    Revalorización del descarte originado por la producción de jugo de manzana como ingrediente funcional en la formulación de premezclas para horneados

    Este estudio evaluó el uso de bagazo de manzana, principal subproducto de la industria del jugo, como ingrediente funcional en premezclas para horneados. Esta materia prima tiene alto contenido de fibra, lo que le otorga un gran potencial nutricional para mejorar la formulación de productos. El bagazo fue secado y molido para obtener harina de manzana. Se desarrollaron premezclas para muffins, tortas y galletas enriquecidas en fibra mediante sustitución parcial de harina de trigo por harina de manzana, con el fin de obtener un producto que podría ser etiquetado como “fuente de fibra”. Si bien la fibra tuvo un efecto negativo en las características sensoriales, los productos desarrollados fueron aceptables y percibidos como saludables. La torta fue el producto más aceptable, siendo seleccionado para hacer un estudio con productos de las marcas líderes del mercado. La premezcla desarrollada contribuye a la generación de otro concepto de producto, ya que fue percibida como diferente cuando se comparó con otros productos comerciales similares, aunque obtuvo una aceptabilidad comparable. El desarrollo de premezclas utilizando este subproducto constituye una categoría de alimentos funcionales que satisface las necesidades de los consumidores y de la industria, permitiendo transformar un problema ambiental en un potencial retorno económico, contribuyendo a la salud de los consumidores

    Promoting Early Childhood Development through Combining Cash Transfers and Parenting Programs

    This paper examines the potential for bringing together cash transfer and parenting programs focused on child stimulation to boost child development, particularly for children ages 0–3 years. The paper reviews the rationale for linking both types of programs and the evidence to date on the impact of cash transfer programs, parenting programs, and their combination. The paper reviews the main operational features of 10 examples of combining cash transfer and parenting interventions and identifies four models for structuring the combination: integrated, convergence, alignment, and piggy-backing. The paper finds promising evidence for combining the interventions, where adding the parenting program to the cash transfer program has improved some parental practices and child development outcomes, with results in cognition and language. However, the evidence is still scarce, and more research is needed to understand the key elements of the optimal combinations, fidelity of implementation, cost-effectiveness of different design features, replicability, and sustainability of results

    Consumer Response to Cake with Apple Pomace as a Sustainable Source of Fibre

    © 2021 by the authors.The use of apple pomace flour (APF) as a fibre enrichment strategy was investigated. The aim of this study was to evaluate consumers’ response to intrinsic and extrinsic properties of a bakery premix product when using APF. Apple pomace, a by-product from the juice industry, was dried and ground. APF is high in carbohydrates (47.47%) and fibre (38.48%), and it was used to partially substitute wheat flour and sugar in a cake premix. Acceptability, health, and nutrition questions were evaluated with and without information in terms of regular and fibre-enriched cake. The regular cake score was not affected by information, while the enriched cake’s score increased with information. Three clusters were identified. Cluster 1 (29%) showed high liking scores for regular cake, cluster 2 (31%) for the fibre-enriched cake, and cluster 3 (40%) showed similar liking for both. Consumers described the samples and ideal cake using a check-all-that-apply (CATA) questionnaire. Penalty analyses explained differences in acceptability among consumers. Healthiness, tastiness, and fibre content were the main reasons to buy the enriched cake for cluster 2; taste for consumers in cluster 1; and healthiness and taste for consumers in cluster 3.
