    Processed foods and the nutrition transition: evidence from Asia

    This paper elucidates the role of processed foods and beverages in the ‘nutrition transition’ underway in Asia. Processed foods tend to be high in nutrients associated with obesity and diet-related non-communicable diseases: refined sugar, salt, saturated and trans-fats. This paper identifies the most significant ‘product vectors’ for these nutrients and describes changes in their consumption in a selection of Asian countries. Sugar, salt and fat consumption from processed foods has plateaued in high-income countries, but has rapidly increased in the lower– middle and upper–middle-income countries. Relative to sugar and salt, fat consumption in the upper–middle- and lower–middle-income countries is converging most rapidly with that of high-income countries. Carbonated soft drinks, baked goods, and oils and fats are the most significant vectors for sugar, salt and fat respectively. At the regional level there appears to be convergence in consumption patterns of processed foods, but country-level divergences including high levels of consumption of oils and fats in Malaysia, and soft drinks in the Philippines and Thailand. This analysis suggests that more action is needed by policy-makers to prevent or mitigate processed food consumption. Comprehensive policy and regulatory approaches are most likely to be effective in achieving these goals

    From Horse to Horsepower: Farm Tractorization and the Rural Landscape examines man \u27s imprint on the land due to changing farming technologies in the American Midwest. Specifically, during the transition between the horse era, when horses were the primary power source of agricultural power, and after tractorization took place--that is, when horses were displaced by tractors. This thesis examines transformations within the cultural landscape due to significant technological changes on the farm. Aspects involved encompass the broad topic of the rural landscape, elements of which include fields, farm buildings, farm equipment and implements, farmsteads, rural roads and bridges, crops, fences, and the general history of the mechanization of agriculture, deliberate manipulation of the environment for mankind \u27s ends, that is, to provide food, fiber, and shelter. For purposes of this study, the landscape may be divided into urban and rural components. The rural landscape is the focus of this study. This study does not attempt to cover all aspects of the rural landscape; rather, it will focus on the farm and its related elements. The rural-urban fringe is relevant only insofar as it illustrates the dynamic interaction and interdependence between the rural and urban boundaries. These boundaries pose a threat to the preservation of much of our rural cultural heritage, as many of the old farm buildings and other rural relics are being torn down to make way for factories, housing projects, and shopping centers. The urbanization of rural society is beyond the scope of this study, as many scholars have dealt adequately with this topic. The farm community is necessarily connected to urban centers for transportation, marketing, financing, electrical supply, and various other services. Ties between the rural and urban communities are much stronger today than they were during the horse era when farms were largely self-sufficient

    Recruiting Deaf and Diverse Teachers: Priorities of Preservice Teachers in Deaf Education

    The need to increase teacher diversity in deaf education has been a national concern over the last decade. The ethnic, racial, cultural, and linguistic composition of the teaching force has remained relatively unchanged; White, hearing, females make up the majority of the teaching force. In sharp contrast, the K-12 student population has become increasingly diverse which creates a chasm that is unlikely to change during the next decade without focused effort. This study considered group demographics and implications for culturally- responsive recruiting practices. The need for improved recruitment of Deaf professionals and diverse professionals is discussed, along with other associated challenges. Findings of a national study of recruitment priorities of preservice deaf educators are reported. Causal- comparative analyses revealed statistically significant recruitment priorities among groups of students as a function of hearing status and diversity status. The article provides suggestions for improved recruiting practices for deaf education teacher preparation programs

    Using Formative Research and Audience-Centric Intelligence to Develop the #JustBe Digital Magazine: An mHealth Strategy to Improve Adolescent Sexual Health

    Digital strategies may help to overcome challenges in providing contraception education to overlooked and key sub-populations (older teens, ethnic minority youth, LGBTQ youth, high school dropouts and males). However, many current digital strategies are not culturally specific and often have limited information on the most effective contraceptive methods. In this article, we describe the preliminary steps used to develop #JustBe, a user-centered digital strategy for ethnic minority older youth and young adults with a specific focus contraception, sexual health, consent, and healthy relationships. Technology-based strategies such as #JustBe offer advantages over traditional face-to-face methods by utilizing a confidential way to retrieve sexual health information that may be sensitive and potentially embarrassing. Questions still remain regarding the feasibility and long-term effects of mobile health interventions for contraception use

    Lunar Reconnaissance Orbiter (LRO) Thermal On-Orbit Performance

    The Lunar Reconnaissance Orbiter (LRO) was launched on June 18, 2009. The nominal mission ended on September 15, 2010 and LRO is now on a four-year extended mission. The LRO performances in hot and cold cases are compared to pre-launch analysis predicts, and operational lessons learned are discussed. One instrument has required tighter-than-anticipated thermal control, and two others have frequently requested unanticipated calibration maneuvers that had to be evaluated for their thermal performance. A series of off nadir thermal analyses of the entire orbiter were performed prior to launch, and these predictions are compared to actual maneuvers, with a discussion of the process by which maneuvers can be rapidly evaluated for thermal concerns. On December 21st, 2010, LRO experienced its first severe Lunar Eclipse. Operationally, this required the Spacecraft to pre-heat its main avionics panel in order to minimize control heater power during the period when the Earth blocks the sun from the moon.     Increasing the Health Outcomes of Deaf and Hard of Hearing Oklahomans Through Tobacco Awareness and Cessation Support

    As a consequence of limited access to health information, Deaf and hard of hearing (Deaf/ hh)’ individuals may be at higher risk for health complications and tobacco-related diseases. To address this issue, Communication Service for the Deaf (CSD) of Oklahoma sought funding from the Oklahoma Tobacco Settlement Endowment Trust to implement the Deaf and Hard of Hearing Tobacco Use and Cessation Program. The five-year project began in 2006; it was the first major health education initiative in the state that focused on the Deaf community. Prevalence rates and demographic information were collected regarding tobacco use among Deaf/hh participants. In addition, tobacco education and cessation programs were provided, and the changes in participants\u27 knowledge and attitudes toward tobacco use were tracked over a three-year period. At the end of the project, in-depth interviews were conducted to gather additional information from tobacco users. This article provides prevalence and demographic information regarding Deaf/hh individuals\u27 tobacco use in Oklahoma and outcomes of educational programs
