    As iniciativas de economia solidária presentes em Santa Catarina: análise da microrregião do Alto Vale do Itajaí

    A economia solidária está presente em diversos empreendimentos no Alto Vale do Itajaí, em forma de associações e cooperativas, que buscam uma alternativa viável de colocação no mercado. Dentre os 28 municípios que compõem a região, 34 empreendimentos de economia solidária estão cadastrados na base de dados do Atlas Digital da Economia Solidária, distribuídos em 17 municípios. Diante desse cenário o presente artigo tem o objetivo de analisar as iniciativas econômicas que se enquadram no sistema de economia solidária, presentes na região do Alto Vale do Itajaí - SC, no período recente, bem como explorar qual o perfil dos participantes. Para realização da pesquisa utilizou-se a metodologia de pesquisa bibliográfica, para elaboração do referencial teórico e para obtenção de dados utilizou-se as informações do atlas Digital da Economia solidária. As principais conclusões do estudo foram que a economia solidária ainda é pouco difundida na região do Alto Vale do Itajaí, devido a isso torna-se pouco explorada, seja por parte da população, grupos sociais ou órgãos públicos o que dificulta o trabalho de divulgação e orientação, inibindo o desejo de empreender de forma alternativa. Muitos empreendimentos de economia solidária surgem da necessidade dos próprios sócios de obterem renda para subsistência ou complementação da pouca já existente ou ainda mediante alguma dificuldade enfrentada no cotidiano

    Analytical validation of an ultraviolet–visible procedure for determining vitamin D3 in vitamin D3-loaded microparticles and toxigenetic studies for incorporation into food

    Vitamin D is a water-insoluble compound presented in two main forms (D2 and D3), susceptible to environmental conditions. Microencapsulation is an alternative to supplements and preserve vitamin D properties in foods. Entrapment efficiency (EE) is the main property to evaluate the encapsulation effectiveness and therefore it is of interest the study of analytical methods for the identification and quantification of this compound within the particle. This paper describes a low cost UV–Vis methodology validation to the identification and quantification of vitamin D3 in microparticles produced by hot homogenization. The method was validated following the International Conference on Harmonization (ICH) guidelines. To guarantee safe application in foodstuff, microparticles toxigenicity was evaluated with Allium cepa L. in vivo model, showing no cytotoxic nor genotoxic potential.     Araucaria angustifolia (Bertol.) Kuntze extract as a source of phenolic compounds in TPS/PBAT active films

    There is growing interest in the development of biodegradable packaging materials containing natural antioxidant extracts. In this sense, the use of extracts obtained from agro-industrial byproducts has proved to be a sustainable alternative. In this study, Pinhão extract, a byproduct of Pinhão (Araucaria angustifolia (Bertol.) Kuntze) seed consumption, was characterized by HPLC-DAD-ESI/MSn, demonstrating the presence of eight phenolic compounds, (+)-catechin and (−)-epicatechin being the most abundant molecules. TPS/PBAT films containing Pinhão extract were produced by blown extrusion and their properties (tensile properties, thermal characteristics and microstructure) were evaluated in order to determine the effect of the presence of extracts. Results suggested that the interaction between the phenolic compounds of the extract and the polymeric matrix caused the reduction in the crystallinity degree, and an increase in the starch glass transition temperature. The presence of Araucaria angustifolia (Bertol.) Kuntze extract significantly (p < 0.05) affected the color and opacity of the film. Regarding water vapor permeation, no significant difference (p > 0.05) was detected. However, the water solubility and the contact angle with water (polar solvent) and diiodomethane (non-polar solvent) significantly changed due to the extract addition.     Use of nanoencapsulated curcumin against vegetative cells and spores of Alicyclobacillus spp. in industrialized orange juice

    Pathogenic and deteriorating bacteria are a great concern to food safety. In this sense, the present study evaluated the fight against microbial contamination through the use of nanoparticles containing curcumin, in addition to analyzing the physical properties of these nanoparticles. Efficient curcumin encapsulation was determined by Fourier transform infrared spectra evaluation and differential scanning calorimetry. Transmission electron microscopy images showed irregular shaped nanoparticles with broad size distribution (20–250 nm). The antibacterial activity was considered satisfactory, since curcumin in the form of nanoparticles demonstrated antimicrobial and antibacterial activity superior to curcumin in its free form, against both pathogenic bacteria, such as Staphylococcus aureus (MIC 125 μg/mL), and deteriorates, such as Alicyclobacillus acidoterrestris (MIC 62.5 μg/mL). Since curcumin nanoparticles may be consumed as a food additive, the bioactive properties of the nanoencapsulated curcumin were also evaluated in relation to antioxidant capacity (Thiobarbituric acid reactive substances (TBARS) and oxidative hemolysis inhibition assays) and cytotoxicity against four carcinoma cell lines, as well as two non-tumor cells.     Use of water-soluble curcumin in TPS/PBAT packaging material: interference on reactive extrusion and oxidative stability of chia oil

    The reactive extrusion technique is efficient in the incorporation of bioactive compounds for active packaging development. The application of curcumin, a strong antioxidant in its pure, isolated form to obtain active packaging has already been investigated; however, the use of water-soluble curcumin (WSC) in thermoplastic starch/poly(butylene adipate-co-terephthalate) (TPS/PBAT) films has not yet been investigated. It is important to determine how WSC would affect starch esterification reaction during reactive extrusion (REx). The use of WSC at 0.5%wt led to an increase in tensile strength, elongation at break, and Young’s modulus. A reduction in starch esterification was observed; however, an improvement in TPS/PBAT compatibility was detected by infrared spectroscopy, X-ray diffraction, and scanning electron microscopy images. It is worth noting that WSC addition resulted in an increase in the film’s solubility and water vapor permeability, due to the hydrophilic character of the WSC. The films were used to package chia oil, and the oxidative stability data were evaluated by UV-Vis spectroscopy coupled with principal component analysis. The addition of WSC (0.5%wt) in the films led to the improvement of the oil oxidative stability, suggesting that using water-soluble curcumin may be a promising alternative to active packaging in the case of reactive extruded films.The authors thank the “Central Analítica Multiusuário da UTFPR Campo Mourão” (CAMulti-CM) for the analyses.     TPCS/PBAT blown extruded films added with curcumin as a technological approach for active packaging materials

    The development of active packaging is a relevant topic demanding the development of films with diverse properties to preserve specific foodstuff. The objective of this work was to obtain extruded TPCS/PBAT films containing curcumin and evaluate it as an active antimicrobial and antioxidant packaging to protect chia oil from oxidative degradation. Morphology, thermal, mechanical, antimicrobial, and antioxidant evaluation of the films were conducted to determine whether the presence of curcumin affected the film’s properties. Infrared Spectroscopy indicated that curcumin addition affected the crosslinking reaction between citric acid and starch, which explains the changes in hydrophilicity and mechanical strength of the films. The incorporation of curcumin conferred antimicrobial activity against Gram-positive (Staphylococcus aureus) and Gram-negative (Pseudomonas aeruginosa and Escherichia coli) bacteria, as well as antioxidant activity.     Bioactivity screening of pinhão (Araucaria Angustifolia (Bertol.) Kuntze) seed extracts: the inhibition of cholinesterases and α-amylases, and cytotoxic and anti-inflammatory activities

    The objective of this work was to determine the potential bioactive properties of extracts from bio-residues of pinhão (Araucaria angustifolia (Bertol.) Kuntze) seeds, namely the α-amylase and cholinesterase inhibition, cytotoxicity, and anti-inflammatory properties. The pinhão extracts evaluated were obtained from cooking water (CW) and as an ethanolic extract from residual pinhão seed shells (PS). Catechin was the major compound found in both extracts. The PS extract presented higher antioxidant levels and the better inhibition of human salivary and porcine pancreatic α-amylases when compared to the CW extract. Also, based on in vivo evaluations, the PS extract did not differ significantly from acarbose when compared to a control group. The most potent inhibitor of cholinesterases was the CW extract. No cytotoxicity toward normal cells was detected, and neither extract showed anti-inflammatory activity. The PS extract presented cytotoxic activity toward non-small-cell lung, cervical, hepatocellular and breast carcinoma cell lines.     The agentive suffixes nte and (d/t/s)or in the Portuguese language: a semantic diachronic study

    No processo derivacional, os sufixos nte e (d/t/s)or são conhecidos por formarem vocábulos designados na língua como agentivos. O conceito de agente, por sua vez, é fundamental para os estudos da linguagem, pois descreve uma categoria primária a qualquer ser vivo, servindo, por isso, de base para a criação de outras categorias. Propôs-se observar, descrever e organizar os significados dos sufixos nte e (d/t/s)or presentes na língua portuguesa, utilizando o mecanismo da paráfrase. Por tratar-se de afixos abrangentes, fizeram-se necessários dois tipos de abordagem: uma qualitativa e uma quantitativa. Num primeiro momento, fez-se uma pesquisa etimológica específica nos agentivos nomeadores de profissionais, isto é, em designadores de seres humanos portadores de uma função, em que se examinou o emprego primitivo dos sufixos que compõem essa análise. Depois, abarcaram-se palavras pertencentes a campos diversos, limitados pela presença desses sufixos. Os sufixos formadores de nomina agentis nte e (d/t/s)or remetem aos falantes a ideia de alguém ou algo que faz alguma coisa, isto é, forma duas séries nas quais se corporizam as derivações deverbais de designações de pessoas que são agentes da ação implicada no significado do verbo. A hipótese do trabalho é a de que os nomes em nte e (d/t/s)or possuem a propriedade do aspecto, entendido como duração da ação, devido à constituição histórica tanto das bases que os integram como dos próprios afixos, o que confere a cada um deles um papel semântico específico na língua. Constatou-se que as paráfrases dos nomes em nte e (d/t/s)or seguem um padrão acional único, sem variação nos diversos grupos lexicais a que pertencem, com uma especificidade no significado do sufixo nte. Esses e os outros elementos morfológicos se constituem como fundamento material para mediar a relação do falante com sua expressão socialIn the derivational process, the suffixes nte and (d/t/s)or are known for forming words which are designated in the language as agentives. The term agent is fundamental to the studies of languages because it describes a primary category to any living being, and therefore it serves as a base to the creation of other categories. The proposal of this work is to observe, to describe and to organize the meanings of the suffixes nte and (d/t/s)or in Portuguese, utilizing the mechanism of paraphrase. Since they are comprehensive affixes, two approaches a qualitative and a quantitative one were necessary. Firstly, it was conducted a specific etymological research about the professional agentives, i.e. namely in human beings that have a function, in which the original function of the suffixes was examined. Subsequently, words of different fields were analyzed with these affixes. The nomina agentis forming suffixes nte and (d/t/s)or give to the speakers the idea of someone or something that does some action, forming two series in which they embody the deverbal derivations of nouns of people who are agents of the action implied in the verb meaning. The hypothesis of the work is that names in nte and (d/t/s)or own the property of the aspect, videlicet the implication of the duration of the action, due to historic constitution of both the bases and the affixes, which provides to each suffix one specific semantic role in the language. It was noticed that the paraphrases of the names in nte and (d/t/s)or follow one single standard of action, with no variation in the several and different lexical groups to which they belong, with a specificity in the meaning of the suffix nte.     Optimization of pinhão extract encapsulation by solid dispersion and application to cookies as a bioactive ingrediente

    Pinhão residues have a wide range of bioactive compounds and encapsulation can be one of the alternatives to increase their bioavailability. Thus, this work aimed to apply pinhão extract, pure and encapsulated by solid dispersion, in the formulation of cookies as a bioactive ingredient. For that, pinhão extract was encapsulated in different biopolymers (sodium caseinate, gelatin, and gum arabic) and with different shear mechanisms (sonication, Ultra-Turrax, and magnetic stirring). The best encapsulation procedure has been defined by a chemometric analysis (hierarchical cluster analysis), considering thermal properties (DSC) of particles and ( +)-catechin encapsulation efficiency (HPLC). The optimized conditions were gelatin as encapsulation agent and Ultra-Turrax as shear mechanism (70.1 ± 2.8 °C maximum endothermic peak temperature and 96.0 ± 2.3% ( +)-catechin encapsulation efficiency). The phenolic profile of the encapsulated extract showed the presence of ( +)-catechin (0.31 ± 0.01 (mg/gparticle), protocatechuic acid (0.29 ± 0.00 mg/gparticle), and ( −)-epicatechin (0.11 ± 0.00 mg/ gparticle). Both the pure and encapsulated extracts were incorporated into the cookie formulation, which was characterized in terms of centesimal composition, color parameters, texture, and sensory aspects. It was found that cookies with the pure and the encapsulated extract showed significant differences concerning the centesimal composition, products added with pinhão extract and encapsulated extract presented higher values when compared to the control, probably influenced by the mineral content of the pinhão.
