Protein Quality of Game Meat Hunted in Latvia
Not all proteins have the same nutritional value, since
protein quality strongly depends on its amino acid composition and
digestibility. The meat of game animals could be a high protein
source because of its well-balanced essential amino acids
composition. Investigations about biochemical composition of game
meat such as wild boar (Sus scrofa scrofa), roe deer (Capreolus
capreolus) and beaver (Castor fiber) are not very much. Therefore,
the aim of the investigation was evaluate protein composition of
game meat hunted in Latvia. The biochemical analysis, evaluation of
connective tissue and essential amino acids in meat samples were
done, the amino acids score were calculate. Results of analysis
showed that protein content 20.88-22.05% of all types of meat
samples is not different statistically. The content of connective tissue
from 1.3% in roe deer till 1.5% in beaver meat allowed classified
game animal as high quality meat. The sum of essential amino acids
in game meat samples were determined 7.05–8.26g100g-1. Roe deer
meat has highest protein content and lowest content of connective
tissues among game meat hunted in Latvia. Concluded that amino
acid score for limiting amino acids phenylalanine and tyrosine is high
and shows high biological value of game meat
EXTRUSION TECHNOLOGY OF SOYBEANS AND OBTAINED PRODUCT FEEDING EFFECT ON LACTATING SOWS AND THEIR OFFSPRINGS PRODUCTIVITY
The aim of study was to estimate the processing technology of soybeans produced in Latvia and to compare the possibilities of using the obtained soybean cake with imported soybean meal in the feeding of lactating sows and their offspring. From soybeans, which were processed into animal feed, we obtained a product with a high content of protein. The control group of sows and fattening pigs received the imported soybean meal mixed into the compound feed, but the trial groups compound feed was mixed with soybean cake grown and processed in Latvia. Fattening pigs were weighed regularly. Feed consumption was counted and feed conversion was calculated. Was determined meat quality, carcases weight, carcases length. The chemical composition of the manure was analysed. Statistical analysis of data was performed with SAS / STAT 9.22 software package. The inclusion of soy cakes grown and processed in Latvia in lactating sow feed increased sow milk yields traits by 3.9% at 21 day of piglet age. At the end of experiment higher live weight by 3.42% were found in the trial group. Carcass quality indicators and chemical composition of meat did not show significant differences. Was observed a tendency to decrease in manure the content of organic matter in the trial group by 3.25%, decrease levels of total phosphorus and ammonium nitrogen compared to the control group. Using soybean cakes grown and processed in Latvia is possible to develop feed rations that showed similar pig growth results to imported soybean meal
IMPACT OF CULTIVATION TECHNOLOGIES ON SOYBEAN PRODUCTION AND QUALITY
Legumes are considered the second most important food source after cereals. One of high protein legume – soybeans is new species for growing in Latvia. Biochemical composition of soybeans is variable dependent on varieties, and highly affected by environmental factors, including fertilisation and the presence of Rhizobium bacteria. Therefore, the present study was conducted to evaluate a chemical composition of soya (Glycine max L) differently fertilized and grown in different places in Latvia. In this study was evaluated protein, fat, fibre content and yield of soybean variety ’Laulema’ grown at different (F1-F6) fertilisation background in Stende and Vilani. Overall results of a three-year analysis (2018-2020) showed that the protein content of soybean ‘Laulema’ ranged from 31.0 to 38.9%, values of total crude fat ranged from 19.4 to 22.4, but crude fibre 10.5-13.7%. Significant difference was observed among fertilisation background, year and climatic conditions. Soybean productivity depends to a large extent on climatic conditions. Providing favourable conditions for the development of Rhizobium bacteria and the availability of balanced nutrients for plants, soybean yield can reach 2 - 3 t ha-2 also in Latvi

The fatty acid composition of Estonian and Latvian retail milk; implications for human nutrition compared with a designer milk
The study reported in this Research Communication compared retail milks’ FA profiles from two neighbouring countries, estimated the potential contributions of these milks and a designer milk (achieved by changing the diet of the dairy cow) to the recommended human dietary intake of FA, and predicted (based on the milk FA profile) methane emission from dairy cows. Retail milk in Estonia and Latvia was purchased from supermarkets monthly for one year. To compare the FA composition of retail milk with designer milk with an increased PUFA content, the bulk milk FA profile from a separate field trial was used. Milk FA concentrations of two neighbouring countries were affected by state, season, and their interaction, while the main influence on all these factors were different feeding practices (grazing availability, forage to concentrate ratio and legume-rich silages vs. maize silages). Three cups (600 ml; fat content 2·5 g/100g) of Estonian, or Latvian retail milk or designer milk per day contributed more to the recommended intakes of saturated FA (SFA) (42·5%, 42·7%, 38·7%, respectively) than other FA. Compared to the retail milks, α-linolenic acid estimated intake was almost doubled by designer milk consumption (19·7% of adequate intake) without influencing summed intakes of SFA and trans FA. There were state and seasonal differences in the predicted methane outputs of dairy cattle based on retail milk FA. Although the FA profiles of retail milks in the two neighbouring countries were affected by state and season, an appreciable increase in human dietary intakes of beneficial fatty acids from milk, and concomitant reduction in methane emissions from dairy cows, can be achieved only by targeted feeding
