-makers

    Este proyecto de investigación, desarrollado en el Instituto Tenerife, surgió de las dificultades que tenían los alumnos de 8 ° grado en lo que respecta a sus habilidades lectoras al momento de desarrollar las actividades en la página web que tiene el colegio. Se les dificultaba entender lo que leían, así mismo desarrollar las actividades porque afirmaban que las lecturas eran demasiado complejas para el nivel en que estaban ellos que es un nivel básico (A1). El investigador del presente estudio decidió llevar a cabo un 3 VISUAL LITERACY AND WEBQUEST TO REINFORCE READING COMPREHENSION proyecto cuyo principal objetivo era determinar si la alfabetización visual y la Webquest podrían reforzar la comprensión lectora en estudiantes de 8 ° grado de un colegio privado en Kennedy. En cuanto a la metodología utilizada en este proyecto, su investigador decidió darle un enfoque cualitativo. Al terminar la implementación del proyecto, se evidenció que los estudiantes reforzaron su comprensión lectora, no en su totalidad pero fueron capaces de entender de qué se trataban las lecturas y mediante el uso de Webquest, aprendieron nuevo vocabulario y nuevas herramientas para trabajar de forma autónoma.This research project, developed at the Instituto Tenerife, arose from the difficulties that the 8th grade students had in terms of their reading skills at the time of developing the activities on the website that the school has. It was difficult for them to understand what they read, as well as to develop the activities because they claimed that the readings were too complex for the level they were at, which is a basic level (A1). The researcher of the present study decided to carry out a project whose main objective was to determine if visual literacy and the Webquest could reinforce the reading comprehension in 8th grade students of a private school in Kennedy. Regarding the methodology used in this project, the researcher decided to give it a qualitative approach. At the end of the implementation of the project, it was evidenced that the students reinforced their reading comprehension, not in their totality but they were able to understand what the readings were about and through the use of the Webquest they learned new vocabulary and new tools to work autonomously

    Integrating multiple sources to answer questions in Algebraic Topology

    We present in this paper an evolution of a tool from a user interface for a concrete Computer Algebra system for Algebraic Topology (the Kenzo system), to a front-end allowing the interoperability among different sources for computation and deduction.     El Uso de los demostradores automáticos de teoremas para la enseñanza de la programación

    La verificación formal de algoritmos, impartida en los estudios de Ingeniería Informática como parte de las asignaturas de programación, se suele explicar de manera “teórica” introduciendo los axiomas de la lógica de Hoare y realizando diversos ejercicios de verificación (a mano) de pequeños programas. Aunque los alumnos han debido adquirir previamente los conocimientos de Lógica necesarios, muchos de ellos presentan serias dificultades para expresar formalmente los distintos pasos de las pruebas de corrección planteadas. En esta experiencia se ha decidido utilizar como herramienta de apoyo para explicar la verificación formal de algoritmos un demostrador automático de teoremas llamado Krakatoa. Esta herramienta permitirá a los estudiantes visualizar de manera interactiva los distintos pasos necesarios para probar la corrección de un programa, reflexionar sobre los razonamientos seguidos y comprender la importancia de la verificación de algoritmos para mejorar la fiabilidad de nuestros programas.SUMMARY -- Formal verification of algorithms, taught in Computer Engineering studies as part of programming subjects, is usually explained in a “theoretical” way introducing the different axioms of Hoare logic and doing (by hand) various exercises of verificacion of small programs. Although students are supposed to have previously acquired the necessary logic concepts, many of them have serious difficulties to formally express the different steps of the considered correction proofs. In this experience we have decided to explain formal verification of algorithms by using, as a support tool, an automatic theorem prover called Krakatoa. This tool will allow students to interactively visualize the various steps required to prove the correctness of a program, to think about the used reasoning and to understand the importance of verification of algorithms to improve the reliability of our programs

    Have Spanish companies built greater entrepreneurship after privatization?

    This study analyses some of the strategic and organizational changes experienced in public firms following privatization in its double facet: sale of companies and deregulation. Specifically, we analyse the process of innovation in terms of products, processes and organization. We also look into the development of new businesses and strategic renewal, which in the end shape the entrepreneurial capacity of a company. A sample of Spanish firms which were privatized between 1985 and 2000 shows that after privatization, these companies have experienced a significant increase in entrepreneurship. These changes are even more appreciable when a high sector competition is added to the ownership shift. Once they join the private sector, their level of product, process and organizational innovation is higher. They also develop new businesses at national level, reinforce their international activity and embark on strategic renewal processes by shedding the lesser profitable businesses and modifying their competitive strategy so as to gain efficiency
