    To increase the concentration of gelatin in a formulation for pound cake reduced in margarine and partially replaced by canola oil, there is a proportional increase in specific gravity, apparent viscosity and viscoelastic modules, decreasing the size and number of bubbles formed in the batter. In pound cake, there is a proportional decrease in volume and uniformity of the crumb and increase in the firmness, however, the addition of 1.25% of gelatin was the most accepted sensory formulation due to perceived a crumb more consistent and wet, so, the functionality of the gelatin as hydrocolloid, is limited to the final texture of the pound cake, concluding that it may be an alternative to improve the acceptability of a pound cake reduced in margarine, which is also of lower cost.The use of different hydrocolloids in the partial substitution of margarine by vegetable oils, are evaluated to achieve products with characteristics similar to the traditional product. The objective of this study was to evaluate the effect of the addition of different concentrations of gelatin (0%, 0.75%, 1.25%, and 2.0%) in pound cake formulation reduced in margarine and partially replaced with canola oil. It was determined specific gravity (SG), apparent viscosity, modules of viscoelasticity (G' and G") and number and size of air bubbles in the batter. In the pound cake was determined texture (TPA and sensory evaluation), crumb structure and moisture. By increasing the concentration of gelatin, it was observed a proportional increase of SG, apparent viscosity and elastic and viscous modules, predominating the viscous module with respect to elastic module, and a decrease in the number and size of air bubbles in the batter. In the pound cake, there was a proportional decrease in the volume and uniformity of the crumb, with respect to the size and number of cavities formed, however, sensorially, the most accepted formulation was the addition of 1.25% of gelatin because it perceives a more consistent and moist crumb, therefore, adding gelatin can be an alternative to improve the acceptability of a reduced pancake in margarine, which It's also less expensive.CONACy

    In a practical watermark scenario, watermarks are used to provide auxiliary information; in this way, an analogous digital approach called unseen–visible watermark has been introduced to deliver auxiliary information. In this algorithm, the embedding stage takes advantage of the visible and invisible watermarking to embed an owner logotype or barcodes as watermarks; in the exhibition stage, the equipped functions of the display devices are used to reveal the watermark to the naked eyes, eliminating any watermark exhibition algorithm. In this paper, a watermark complement strategy for unseen–visible watermarking is proposed to improve the embedding stage, reducing the histogram distortion and the visual degradation of the watermarked image. The presented algorithm exhibits the following contributions: first, the algorithm can be applied to any class of images with large smooth regions of low or high intensity; second, a watermark complement strategy is introduced to reduce the visual degradation and histogram distortion of the watermarked image; and third, an embedding error measurement is proposed. Evaluation results show that the proposed strategy has high performance in comparison with other algorithms, providing a high visual quality of the exhibited watermark and preserving its robustness in terms of readability and imperceptibility against geometric and processing attacks

    Como consecuencia de que el entorno digital ha ido avanzando a pasos agigantados, las empresas, en la actualidad, han tenido que optar por estrategias de marketing diferentes a las convencionales, siendo obligadas a migrar a plataformas virtuales en donde no solo consiguen nuevos adeptos sino que interactúan con sus clientes y generan un valor diferencial en ellos. Por tal motivo, el presente trabajo de investigación tiene como finalidad identificar el nivel de impacto que tienen las estrategias convencionales del Estudio Contable Ramírez entre sus clientes actuales. Para tal fin, se aplicaron 229 encuestas a todos los clientes, con el propósito de poder segmentarlos según el entorno digital, reconocer su nivel de satisfacción, el grado de lealtad y los atributos de valor diferenciales de la empresa. Esta información recolectada junto con las entrevistas realizadas a distintos expertos en marketing y comunicación digital sirvieron para la estructuración de una estrategia de comunicación digital basada en el modelo de Inbound Marketing lo suficientemente efectiva para lograr la fidelización de los clientes del Estudio Contable Ramírez.As a result of the digital environment progressing by leaps and bounds, companies have now had to opt for different marketing strategies than conventional ones, being forced to migrate to virtual platforms where not only get new adepts, but also Interact with their customers and generate differential value in them.     An increase in erythromycin resistance in methicillin-susceptible Staphylococcus aureus from blood correlates with the use of macrolide/lincosamide/streptogramin antibiotics. EARS-Net Spain (2004–2020)

To assess molecular changes that could be involved in erythromycin resistance trends by whole genome analysis of representative isolates. Materials and methods: We collected antibiotic susceptibility data for all first-blood S. aureus isolates in patients from 47 Spanish hospitals according to EARS-Net criteria. MLSB antibiotic consumption was obtained from the Spanish Agency for Medicines and Medical Devices (2008–2020). We sequenced 137 representative isolates for core genome multilocus sequence typing, resistome and virulome analysis. Results: For the 36,612 invasive S. aureus isolates, methicillin resistance decreased from 26.4% in 2004 to 22.4% in 2020. Erythromycin resistance in methicillin-susceptible S. aureus (MSSA) increased from 13.6% in 2004 to 28.9% in 2020 (p < 0.001); however, it decreased from 68.7 to 61.8% (p < 0.0001) in methicillin-resistant S. aureus (MRSA). Total consumption of MLSB antibiotics increased from 2.72 defined daily doses per 1,000 inhabitants per day (DID) in 2014 to 3.24 DID in 2016. By WGS, the macrolide resistance genes detected were erm (59.8%), msrA (46%), and mphC (45.2%). The erm genes were more prevalent in MSSA (44/57, 77.2%) than in MRSA (38/80, 47.5%). Most of the erm genes identified in MSSA after 2013 differed from the predominant ermC gene (17/22, 77.3%), largely because ermT was significantly associated with MSSA after 2013 (11/29, 37.9%). All 13 ermT isolates in this study, except one, belonged to ST398 and came from 10 hospitals and six Spanish provinces. Conclusion: The significant increase in erythromycin resistance in blood MSSA correlated with the consumption of the MLSB antibiotics in Spain.     The teaching of biology in Colombia is crossed by a recognition factor of the territory, vital when establishing links between the disciplinary and the identity that the subject builds with his environment. The Condor of the Andes, in addition to being a national symbol of sovereignty and strength, had conceptions that made it part of the emblem that is part of the emergence of a Latin American identity, which also stands in other countries as an endemic bird in South America. From incarnations of divinities, through the detail of the Royal Botanical Expedition of New Granada, to threats of its kind and national conservation programs the Andean Condor, promises to be configured as a promotion of the valuation of nature in the school, one of the scenarios in which the identity can be reshaped through the teaching of biology, so the teaching work is not exhausted in the teaching of the same but aims to go further affecting and contributing to the conceptions and singularities of the community in generalLa enseñanza de la biología en Colombia se ve atravesada por un factor de reconocimiento del territorio, vital a la hora en establecer nexos entre lo disciplinar y la identidad que el sujeto construye con su entorno. El Cóndor de los Andes además de ser un símbolo patrio de soberanía y fortaleza tuvo concepciones que lo llevaron a ser parte del emblema que se enmarca en el surgimiento de una identidad latinoamericana, que también se erige en otros países al ser ave endémica de Sudamérica.     El libro “Los espacios universitarios como objeto de estudio. Análisis geográfico, ambiental y ecológico del Cerro de Coatepec, Universidad Autónoma del Estado de México”, es resultado de la participación de un grupo multidisciplinario integrado por investigadores, profesores y estudiantes de la Universidad Autónoma del Estado de México, así como del grupo de asesores y consultores del Colegio de Ciencias Geográficas del Estado de México, A. C. (COCIGEM), interesados en la problemática ambiental y ecológica que ocurre en la Ciudad Universitaria ubicada geográficamente en el Cerro de Coatepec, Toluca Estado de México, en el cual se encuentran establecidas algunas edificaciones de dependencias de educación superior, centros e institutos de investigación, difusión cultural, dependencias administrativas, bibliotecas, museos e instalaciones deportivas.Los ejes rectores de análisis contenidos en este volumen son siete: a) la caracterización geográfica, ecológica, ambiental, sociocultural e infraestructural del espacio que comprende el Cerro de Coatepec; b) el análisis del Cerro de Coatepec como un ecosistema urbano en el contexto de la Zona Metropolitana del Valle de Toluca, Estado de México; c) la multifuncionalidad de las áreas verdes, las áreas arboladas y los espacios naturales del ecosistema; d) los impactos ambientales que han ocasionado y que ocasionan las etapas de preparación del sitio, la construcción de edificaciones y la ejecución de actividades docentes, de investigación, difusión, deportivas y socioculturales; e) los riesgos que ocurren y pueden ocurrir en las áreas verdes, las áreas arboladas, los ambientes naturales y la infraestructura de las edificaciones; f) la responsabilidad ambiental e importancia de la participación de los actores universitaritos en el cuidado del entorno universitario; y g) propuesta de acciones generales para el mejoramiento de las condiciones del paisaje y manejo del entorno universitario.     Hypokalemia as a sensitive biomarker of disease severity and the requirement for invasive mechanical ventilation requirement in COVID-19 pneumonia: A case series of 306 Mediterranean patients

    Objectives: Serum levels of potassium (K+) appear to be significantly lower in severe cases of severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) infection and the clinical significance of this is unknown. The objective was to investigate whether hypokalemia acts as a biomarker of severity in coronavirus disease 2019 (COVID-19) pneumonia and is associated with major clinical outcomes.Methods: A retrospective cohort study of inpatients with COVID-19 pneumonia (March 3 to May 2, 2020) was performed. Patients were categorized according to nadir levels of K+ in the first 72 h of admission: hypokalemia (K+ ≤3.5 mmol/l) and normokalemia (K+ >3.5 mmol/l). The main outcomes were all-cause mortality and the need for invasive mechanical ventilation (IMV); these were analyzed by multiple logistic regression (odds ratio (OR), 95% confidence interval (CI)).Results: Three hundred and six patients were enrolled. Ninety-four patients (30.7%) had hypokalemia and these patients showed significantly higher comorbidity (Charlson comorbidity index ≥3, 30.0% vs 16.3%; p = 0.02) and CURB65 scores (median (interquartile range): 1.5 (0.0-3.0) vs 1.0 (0.0-2.0); p = 0.04), as well as higher levels of some inflammatory parameters at baseline. After adjustment for confounders, hypokalemia was independently associated with requiring IMV during the admission (OR 8.98, 95% CI 2.54-31.74). Mortality was 15.0% (n = 46) and was not influenced by low K+. Hypokalemia was associated with longer hospital and ICU stays.Conclusions: Hypokalemia is prevalent in patients with COVID-19 pneumonia. Hypokalemia is an independent predictor of IMV requirement and seems to be a sensitive biomarker of severe progression of COVID-19

    Fat Distribution and Differential Effects on Metabolic Liver Fat Infiltration in Young Mexicans in Reynosa, Mexico: A Collaborative Study across the U.S.-Mexico Border

    Introduction: Metabolic-associated fatty liver disease (MAFLD) is a descriptive term for NAFLD (Non-alcoholic) physiopathology associated with obesity. The age of onset linked to body fat distribution is poorly studied. Therefore, we aimed to assess the body fat effect on liver fat infiltration and stiffness (LSt) mediated by insulin resistance (IR). Methods: After obtaining informed consent, five hundred freshmen from two universities in Reynosa, Mexico (UMAN & UAT) were enrolled in the study. They completed a questionnaire focused on familial cardiometabolic risk and provided anthropometric measurements. In a subset of N=200, we obtained blood samples for biochemical measurements, body fat percentage (BF%) by bioimpedance, LSt (kPa), and fat infiltration (Continued Attenuation Parameter, CAP) by elastography. We used mediation analysis with structural equation models (Stata v16.1) to determine the relationship between BMI, BF%, and abdominal obesity with IR and liver stiffness and fat infiltration. The term “-\u3e” means ‘explain’ or ‘cause’. Results: We found that AO-\u3eIR (standardized values b=0.53, p=0.005), AO-\u3eCAP (b=0.69, pIR (b=0.23, p=0.007). BMI did not have an effect on CAP or IR. Also, BMI-\u3eLS (b=0.47, p=0.05) but AO-\u3eLS was absent. Finally, there was a bidirectional relationship between LS and IR [LS-\u3eIR (b=0.18, p=0.001), and IR-\u3eLS (b=0.27, p=0.001)]. Conclusion: Our findings suggest the adipose tissue measured as AO or BMI showed different phenotypic effects on liver fat infiltration or stiffness. Visceral fat had a direct effect on IR, meanwhile, subcutaneous adipose tissue was associated with liver stiffness. Our findings suggest that early age interventions should be focused on reducing visceral fat deposition

    In a previous study we reported that 25% of college students had a family history of type 2 diabetes (T2D), and 39% of hypertension. Interestingly, between 17 to 47% reported not knowing about T2D or hypertension, neither the existing obesity-metabolic problems (ESFUERSO study). The COVID-19 pandemic forced confinement and modifications in food intake, physical activity, and psychological stress. This study aimed to analyze if the immune Ig-G anti-RBD (protective epitope in S protein) response associated with type of vaccination, metabolic risk, perceived stress, and history of COVID-19 contacts. We included 116 students at the 3th year of follow up in the ESFUERSO cohort at Reynosa. Mean age 21.4 (SD 1.04) years old, BMI 28 (6.6), females 70% (81/116). The serum concentration of Ig-G anti-RGB measured by ELISA adjusted by sex, age, body fat percentage, and BMI was analyzed. Researchers performed a multiple regression analysis with Stata V17.0. We found that 70% of the students had a family history of diabetes, hypertension, and/or obesity at baseline. Only 5 (4%) students did not have any vaccine at the time of the study, 102 (88%) were vaccinated with Moderna or Pfizer and 9 (8%) with other vaccines (Cansino, Sinovac). The prevalence of positive anti-RBD was 91%. The body fat percentage interacted with sex (p=0.034) explaining the serum concentration of anti-RBD decreased as adiposity increases in men, but increased in women. The interaction remained is spite of type of vaccination. We found no differences among metabolic risks for food consumption, distress, uncertainty, lack of sleep, sadness, and anxiety were associated with metabolic problems. Our model predicts neutralizing anti-RBD had multiplicative interaction by sex and body fat percentage (increases in females and decreases in males), with no effects on stress score or food consumption
