    O abacaxi é uma das frutas tropicais mais populares por seu aroma e sabor agradável, que se deve, principalmente, à presença de sacarose, ácido cítrico e málico (THÉ, 2007). Seu acentuado teor de ácido, ressalta suas características sensoriais desejáveis e o torna adequado à fabricação de geleias (SILVA, 2006). A geleia é o produto obtido pela cocção das frutas inteiras ou em pedaços, da polpa ou do suco de fruta, adicionados de açúcar e água e concentrados até consistência gelatinosa. De maneira geral, a geleia é considerada uma rede tridimensional sólida que envolve a pectina, o açúcar e o ácido, retendo uma fase líquida em sua estrutura (MULTON, 2000). A liberação da fase líquida das geleias, conhecida como sinérese, é um dos principais problemas que ocorre durante o armazenamento do produto, que contribui para depreciar sua aparência (Figura 1). Fatores como pré-gelatinização antes e durante o envase, valores de pH inferiores ao ideal, diferencial de sólidos entre a fruta e o gel e deficiência na hidratação da pectina contribuem para a formação da sinérese.     A avaliação da geléia de abacaxi visa analisar a ocorrência de sinérese através da análise uni e multivariada. A geléia de abacaxi apresenta baixo teor de pectina, portanto, adicionou-se pectinas de alta metoxilação nas seguintes concentrações 0,50%; 0,75% e 1,00% que correspondem a lenta, média e rápida velocidade de geleificação. Neste estudo verificou-se o pH, acidez titulável, brix e a sinérese da geléia. A maior concentração de pectina na geléia apresentou uma diminuição na liberação de água, sinérese. Este resultado evidenciou que o percentual de 1,00% da pectina na geléia é necessária para formar o gel e obter uma textura adequada

    Consumption of teas has been increasing around the world. In Brazil, mate tea, prepared from yerba mate ( Ilex paraguariensis ), is the most popular tea and its popularity is increasing due to the development of new mate-based products and the increasing health consciousness of the Brazilian population. Further develop- ment of the mate market in Brazil requires accurate consumer pro fi ling, focusing on tea drinking behavior, preferences and perceptions. We applied a questionnaire to mate tea consumers to assess their beliefs, con- sumption behavior, and taste preferences. We also explored the acceptability of tea made from yerba mate processed in different ways: immediately after harvest and after eight months of storage, varying the percent- age of leaves and sticks. One hundred consumers evaluated six experimental samples and two commercial mate teas. Results indicated that mate was most consumed in tea bag form, followed by ice teas. The preferred fl avors were natural and lemon. Most of the consumers (61%) consumed mate with sugar, drinking it at home before bedtime. Product quality, brand and price were the most important aspects taken into account when purchasing mate.Themajority ofconsumers werenotsatis fi edwiththe productscurrently offered inthe mar- ket, andthe main criticism waspoor quality and packaging. Consumers accepted all tasted samples, except the tea preparedwith 100%sticks.
