    FOOD FIBRES OF THE DOMESTIC PRODUCTION FOR THE MEAT-PROCESSING INDUSTRY

    Summary. The range of meat products with food fibers can be rather wide. The choice of the corresponding type of fibers or creation of a mixed product according to specific objectives allows to develop the products enriched with fibers, or products with the high content of fibers which possess pleasant taste. The right choice of fibers also gives technological and economic advantages. Concrete functional properties of polysaccharides, obviously, are connected with their spatial structure. Experience of food technologies with all evidence testifies to it. Ability to thicken water solutions are among such properties, to form jellies, to create emulsions, foams, to act as their stabilizers, to connect heavy metals, etc. Beet and wheat celluloses promote preservation of juiciness and decrease in losses at heat treatment, stabilize a good trade dress of finished products from chopped meat. Their introduction in minced products – chopped semi-finished products, pastes, canned food is most expedient. The amount of food fibers brought in compounding of products, is caused by touch properties of products and can differ for different types of food fibers. For the purpose of improvement of quality and expansion of the range of meat products studied properties of food fibers of a domestic production of ECOLIGHT native (JSC EFKO-NT). For an assessment of possibility of use of preparations in technology of meat products investigated the microbiological status and the maintenance of ions of heavy metals in objects according to requirements the SanPiN 2.3.2.1078-01. An inspection of harmlessness of cellulose of food fibers "ECOLIGHT native" was carried out on the Paramecium caudatum biotest culture. For definition of conditions of application of a preparation of food fibers of beet cellulose "ECOLIGHT native" investigated functional and technological and commodity properties of granules of food fibers "ECOLIGHT native", developed with their application of a compounding and technical documentation on production of ready-made products

    Purpose: Attention to the problems of social and economic development of rural areas by Government authorities, economists and the scientific community was mainly theoretical or sometimes targeted practical in nature. Design/Methodology/Approach: At the same time, rural poverty and high unemployment rate, worsening demographic situation, reducing network of institutions of social infrastructure in rural areas, which together have a negative impact on the reproduction of labor resources, lower production volumes and high migration rates have always been the problems of rural development in the country. Findings: Overall, sustainable development of rural areas characterizes, on the one hand, external major natural resource constraints that form a distant prospect, and on the other hand, determine the possibilities of social and economic development of rural communities, economic entities, diversification of the territory's economy, the formation of new activities and environmental engineering. This is a very wide range of problems, which are currently considered from different perspectives in Russia and in several countries of the world. Practical implications: The article discusses the problems of economic development of rural areas as the main factor in ensuring the sustainable development of rural areas of the agrarian regions of Russia. Originality/Value: The authors define the core resources for development of the rural areas in the region, provide an overview of agribusiness and tourism industry clusters, reveling their points of growth, cluster sales channels, tourism and recreation development.peer-reviewe

    Economic and political fundamentals for the establishment of the cabinet-owned metallurgical complex in Siberia in the 18th century

    Economic and political fundamentals for the development of mining and metallurgical production in Siberia in the 18th century are discussed in this paper. The principal type of ownership of large enterprises at that time was serf manufactory, the development of which took place in the conditions of absolutism based on forced labor. Based on a comprehensive set of archive documents, the authors have studied the problem of the transfer under the authority of the Imperial Cabinet of the private Kolyvano-Voskresensk enterprises owned by Demidov, which were established in the 1720s in the south area of Western Siberia. The status change of industrial enterprises is discussed in the context of accidental events (the death of Akinfiy Demidov and the controversy of his heirs) and the consistent processes of development of silver smelting production in the country. The quick development of the metallurgical industry in Russia in the 18th century was caused by a number of domestic and external factors. The Crown extensively attracted private sector capital for the search and development of ore deposits, especially in remote Uralian and Siberian areas. In the 1720s-1740s, the Kolyvano-Voskresensk industrial-territorial complex privately owned by Akinfiy Demidov was established in the south area of Western Siberia. In the middle of the 1740s, the events happened, as a result of which the possessory belonging of the enterprises was changed and these enterprises were transferred under the control and management of the governmental institution – that is, the Imperial Cabinet. Thus, the Kolyvano-Voskresensk plants became the basis of the Cabinet production unit which existed in the 18h-19th centuries.peer-reviewe

    Economic mechanism of regulating land relations in the agricultural sector of Russia

    The present study substantiates the economic basis for regulating land relations in the agricultural sector, outline the main stages of the formation and development of land relations in Russia. It also carries out a comparative analysis of land relations in Russia and foreign countries, presents theoretical aspects of economic regulation of land relations in the agricultural sector and considers domestic and foreign experience of the regulation of land relations. The activities of human society in connection with land are carried out on the basis of social relations, the key element of which is land relations. Transformations and regulation of land relations occur in the process of agrarian transformations. Historically, it has been proven that the implementation of agrarian reforms that change the socioeconomic situation, the working conditions of people, the production and marketing of products, does not bring about solid results without a proper transformation of land relations. The unique role of land relations in the system of agrarian reforms suggests that agrarian restructuring must begin with land reform.peer-reviewe

    Today, the degree of agricultural development, and, in the future, the level of national food security, the public health and the quality of life, are largely ensured by innovative developments in the field of alternative agriculture, the preservation of natural resources and, above all, the main production facility – land. At the same time, the unfilled market capacity of organic products and the significant land potential for the development of organic farming create all the necessary prerequisites for enhancing the competitiveness of Russian rural producers. The development of agricultural entrepreneurship towards the greening of land use, organic production and development of the domestic market for organic (ecological) products in the format of zonal agro-eco clusters is one of the strategic directions for implementing reforms in the agricultural sector.     Economic and mathematical modeling of regional industrial processes

    The paper presents a method for the parallel optimization of the structure of sown areas for calculating economic and mathematical models for the traditional and organic-oriented land use systems characterized by the introduction of an additional set of environmental criteria constraints. Based on the proposed methodology, an economic-mathematical model has been calculated and the effectiveness of the functioning of the Altai Foothills zonal agroecocluster has been proved. Considering the full involvement in the agricultural production turnover of land suitable to produce organic products, the level of profitability was 39.7% against 17.3% in case of optimizing the structure of the sown areas in the traditional system of agricultural production.peer-reviewe

The article proposes the directions and mechanisms of support for small bakery production at the level of rural territories. The development of modern methods of redistribution of bakery production in proportion to the living population, measures of state support for small bakery production and expansion of the range of bread products that contribute to improving the health of the population of Russia, is the theme of this study. The object of the research is the development of small bakery production as a condition for improving the quality of life of the population in rural areas.
