Biotechnology factors influence on formation of curd cheese quality indicators
Considering the growing interest of the Russian society in fermented dairy products, in particular, cream cheese enriched with probiotic cultures and biologically active substances (BAS), it is relevant to conduct research aimed at scientifically justifying the choice of biotechnology of curd production as a raw material for cream cheese by studying the influence of biotechnological and technological factors on the formation of properties of the used curd. The generally accepted methods of qualitative prediction were used. The study of consumer opinion revealed the demand of Russian buyers for curd products enriched with BAS and probiotic cultures. The analysis of the regulatory documentation allowed us to form a set of mandatory requirements for the quality of curd cheese and the curd used, as well as a list of raw materials, biotechnological and technological factors required in the technology of curd cheese production. The study of the influence of each type of biotechnological and technological factors on the properties of the finished product has shown that in the biotechnology of enriched cream cheese it is necessary to use starter from pure cultures of lactococci or a mixture of lactococci and thermophilic lactic acid streptococci, acid method of coagulation of milk protein, whey separation by separation or ultrafiltration, introduction of BAS and flavoring fillers with cream in a separate method of normalization, as well as to exclude the use of milkclotting enzyme, and also to eliminate the use of milk-clotting enzymes. The results obtained are the basis for the development of new biotechnologies of curd cheese enriched with BAS and/or probiotic cultures
FOOD QUALITY MANAGEMENT BASED ON QUALIMETRIC METHODS
Fusing best international and local quality management and control practices is one of the most effective ways to gain competitive advantage. Among other things, this includes implementing "customer focus" and "factual decision-making", the key principles of Universal Quality Management, through qualimetric models. The authors have identified qualimtric models with the best quality management potential across the food processing industry, at different product life cycle stages. They especially emphasize the potential of applying qualimetric forecast to food quality and safety. The authors have identified the main stages of product quality metrics forecasting to predict and achieve the desirable food quality in the most effective way possible. The proposed methods are a combination of qualifying methods and world’s best quality management tools and techniques. With the example of quality management in curd products at the development stage the authorship points out the indicators defining product quality and safety, ranks value in building product quality, gives a math formula to describe product quality and an algorithm to assess product quality based on a comprehensive quality indicator and deduce recommendations to achieve desirable and predictable product properties. The proposed stages of qualimetric forecasting, based on the integration of qualimetric models in quality management, have been tested on some curd products in production and proven to be practically effective
Construction of hybrid intelligent system of express-diagnostics of information security attackers based on the synergy of several sciences and scientific directions
This paper is devoted to construction of a hybrid intelligent system of express-diagnostics of possible information security attackers (HIS DIVNAR) based on a synergy of several sciences and scientific directions: test pattern recognition; discrete mathematics; threshold and fuzzy logic; artificial intelligence; finite state machines (FSM) theory; reliability; theory of separating systems; theory of probability and mathematical statistics; and cognitive means. The proposed approach and basis of the mathematical apparatus are fragmentarily given for constructing HIS DIVNAR; that consists of four components: the first component, called IS DIOS, is designed for the express-diagnostics of organizational stress of the subject; the second (IS DIAPROD) is for the express-diagnostics and prevention of depression; the third (DIDEV) is for the expressdiagnostics and prevention of deviant behavior; and the fourth, intelligent system of express-diagnostics of information security attackers (IS DINARLOG2) is for making and justification of decisions with the use of cognitive means based on earlier revealed different regularities, including fault-tolerant irredundant unconditional diagnostic tests, fault-tolerant mixed diagnostic tests, regularities, and decision rules, which are built by using the applied IS DINARLOG1 constructed on the basis of intelligent instrumental software IMSLOG. Risk analysis within the production process of fish preserves
One of the primary tasks for today is the production of high quality and safe products according to the legislation of Russian Federation. There are a number of risks within the production process. The common problem is the heat treatment process. This problem is for fish preserves. Such products can classify as perishable. It is necessary to carefully approach the choice of raw materials and compliance with all technological regimes. Since there is always the possibility of various dangers. In order to minimize dangerous factors, it is important to use a quality method with identifying the most important of them for factors matrix for production process of fish preserves proposed to develop a diagram of quality and safety indicators and identify the most important of them for further use to form a matrix of technological factors that have a direct impact on quality and safety indicators in the production of fish preserves
