    Relationships Between Beef Palatability and Bone Density, Bone Hardness and Other Maturity Indicators

    A trend in recent years has been for meat scientists to concentrate much of their effort on obtaining a more complete understanding of those factors which affect or contribute to meat quality or palatability. Some of these topics have ranged from the effect of nutritional regime on palatability to the effects of hormone treatments, antemortem stress conditions, breeds or types, sex, marbling levels, maturity or age, cooking techniques, chemistry of muscle and fat, measurement of muscle fiber diameter and extensibility, connective tissues and, finally, color of muscle and fat. This emphasis on factors relating to beef palatability has also caused a proliferation of studies devoted to elucidating what beef palatability actually is and how it can be measured more objectively. As a result, we also find a number of reports on comparisons of different shearing and press techniques, histological examinations of muscle and connective tissue morphology and biochemical studies of the components which comprise what we know as meat. Only a limited amount of study has been given to the relationship which may exist between bone characteristics and palatability in our meat-producing animals. About the only reference to bone is made when development of ossification is discussed in the light of advancing “physiological maturity in beef carcasses. This particular characteristic takes on added importance when we realize that every Federal meat grader must assess this rather subjective measure of carcass maturity on every carcass he grades. Therefore, physiological maturity plays a role in the marketing of federally graded meat and consequently has economic significance. Results of studies on carcass maturity have been somewhat mixed, but it appears there is at least some relationship between measures of maturity and organoleptic tenderness

    How Reasoning Aims at Truth

    Many hold that theoretical reasoning aims at truth. In this paper, I ask what it is for reasoning to be thus aim-directed. Standard answers to this question explain reasoning’s aim-directedness in terms of intentions, dispositions, or rule-following. I argue that, while these views contain important insights, they are not satisfactory. As an alternative, I introduce and defend a novel account: reasoning aims at truth in virtue of being the exercise of a distinctive kind of cognitive power, one that, unlike ordinary dispositions, is capable of fully explaining its own exercises. I argue that this account is able to avoid the difficulties plaguing standard accounts of the relevant sort of mental teleology

    Charged and superconducting vortices in dense quark matter

    Quark matter at astrophysical densities may contain stable vortices due to the spontaneous breaking of hypercharge symmetry by kaon condensation. We argue that these vortices could be both charged and electrically superconducting. Current carrying loops (vortons) could be long lived and play a role in the magnetic and transport properties of this matter.     Quantitative and Rapid DNA Detection by Laser Transmission Spectroscopy

    Laser transmission spectroscopy (LTS) is a quantitative and rapid in vitro technique for measuring the size, shape, and number of nanoparticles in suspension. Here we report on the application of LTS as a novel detection method for species-specific DNA where the presence of one invasive species was differentiated from a closely related invasive sister species. The method employs carboxylated polystyrene nanoparticles functionalized with short DNA fragments that are complimentary to a specific target DNA sequence. In solution, the DNA strands containing targets bind to the tags resulting in a sizable increase in the nanoparticle diameter, which is rapidly and quantitatively measured using LTS. DNA strands that do not contain the target sequence do not bind and produce no size change of the carboxylated beads. The results show that LTS has the potential to become a quantitative and rapid DNA detection method suitable for many real-world applications

    Holographic phase transitions at finite baryon density

    We use holographic techniques to study SU(Nc) super Yang-Mills theory coupled to Nf << Nc flavours of fundamental matter at finite temperature and baryon density. We focus on four dimensions, for which the dual description consists of Nf D7-branes in the background of Nc black D3-branes, but our results apply in other dimensions as well. A non-zero chemical potential mu or baryon number density n is introduced via a nonvanishing worldvolume gauge field on the D7-branes. Ref. [1] identified a first order phase transition at zero density associated with `melting' of the mesons. This extends to a line of phase transitions for small n, which terminates at a critical point at finite n. Investigation of the D7-branes' thermodynamics reveals that (d mu / dn)_T <0 in a small region of the phase diagram, indicating an instability. We comment on a possible new phase which may appear in this region.Comment: 33 pages, 22 figure

    Soil fertility limits carbon sequestration by forest ecosystems in a CO2-enriched atmosphere

    Northern mid-latitude forests are a large terrestrial carbon sink(1-4). Ignoring nutrient limitations, large increases in carbon sequestration from carbon dioxide (CO2) fertilization are expected in these forests(5). Yet, forests are usually relegated to sites of moderate to poor fertility, where tree growth is often limited by nutrient supply, in particular nitrogen(6,7). Here we present evidence that estimates of increases in carbon sequestration of forests, which is expected to partially compensate for increasing CO2 in the atmosphere, are unduly optimistic(8). In two forest experiments on maturing pines exposed to elevated atmospheric CO2, the CO2-induced biomass carbon increment without added nutrients was undetectable at a nutritionally poor site, and the stimulation at a nutritionally moderate site was transient, stabilizing at a marginal gain after three years. However, a large synergistic gain from higher CO2 and nutrients was detected with nutrients added. This gain was even larger at the poor site (threefold higher than the expected additive effect) than at the moderate site (twofold higher). Thus, fertility can restrain the response of wood carbon sequestration to increased atmospheric CO2.     Photoemission "experiments" on holographic superconductors

    We study the effects of a superconducting condensate on holographic Fermi surfaces. With a suitable coupling between the fermion and the condensate, there are stable quasiparticles with a gap.     Diabetes status and post-load plasma glucose concentration in relation to site-specific cancer mortality: findings from the original Whitehall study

    ObjectiveWhile several studies have reported on the relation of diabetes status with pancreatic cancer risk, the predictive value of this disorder for other malignancies is unclear. Methods: The Whitehall study, a 25year follow-up for mortality experience of 18,006 men with data on post-challenge blood glucose and self-reported diabetes, allowed us to address these issues. Results: There were 2158 cancer deaths at follow-up. Of the 15 cancer outcomes, diabetes status was positively associated with mortality from carcinoma of the pancreas and liver, while the relationship with lung cancer was inverse, after controlling for a range of potential covariates and mediators which included obesity and socioeconomic position. After excluding deaths occurring in the first 10years of follow-up to examine the effect of reverse causality, the magnitude of the relationships for carcinoma of the pancreas and lung was little altered, while for liver cancer it was markedly attenuated. Conclusions: In the present study, diabetes status was related to pancreatic, liver, and lung cancer risk. Cohorts with serially collected data on blood glucose and covariates are required to further examine this area
