    Influence of feeding systems on selected beef quality and sensory attributes

    Feeding systems and other factors associated with processing influence meat quality, and therefore sensory attributes. This study was conducted to assess the meat quality attributes of young grain-fed and older grass-fed steers that mostly affect consumer acceptability of beef. Eighty Bonsmara steers consisting of 20 each of A-age (0-tooth) grain-fed (AC) and grain-fed supplemented with zilpaterol (AZ), 20 each of grass-fed AB (1-2 teeth) and B-age (3 - 6 teeth) animals were used. This combination represented the typical feeding systems of South Africa and other countries using similar classification systems, therefore describes the typical feeding systems of the South African beef industry. The longissimus lumborum (LL), semitendinosus (ST), and biceps femoris (BF) muscles were tested for colour, moisture properties, lipid oxidation and sensory attributes. It was found that diet in combination with animal age influenced meat colour. Muscles of the older grass-fed steers were generally darker and duller (darker red) compared to muscles of young grain-fed animals. Moisture loss was consistently higher in zilpaterol supplemented meat samples compared to the feedlot controls, while muscles of the grass-fed animals had lower moisture loss. A sensory panel clearly distinguished between cuts of grain-fed (AZ and AC) and grass-fed carcasses (AB and B) on the grounds of flavour characteristic. The AB and B cuts scored higher for grassy, animal-like and rancid flavour overtones and lower for roasted flavour and sourness than AZ and AC grain-fed cuts.     Classifying network attack scenarios using an ontology

    This paper presents a methodology using network attack ontology to classify computer-based attacks. Computer network attacks differ in motivation, execution and end result. Because attacks are diverse, no standard classification exists. If an attack could be classified, it could be mitigated accordingly. A taxonomy of computer network attacks forms the basis of the ontology. Most published taxonomies present an attack from either the attacker's or defender's point of view. This taxonomy presents both views. The main taxonomy classes are: Actor, Actor Location, Aggressor, Attack Goal, Attack Mechanism, Attack Scenario, Automation Level, Effects, Motivation, Phase, Scope and Target. The "Actor" class is the entity executing the attack. The "Actor Location" class is the Actorā€Ÿs country of origin. The "Aggressor" class is the group instigating an attack. The "Attack Goal" class specifies the attackerā€Ÿs goal. The "Attack Mechanism" class defines the attack methodology. The "Automation Level" class indicates the level of human interaction. The "Effects" class describes the consequences of an attack. The "Motivation" class specifies incentives for an attack. The "Scope" class describes the size and utility of the target. The "Target" class is the physical device or entity targeted by an attack. The "Vulnerability" class describes a target vulnerability used by the attacker. The "Phase" class represents an attack model that subdivides an attack into different phases. The ontology was developed using an "Attack Scenario" class, which draws from other classes and can be used to characterize and classify computer network attacks. An "Attack Scenario" consists of phases, has a scope and is attributed to an actor and aggressor which have a goal. The "Attack Scenario" thus represents different classes of attacks. High profile computer network attacks such as Stuxnet and the Estonia attacks can now be been classified through the ā€œAttack Scenarioā€ class

    African leafy vegetables in South Africa

    In this article the term ā€˜African leafy vegetablesā€™ was adopted to refer to the collective of plant species which are used as leafy vegetables and which are referred to as morogo or imifino by African people in South Africa. Function is central in this indigenous concept, which is subject to spatial and temporal variability in terms of plant species that are included as a result of diversity in ecology, culinary repertoire and change over time. As a result, the concept embraces indigenous, indigenised and recently introduced leafy vegetable species but this article is concerned mainly with the indigenous and indigenised species. In South Africa, the collection of these two types of leafy vegetables from the wild, or from cultivated fields where some of them grow as weeds, has a long history that has been intimately linked to women and their traditional livelihood tasks. Among poor people in remote rural areas the use of these types of leafy vegetables is still common but nationwide there is evidence of decline, particularly in urban areas. Cultivation of indigenous or indigenised leafy vegetables is restricted to a narrow group of primarily indigenised species in South Africa.     Contamination of the environment by pathogenic bacteria in a livestock farm in Limpopo Province, South Africa

    The aim of this study was to investigate the occurrence and diversity of pathogenic bacteria in the environment at a livestock farm in Limpopo Province. Environmental samples were collected from three sampling locations: cattle camp (CC), sheep camp (SHC), and goat camp (GC). Samples were processed and analysed for total bacterial counts in the Biotechnology Laboratory, University of Limpopo, South Africa. Identifications were done with Matrix Assisted Laser Disorption Ionisation Time of Flight Mass Spectometry (MALDI-TOF MS) using the simplified on plate technique. The colony forming unit formula per gram of environmental sample (CFU/g) was used to determine total bacterial counts. High counts were observed in CC and low counts in SHC for both soil and faecal samples. Bacillus species were the most dominant across the sampling locations for soil samples. Bacillus cereus occurred in 36 samples (33%), however, the frequency of isolation dominated in the CC with (44.4%), GC (22.2%) and SHC (13%). Staphylococcus aureus had the least frequency (2.2%) followed by Listeria monocytogenes (4.4%). In faecal samples, the occurrence and level of contamination with bacterial species varied across sampling locations with Escherichia coli dominating in the CC with 20% frequency, and abscent from SHC and GC.http://www.aloki.huam2020Veterinary Tropical Disease

    Whole genome sequencing and identification of Bacillus endophyticus and B. anthracis isolated from anthrax outbreaks in South Africa

    Abstract Background Bacillus endophyticus is a soil plant-endophytic bacterium, while B. anthracis is the causative agent of anthrax. The virulence factors of B. anthracis are the plasmid encoded tripartite toxins (pXO1) and poly-Ī³-glutamic acid (PGA) capsule (pXO2). B. endophyticus isolated alongside B. anthracis from animals that died of anthrax in Northern Cape Province (NCP), South Africa, harbored polyglutamate genes. The study compared the characteristics of B. anthracis and B. endophyticus with other Bacillus species with a focus on the presence of the PGA capsule or/and unbound PGA. The morphology and whole genome sequence analysis of B. endophyticus strains and B. anthracis were compared. Results In conventional microbiology, B. endophyticus showed gram-positive round-shaped rods in single/short chains, which were endospore-forming, non-motile, non-haemolytic with white and dry colonies, and Ī³-phage resistant. B. anthracis was differentiated from B. endophyticus based on the latterā€™s box-shaped rods in pairs/long chains, white-grey and slimy colonies, encapsulated and Ī³-phage susceptible. The study identified a PGA polyglutamate synthase operon that consisted of pgsBCA, Ī³-glutamyltranspeptidase (ggt) and pgsE in B. endophyticus genomes. Conclusions PGA regions of B. anthracis contain capBCADE genes located in the pXO2 required for capsulation formation, while B. endophyticus contain the pgsBCAE genes in the chromosome. Whole genome and microbiology analysis identified B. endophyticus, as a non-capsuled endospore-forming bacterium that consists of PGA required for biosynthesis. B. endophyticus strains do not synthesize surface associated PGA, therefore capsule visualization of B. anthracis is a key diagnostic characteristic. The study highlights the significance of using whole genome shotgun sequencing to identify virulence and other important genes that might be present amongst unknown samples from natural outbreaks. None of the B. anthracis related plasmids or virulence genes were found in the B. endophyticus genomes

    Monitoring the prevalence of methamphetamine-related presentations at psychiatric hospitals in Cape Town, South Africa

    Objective: This study aimed to determine a demographic profile of methamphetamine (MA)-related admissions to major psychiatric services in Cape Town, obtain a substance use profile from admitted patients, a profile of common MA-related symptoms encountered during the assessment of the patients presenting with MA-related problems, and a brief profile of the psychiatric diagnoses made.Method: Staff in six psychiatric hospitals or wards in Cape Town collected data on methamphetamine related admissions between July and December 2008 using a one-page record review form. The data collection form consisted of the patientā€™s demographic details, presenting symptoms, previous admission details, current MA and other substance use information, and DSM-IV diagnosis. Results: A total of 235 forms were completed. Most patients were male (69%) and the mean age was 25 years. The most common presenting symptoms were aggressive behaviour (74%), followed by delusions (59%) and hallucinations (57%). Males were two times more likely to present with aggression as compared to females, while females were significantly more likely to present with depressed mood or euphoric/elevated mood. The majority of patients had substanceinduced psychotic disorder (41%), followed by schizophrenia (31%). Twelve percent (12%) had bipolar mood disorder.Conclusion: MA-related psychiatric admissions pose serious challenges to all health services dealing with these patients. Further training and treatment protocol development and distribution is indicated.Keywords: Methamphetamine; Admissions; Psychosis; South Afric
