Thermally-induced lactosylation of whey proteins: Identification and synthesis of lactosylated β-lactoglobulin epitope
The high temperatures used in the production of milk may induce modifications in proteins structure. Due to occurrence of the Maillard reaction, lactose binds lysine residues in proteins, affecting the nutritional value. Milk is also an important source of allergenic proteins (i.e., caseins, β-lactoglobulin and α-lactalbumin). Thus, this modification may also affect the allergenicity of these proteins. Focusing on milk whey proteins, a screening on different Ultra High Temperatures (UHT) and pasteurized milk samples was performed to identify lactosylation sites, in particular in protein known epitopes, and to verify the correlation between lactosylation and the harshness of the treatment. Whey proteins were extracted from milk samples after caseins precipitations at pH 4.6 and, after chymotryptic and tryptic in solution digestion, peptides were analysed by UPLC-MS and LTQ-Orbitrap. Results show the presence of lactosylated lysine residues in several known epitopes. Then, a β-lactoglobulin epitope was selected and synthesized by solid phase synthesis followed by in solution lactosylation, obtaining high reaction yields and purities. The synthesis of lactosylated allergenic epitopes, described here for the first time, is a useful tool for further studies on the technological impacts on food allergenicity
Genetic drift at expanding frontiers promotes gene segregation
Competition between random genetic drift and natural selection plays a
central role in evolution: Whereas non-beneficial mutations often prevail in
small populations by chance, mutations that sweep through large populations
typically confer a selective advantage. Here, however, we observe chance
effects during range expansions that dramatically alter the gene pool even in
large microbial populations. Initially well-mixed populations of two
fluorescently labeled strains of Escherichia coli develop well-defined,
sector-like regions with fractal boundaries in expanding colonies. The
formation of these regions is driven by random fluctuations that originate in a
thin band of pioneers at the expanding frontier. A comparison of bacterial and
yeast colonies (Saccharomyces cerevisiae) suggests that this large-scale
genetic sectoring is a generic phenomenon that may provide a detectable

Measurement of Dielectric Suppression of Bremsstrahlung
In 1953, Ter-Mikaelian predicted that the bremsstrahlung of low energy
photons in a medium is suppressed because of interactions between the produced
photon and the electrons in the medium. This suppression occurs because the
emission takes place over on a long distance scale, allowing for destructive
interference between different instantaneous photon emission amplitudes. We
present here measurements of bremsstrahlung cross sections of 200 keV to 20 MeV
photons produced by 8 and 25 GeV electrons in carbon and gold targets. Our data
shows that dielectric suppression occurs at the predicted level, reducing the

Anatomical variants of sphenoid sinuses pneumatisation: a CT scan study on a Northern Italian population
Sphenoid bone may be affected by different variants of pneumatisation, which have a relevant importance from a clinical and surgical point of view. The description of such variants in different populations may give useful information. However, few articles describe the variability of sphenoid pneumatised structures and none of them focuses on Northern Italian population. Variants of pneumatisation of sphenoid bone were described in a sample of 300 Northern Italian patients who underwent a CT scan. More than fifty-seven percent of patients showed a form of anatomical variant: the most common form was the pneumatised pterygoid processes (39.6%), followed by dorsum sellae (32.9%) and clinoid processes (20.3%), without statistically significant differences between males and females (p\ua0>\ua00.01). In 26.3% of patients, a combined pneumatisation of these three structures was observed, being the combination pterygoid processes-dorsum sellae the most frequent (11.3%). In 9.3%, all the three sphenoid structures were affected. This article is the first description of the prevalence of different variants of pneumatisation in a Northern Italian population: the occurrence of such forms has to be acknowledged for their possible clinical and surgical consequences
A retrospective analysis of 1.011 percutaneous liver biopsies performed in patients with liver transplantation or liver disease: ultrasonography can reduce complications?
Objective: In the last decades, liver biopsy was the reference procedure for the diagnosis and follow-up of liver disease. Aim of present retrospective analysis was to assess the prevalence of complications and risk factors after Percutaneous Liver Biopsy (PLB) performed for diagnosis and staging in patients with chronic liver disease and for monitoring the graft in liver transplanted patients
Patients and methods: Data were collected from a total of 1.011 PLB performed with the Menghini technique between January 2004 and December 2014 at the Hepatology and Transplant Units of the University of Rome Tor Vergata. The indications for biopsy were: follow-up of liver transplantation, chronic Hepatitis B Virus (HBV) or Hepatitis C Virus (HCV), with or without Human Immunodeficiency Virus (HIV) and alcohol-related liver disease. Our patients were divided into two groups according to the biopsy indication: follow-up of liver transplantation (Group A) and chronic liver disease (Group B). All the procedures were performed in Day Hospital regimen. After the biopsy, patients remained in bed for about 4-6 hours. In the absence of complications, they were then discharged on the same day.
Results: The most frequent complication after biopsy was pain (Group A n. 57, 8.8%; Group B n. 105, 29.0%), hypotension as a result of a vasovagal reaction resolved spontaneously (Group A n. 7, 1.1%; Group B n. 6, 1.7%), and intrahepatic bleeding resolved with conservative therapy (Group A n. 1, 0.2%; Group B n. 6, 1.7%). Two cases of pneumothorax in the Group A (0.3%) were treated with a chest tube. Other complications did not have a significant impact. Also, we did not observe statistically significant differences in patients who underwent PLB without and with ultrasound guidance.
Conclusions: Liver biopsy is not a replaceable tool in diagnosis and follow-up of several chronic liver diseases. The Menghini technique with the percutaneous trans costal approach, might be preferred because less traumatic and related with a low occurrence of minor and major complications. According to our case load and comparing our findings with the previous published data, we speculate that ultrasound guidance is not crucial in the prevention of major complications
Characterization of defatted products obtained from the Parmigiano–Reggiano manufacturing chain: Determination of peptides and amino acids content and study of the digestibility and bioactive properties
Parmigiano–Reggiano (PR) is a worldwide known Italian, long ripened, hard cheese. Its inclusion in the list of cheeses bearing the protected designation of origin (PDO, EU regulation 510/2006) poses restrictions to its geographic area of production and its technological characteristics. To innovate the Parmigiano–Reggiano (PR) cheese manufacturing chain from the health and nutritional point of view, the output of defatted PR is addressed. Two defatting procedures (Soxhlet, and supercritical CO2 extraction) were tested, and the obtained products were compared in the composition of their nitrogen fraction, responsible for their nutritional, organoleptic, and bioactive functions. Free amino acids were quantified, and other nitrogen compounds (peptides, proteins, and non-proteolytic aminoacyl derivatives) were identified in the extracts and the mixtures obtained after simulated gastrointestinal digestion. Moreover, antioxidant and angiotensin converting enzyme (ACE) inhibition capacities of the digests were tested. Results obtained from the molecular and biofunctional characterization of the nitrogen fraction, show that both the defatted products keep the same nutritional properties of the whole cheese
Statistical properties of genealogical trees
We analyse the statistical properties of genealogical trees in a neutral
model of a closed population with sexual reproduction and non-overlapping
generations. By reconstructing the genealogy of an individual from the
population evolution, we measure the distribution of ancestors appearing more
than once in a given tree. After a transient time, the probability of
repetition follows, up to a rescaling, a stationary distribution which we
calculate both numerically and analytically. This distribution exhibits a
universal shape with a non-trivial power law which can be understood by an
exact, though simple, renormalization calculation. Some real data on human
genealogy illustrate the problem, which is relevant to the study of the real

Influence of biological maturation on postural control in young soccer players
Biological maturation does not follow a linear development path; the process presents inter- individual differences concerning the timing of psychophysical development. The nonlinear nature of the biological maturation process often results in sudden and rapid modifications that can influence the sensorimotor functions, in particular when the peak height velocity (PHV) is approaching. Static standing balance and postural control are fundamental skills, both for daily living and sport performance, that can be strongly affected by PHV. We examined the influence of biological maturation on the performance of static standing balance, an index for sensorimotor control. Two-hundred and 38 young healthy soccer players (U9 to U17), playing in a sub-\ue9lite club (at least two training sessions and an official match per week), were evaluated. After anthropometric measurement, standing balance was assessed using a baropodometric platform (BTS P-Walk, Italy). Subjects stood barefooted on the platform and were recorded at 20 Hz during two 30-s tests, the first with eyes open and the second keeping eyes closed. Participants were split into six groups based on the Maturity Offset (MO), representing the estimated time to/from the PHV and calculated according to Mirwald et al1. The body center of pressure (CoP) sway area and velocity were calculated. Differences between MO groups were tested using a 2-factor (MO and condition) ANOVA with repeated measures on the condition factor (eyes open/closed). The sway area showed a decreasing trend as the MO increased, in particular in MO<-1.5 was higher than in MO>0.5 (p<0.001). Likewise, CoP velocity presented a similar pattern (p<0.001), with a marked decline in groups with MO>0.5. The results suggest that biological maturation is associated with changes in standing balance control. The reduction of CoP sway area and velocity as the MO increase represents the improved efficiency of the postural control system
