Beyond Lemonade Stands to Main Street Business Development: A Youth Entrepreneurship Curriculum
Entrepreneurship is widely recognized as a driver of rural economic growth and community vitality. Nebraska Extension personnel developed a youth entrepreneurship curriculum—EntrepreneurShip Investigation (ESI)—for middle and high school students. This curriculum has been used at 4-H summer camps, for formal classroom and out-of-school instruction, and in additional educational environments. A preliminary survey of ESI program participants and educators showed positive entrepreneurship learning, attitudes toward business creation, and plans for further relevant educational pursuits. These results suggest that the ESI curriculum produces positive entrepreneurship outcomes for youths and identify the need for further research into the efficacy of the curriculum
Innovation and Collaboration: Creating a Transdisciplinary Childhood Obesity Prevention Graduate Certificate Program
Preparing future professionals to work in transdisciplinary settings with a skill set to effectively foster collaborations and sustainable change requires a thoughtful and concerted interprofessional educational approach. Through an inter-university partnership in 2010 with name of university and the name of university, a group of faculty convened to propose the Transdisciplinary Obesity Prevention (TOP) graduate certificate program. With funding supported by a United States (US) Department of Agriculture (USDA) National Institute of Food and Agriculture grant in 2011, a team of faculty from name of university and name of university representing various disciplines (exercise science, nutrition, dietetics, health promotion, public health, nursing, early childhood education, family and consumer sciences, biology, biostatistics, and counseling) began developing the TOP graduate certificate program which is currently in its 5th year. The primary goal of this report is to outline the overall framework and components of the TOP graduate certificate program, providing information, strategies and considerations other institutions can apply in developing effective and sustainable transdisciplinary, interprofessional education to their existing graduate programs

Growing Healthy Kids: A School Enrichment Nutrition Education Program to Promote Healthy Behaviors for Children
The Growing Healthy Kids Program is a school-based nutrition education program that teaches students in Kindergarten through 2nd grade about healthy eating, physical activity, and how their body uses food. Pre- and post-knowledge data is collected from the students to measure changes in nutrition knowledge. In the first 2 years of the program, significant improvements in nutrition knowledge were found in all three grades. Teachers reported that students were more aware of the importance of nutrition and were making healthier meal and/or snack choices at the end of the program

Determinants of Physical Activity for Latino and White Middle School-Aged Children
Background: Physical activity (PA) has long been acknowledged to contribute health benefits among children. However, research has consistently shown that PA declines as children grow older. Thus, this study examined the factors which are associated to children’s PA in order to identify potential barriers to PA.
Methods: Using data from the KidQuest Program, we conducted bivariate and multivariate analyses on survey data collected from fifth to seventh grade students in a small Midwestern city.
Results: We found that food knowledge, eating breakfast, and talking with family about eating healthy foods, are positively related to PA. On the
other hand, screen time is negatively related to PA. In addition, our results evinced differences between ethnicities and found that Latino children’s screen time affects their PA levels more than their white counterpart.
Conclusions: There are different factors which can be tapped to increase PA among middle school-aged children. Given the differences between the Latino and white samples especially in screen time, schools should consider individualized intervention, rather than a ‘‘one size fits all’’ program, to increase PA participation
