    Effects of production systems and canola meal supplementation on carcass and meat quality characteristics of spent laying hens

    This study evaluated the carcass and meat quality traits of spent laying hens as influenced by production systems (conventional cages and free range) and the inclusion/exclusion of canola meal in their diets. A total of 30 free range and 60 battery cage reared Lohmann Brown-Elite spent laying hens were obtained from a commercial egg producer. The 30 free range hens (53 weeks of age) and 30 of the caged hens (40 weeks of age) were fed a conventional diet, while the remaining 30 caged hens (48 weeks of age) were fed a diet supplemented with canola meal (20 percent). Carcass, portion and organ weights were determined. Physical attributes and proximate composition were analyzed for, with additional fatty acids and sensory profiles being determined for the effects of canola meal inclusion in the diet. Caged hens had heavier (P ≤ 0.05) warm and cold carcasses, thigh, wing and feet compared to free range hens. The percentages of the breast (26.1 ± 0.51 vs. 28.3 ± 0.28), drum, breast bones, breast thaw and cooking losses and thigh cooking loss were lower (P ≤ 0.05) for caged hens than for free range hens. Free range hens had heavier (P ≤ 0.05) gizzards (33.9 ± 1.04 vs. 30.5 ± 0.73) and bones and a lower (P ≤ 0.05) breast meat percentage (47.3 ± 0.94 vs. 51.7 ± 1.35). Meat redness (a*) (0.54 ± 0.222 vs. 1.40 ± 0.135) and hue angle value, skin redness (a*), breast and thigh, Warner-Bratzler shear force (WBSF) values (breast: 12.37 ± 0.411 vs. 17.10 ± 0.751, thigh: 29.68 ± 0.306 vs. 39.75 ± 0.826), breast moisture and thigh ash content were lower (P ≤ 0.05) for caged hens than free range hens. Caged hens had higher (P ≤ 0.05) thigh thaw loss and breast ash content than free range hens. Canola-fed hens had higher (P ≤ 0.05) drum percentages, breast bone weights and percentages, with lower (P ≤ 0.05) thigh and breast meat percentages. Canola-fed hens had lower (P ≤ 0.05) thaw losses, skin yellowness (b*) and Chroma values, breast fat content with higher cooking losses, skin redness (a*) and hue angle value, as well as breast WBSF (12.37 ± 0.411 vs. 15.43 ± 0.600). Palmitic acid, stearic acid, heneicosanoic acid acid, palmitoleic acid, saturated fatty acids (SFA) (34.0 ± 0.56 vs. 38.7 ± 0.71), n-6:n-3 polyunsaturated fatty acids (PUFA) ratio (5.5 ± 0.13 vs. 7.2 ± 0.28), atherogenic index (IA), thrombogenic index (IT), delta-5 desaturase (D5D, elongase index and thiosterase index were lower (P ≤ 0.05) for canola-fed hen breast meat. Breast meat from conventionally fed hens had lower (P ≤ 0.05) myristic acid, lignoceric acid, nervonic acid, alpha-linolenic acid (ALA), docosahexaenoic acid (DHA), PUFA:SFA ratio (0.7 ± 0.05 vs. 0.9 ± 0.02), n-3 PUFA (3.4 ± 0.31 vs. 5.1 ± 0.17), hypocholesterolemic:Hypercholesterolaemic (h/H), stearoyl-CoA desaturase 16 (SCD16) and stearoyl-CoA desaturase 18 (SCD18). The breast meat from conventionally fed hens had lower (P ≤ 0.05) metallic flavor than that from canola-fed hens. Strong positive correlations were observed for overall aroma with chicken (r = 0.965, P < 0.001) and brothy aroma (r = 0.827, P < 0.001); overall aroma with overall flavor (r = 0.680, P < 0.001), chicken flavor (r = 0.668, P < 0.001) and brothy flavor (r = 0.548, P = 0.006); initial juiciness with sustained juiciness (r = 0.771, P < 0.001) and tenderness (r = 0.537, P = 0.007); sustained juiciness with tenderness (r = 0.790, P < 0.001) and chewiness with residue (r = 0.783, P < 0.001). Whilst strong negative correlations were observed for: sustained juiciness with chewiness (r = -0.655, P = 0.001) and residue (r = 0.783, P < 0.001) and for tenderness with chewiness (r = 0.845, P < 0.001) and residue (r = -0.855, P < 0.001). Results of this study highlight that a free range production system when compared to a conventional cage system increased undesirable carcass and physical meat traits of spent laying hens. On the other hand, canola meal inclusion incorporates beneficial health aspects without affecting the sensory profile of meat derived from spent laying hens, both groups of hens being reared in battery cage system. Spent laying hen breasts can be consumed as a functional food (especially canolafed) since the fat content and composition was observed to be close to that which is recommended for a healthy diet

    Contact Line Instability and Pattern Selection in Thermally Driven Liquid Films

    Liquids spreading over a solid substrate under the action of various forces are known to exhibit a long wavelength contact line instability. We use an example of thermally driven spreading on a horizontal surface to study how the stability of the flow can be altered, or patterns selected, using feedback control. We show that thermal perturbations of certain spatial structure imposed behind the contact line and proportional to the deviation of the contact line from its mean position can completely suppress the instability. Due to the presence of mean flow and a spatially nonuniform nature of spreading liquid films the dynamics of disturbances is governed by a nonnormal evolution operator, opening up a possibility of transient amplification and nonlinear instabilities. We show that in the case of thermal driving the nonnormality can be significant, especially for small wavenumber disturbances, and trace the origin of transient amplification to a close alignment of a large group of eigenfunctions of the evolution operator. However, for values of noise likely to occur in experiments we find that the transient amplification is not sufficiently strong to either change the predictions of the linear stability analysis or invalidate the proposed control approach.Comment: 13 pages, 14 figure

    Chevon production and quality of Kalahari Red goats fed increasing levels of hempseed cake substituted for soybean meal

    A 42-d study was conducted to evaluate the effects of replacing soybean meal with increasing levels of hempseed cake (HSC) in goat finishing diets on growth performance, carcass and chevon quality attributes. Thirty-five, 3-month-old Kalahari Red wethers (25 ± 1.5 kg initial body weight) were randomly allocated to one of five dietary treatments with seven animals per treatment. Wethers were fed maize-lucerne based finishing diets with inclusions of 0 (control), 25, 50, 75 and 100 g/kg DM of HSC replacing soybean meal as the main protein source. Diet had no effect (P > 0.05) on daily feed intake, average daily gain, final body weight and income-over-feed costs. Carcass and meat quality attributes were not influenced (P > 0.05) by HSC, except intramuscular fat, which increased linearly (P ≤ 0.05) with HSC inclusion levels.     An Application of Computational Fluid Dynamics to Optimize Municipal Sewage Networks; A Case of Tororo Municipality, Eastern Uganda.

    This research article published by the Journal of Advances in Mathematics Vol 18, 2020Two-phase pipe flow is a common occurrence in many industrial applications such as sewage, water, oil, and gas transportation. Accurate prediction of liquid velocity, holdup and pressure drop is of vast importance to ensure effective design and operation of fluid transport systems. This paper aimed at the simulation of a twophase flow of air and sewage (water) using an open source software OpenFOAM. Numerical Simulations have been performed using varying dimensions of pipes as well as their inclinations. Specifically, a Standard k- turbulence model and the Volume of Fluid (VOF) free water surface model is used to solve the turbulent mixture flow of air and sewage (water). A two dimensional, 0.5m diameter pipe of 20m length is used for the CFD approach based on the Navier-Stokes equations. Results showed that the flow pattern behaviour is influenced by the pipe diameters as well as their inclination. It is concluded that the most effective way to optimize a sewer network system for Tororo Municipality conditions and other similar situations, is by adjusting sewer diameters and slope gradients and expanding the number of sewer network connections of household and industries from 535 (i.e., 31.2% of total) to at least 1,200 (70% of total)

    Confocal microscopy of colloidal particles: towards reliable, optimum coordinates

    Over the last decade, the light microscope has become increasingly useful as a quantitative tool for studying colloidal systems. The ability to obtain particle coordinates in bulk samples from micrographs is particularly appealing. In this paper we review and extend methods for optimal image formation of colloidal samples, which is vital for particle coordinates of the highest accuracy, and for extracting the most reliable coordinates from these images. We discuss in depth the accuracy of the coordinates, which is sensitive to the details of the colloidal system and the imaging system. Moreover, this accuracy can vary between particles, particularly in dense systems. We introduce a previously unreported error estimate and use it to develop an iterative method for finding particle coordinates. This individual-particle accuracy assessment also allows comparison between particle locations obtained from different experiments. Though aimed primarily at confocal microscopy studies of colloidal systems, the methods outlined here should transfer readily to many other feature extraction problems, especially where features may overlap one another.Comment: Accepted by Advances in Colloid and Interface Scienc

    Quantitative imaging of concentrated suspensions under flow

    We review recent advances in imaging the flow of concentrated suspensions, focussing on the use of confocal microscopy to obtain time-resolved information on the single-particle level in these systems. After motivating the need for quantitative (confocal) imaging in suspension rheology, we briefly describe the particles, sample environments, microscopy tools and analysis algorithms needed to perform this kind of experiments. The second part of the review focusses on microscopic aspects of the flow of concentrated model hard-sphere-like suspensions, and the relation to non-linear rheological phenomena such as yielding, shear localization, wall slip and shear-induced ordering. Both Brownian and non-Brownian systems will be described. We show how quantitative imaging can improve our understanding of the connection between microscopic dynamics and bulk flow.Comment: Review on imaging hard-sphere suspensions, incl summary of methodology.     Three-Dimensional Analysis of Spiny Dendrites Using Straightening and Unrolling Transforms

    Current understanding of the synaptic organization of the brain depends to a large extent on knowledge about the synaptic inputs to the neurons. Indeed, the dendritic surfaces of pyramidal cells (the most common neuron in the cerebral cortex) are covered by thin protrusions named dendritic spines. These represent the targets of most excitatory synapses in the cerebral cortex and therefore, dendritic spines prove critical in learning, memory and cognition. This paper presents a new method that facilitates the analysis of the 3D structure of spine insertions in dendrites, providing insight on spine distribution patterns. This method is based both on the implementation of straightening and unrolling transformations to move the analysis process to a planar, unfolded arrangement, and on the design of DISPINE, an interactive environment that supports the visual analysis of 3D patterns
