    Evaluation of phenolic compounds, antioxidant activity and pigment content in emerging and traditional plant-based oils in Mediterranean gastronomy

    EVOO is an indispensable ingredient in Mediterranean gastronomy that is known for its numerous benefits, such as reductions in cardiovascular risk and its anti-inflammatory effects due to the presence of bioactive compounds and their antioxidant activities. However, recently, other emerging vegetable oils are increasing their culinary presence because of their potential health benefits or interesting attributes for food preparation. The aim of this study was to determine and compare physicochemical parameters, such as the contents of phenolic compounds (TPC), antioxidant capacities, pigments, viscosity and surface tension, of the traditional and emerging plant-based oils used in Mediterranean gastronomy and evaluate the effects of short pan-frying on these parameters. EVOO, olive pomace oil (OPO), sunflower oil (SO), organic flaxseed oil (FO), avocado oil (AO) and extra virgin coconut oil (EVCO) were studied. The results indicated that the TPC content ranged from 8.92 to 142.27 mg/kg. The highest antioxidant capacities were found in OPO and SO. AO had the highest pigment content. Frying the oils resulted in greater losses in the TPC contents in EVOO (27.4%) and AO (21.5%), 59.3% of the antioxidant capacity of AO and between 12% and 40% of the pigments in the different oils studied. Conclusion: EVOO and AO are highlighted for their TPC value, FO and AO for their pigment content and OPO and SO for their antioxidant capacities. In contrast, EVCO had low contents of all the compounds studied. Pigments and physical parameters of these vegetable oils were just lightly affected by short pan-frying, however, the nutritional value provided by its antioxidant capacity and its phenolic compounds was reduced, especially for AO and EVOO

    La comunicación pública de la ciencia en Argentina: los casos de "El Gato y La Caja" y "CONICET Dialoga"

    Abstract This article is based on the results of an investigation that explored how the media CONICET Dialoga and El Gato y La Caja communicate on Facebook from the perspective of Public Communication of Science Studies. In this framework, the use of new narratives and communicative interactivity are considered as structural factors for this process. The publications that the media shared in the social network during two weeks of November 2018 were analyzed. The results revealed the use of multimedia resources as part of their communicative strategy, an incipient use of hypertextuality to share science communication with the masses, and an uneven level in the possibilities of participation that they established with their audience. The conclusions show that although both media share the ways they communicate, which are in the line of the postulates of Public Communication of Science, CONICET Dialoga is the one which is aligned with the cognitive deficit model, while El Gato y La Caja presents a proposal related to the contextual ethnographic model.El presente artículo recupera los resultados de una investigación que abordó los modos en que los medios CONICET Dialoga y El Gato y la Caja comunican en Facebook desde la perspectiva de la Comunicación Pública de la Ciencia (CPC). En este marco, se considera el uso de nuevas narrativas y la interactividad comunicativa como factores estructurales de dicho proceso. Se analizaron las publicaciones que los medios compartieron en la red social durante dos semanas de noviembre del año 2018. Los resultados revelaron la presencia de recursos multimedia como parte de la estrategia comunicativa, un incipiente uso de la hipertextualidad para abrir la comunicación de la ciencia al público masivo y una dispar utilización de las posibilidades de participación que establecieron con sus públicos. Se concluye que si bien ambos medios comparten sus formas de comunicar con características que los alinean con los postulados de la CPC, CONICET Dialoga es el medio que se ajusta al modelo de déficit cognitivo, mientras que El Gato y La Caja presenta una propuesta alineada con el modelo etnográfico contextual.Abstract This article is based on the results of an investigation that explored how the media CONICET Dialoga and El Gato y La Caja communicate on Facebook from the perspective of Public Communication of Science Studies.     Equivalent Circuit Model of Magnetostrictive/Piezoelectric Laminated Composite

    An equivalent circuital model of magnetostrictive/piezoelectric laminated composite has been developed in order to predict its behavior in presence of dynamic electromagnetic fields. From magnetostrictive and piezoelectric constitutive equations, and using an equation of motion, magnetic-mechanical-electric equations are: obtained by building a symmetric adhoc equivalent circuit about the magnetoelectric (ME) coupling. The coefficients of the direct and converse effects are simulated. The circuit is further used to predict the voltage coefficients of laminated composite. The multilayer material is found to have significantly higher ME coefficients near resonance frequency. The ME coefficients and the voltage coefficients change significantly with the configuration of the multilayer, more specifically when the laminate operates in longitudinal-transverse (L-T) and transverse-transverse (T–T) modes

    El proyecto GAMMA-EC es un proyecto europeo cuyo objetivo es mejorar la formación de mandos intermedios de las escuelas de bomberos de cuatro paises de la Comunidad Europea (España, Francia, Italia y Paises Bajos). El objetivo del proyecto es diseñar dos herramientas (un programa multimedia y un juego de simulación) para mejorar la formación de los mandos intermedios en la toma de decisiones y habilidades comunicativas en dos tipos de catástrofes: los grandes fuegos forestales y los accidentes químicos. En este documento exponemos las bases pedagógicas que sustentan el diseño del programa multimedia, describiendo las fases que se han seguido para su desarrollo: identificar y analizar objetivos, análisis de los usuarios, estilos de aprendizaje, selección de estrategias instructivas y diseños de pantallas.Constructivismo, formación en emergencias, multimedia, resolución de problemas. ABSTRACT: GAMMA-EC is a European project which goal is to improve the management training staff in the Fire Academies of four countries of the European Community (France, Italy, The Netherlands and Spain). Within this objective a Multimedia and Interactive simulation tools are being developed to facilitate the education and training of the Environmental Emergency Staff in decision making and in exchanging information in two different crisis situations: forest fires and chemical accidents.     Recovery of proteins from biomass grown in pig manure microalgae-based treatment plants by alkaline hydrolysis and acidic precipitation

    Producción CientíficaThe influence of three variables on key parameters of the protein extraction process (an alkaline hydrolysis followed by an acidic precipitation) for biomass from innovative photo-bioreactors for pig manure treatment was evaluated. Alkaline hydrolysis provided high solubilisation values (up to 66.5% of the biomass), augmenting with increasing values of the three studied variables (NaOH concentration, temperature and time). Nevertheless, moderate total (13.2%) and protein extraction yields (16.9%) were obtained, which was attributable to protein denaturation or to the low effectivity of the precipitation method. Extracts rich in proteins (53.5%–77.9%) with suitable amino acid profiles were obtained, but significant amounts of the initial lipids (up to 44.6%) were co-extracted probably due to fatty acids saponification.
