    Mitigation of Acrylamide Content in Biscuits through Combined Physical and Chemical Strategies

    Acrylamide in biscuits represents a major concern. This research work was aimed at modifying the current formulation of biscuits to reduce the acrylamide content while maintaining the chemical, physical, and sensory characteristics of the original product. A strategy based on the FoodDrinkEurope Acrylamide Toolbox was adopted. The content of the leavening agent ammonium bicarbonate, the baking temperature program, and the time duration of steam released during the baking process were the three factors evaluated through a factorial design of experiment. The partial replacement of ammonium bicarbonate (from 9.0 g to 1.5 g per 500 g of flour) with sodium bicarbonate (from 4.5 g to 12.48 g), lowering of the temperature in the central phase of the baking process (from 170 degrees C to 150 degrees C), and the release of steam for 3 min resulted in an 87.2% reduction in acrylamide concentration compared to biscuits of reference. CIELab color indices and a(w) were the parameters that showed the most significant correlation with acrylamide concentration in biscuits and could, therefore, become markers to predict the acrylamide content along production lines for an instant evaluation

    Extracting Dense and Connected Subgraphs in Dual Networks by Network Alignment

    The use of network based approaches to model and analyse large datasets is currently a growing research field. For instance in biology and medicine, networks are used to model interactions among biological molecules as well as relations among patients. Similarly, data coming from social networks can be trivially modelled by using graphs. More recently, the use of dual networks gained the attention of researchers. A dual network model uses a pair of graphs to model a scenario in which one of the two graphs is usually unweighted (a network representing physical associations among nodes) while the other one is edge-weighted (a network representing conceptual associations among nodes). In this paper we focus on the problem of finding the Densest Connected sub-graph (DCS) having the largest density in the conceptual network which is also connected in the physical network. The problem is relevant but also computationally hard, therefore the need for introducing of novel algorithms arises. We formalise the problem and then we map DCS into a graph alignment problem. Then we propose a possible solution. A set of experiments is also presented to support our approach

    Correlates of calcaneal quantitative ultrasound parameters in patients with diabetes: the study on the assessment of determinants of muscle and bone strength abnormalities in diabetes

    OBJECTIVE: Quantitative ultrasound (QUS) provides an estimate of bone mineral density (BMD) and also evaluates bone quality, which has been related to increased fracture risk in people with diabetes. This study aimed at assessing the correlates of calcaneal QUS parameters in diabetic subjects encompassing various degrees of micro and macrovascular complications and a wide-range of peripheral nerve function. METHODS: Four hundred consecutive diabetic patients were examined by QUS to obtain values of broadband ultrasound attenuation (BUA), the speed of sound (SOS), quantitative ultrasound index (QUI), and BMD. RESULTS: Among surrogate measures of complications, sensory and motor nerve amplitude and heart rate response to cough test and standing correlated with QUS parameters at univariate analysis, together with age, body mass index (BMI), waist circumference, lipid profile, and renal function. Multivariate analysis revealed that BUA, SOS, QUI, and BMD were independently associated with age, male gender, hemoglobin A1c, BMI (or fat, but not fat-free mass), and somatic and autonomic nerve function parameters. CONCLUSIONS: These data indicate that peripheral nerve dysfunction is associated with worse QUS parameters, possibly contributing to increased fracture risk in diabetes. The positive relation of QUS measures with adiposity needs further investigation. This trial is registered with ClinicalTrials.gov (NCT01600924)

    Retrieval and intercomparison of volcanic SO2 injection height and eruption time from satellite maps and ground-based observations

    Syneruptive gas flux time series can, in principle, be retrieved from satellite maps of SO2 collected during and immediately after volcanic eruptions, and used to gain insights into the volcanic processes which drive the volcanic activity. Determination of the age and height of volcanic plumes are key prerequisites for such calculations. However, these parameters are challenging to constrain using satellite-based techniques. Here, we use imagery from OMI and GOME-2 satellite sensors and a novel numerical procedure based on back-trajectory analysis to calculate plume height as a function of position at the satellite measurement time together with plume injection height and time at a volcanic vent location. We applied this new procedure to three Etna eruptions (12 August 2011, 18 March 2012 and 12 April 2013) and compared our results with independent satellite and ground-based estimations. We also compare our injection height time-series with measurements of volcanic tremor, which reflects the eruption intensity, showing a good match between these two datasets.     Surface morphology and optical properties of thin films of thiophene-based binary blends

    We report on the relationship between optical and morphological properties of thin films of a blend of thiophene-based monomer and a diamine derivative. This system is of interest as it gives rise to white emission, due to the formation of exciplex energy levels in the solid state. The photoluminescence emission has been collected for different relative concentrations of the two blend components, and the film topography has been mapped correspondingly by means of atomic force microscopy. Along with a complex evolution of the film surface morphology, a significant variation of the emission properties has been observed upon change of the blend composition. In particular, the intensity of the broad low-energy exciplex band turns out to be affected by a balance of two factors, namely, the extension of homogeneous blend film areas, and their effective concentration

    Smart drugs and neuroenhancement: what do we know?

    Introduction: Smart drugs are among the most common drugs used by students. It is estimated that they are second in incidence after cannabis. Although they are usually used for diseases such as attention deficit hyperactivity disorder (ADHD) and dementia, in most cases the use of smart drugs is illegal and without a prescription. Methodological issues: A systematic review was conducted according to PRISMA guidelines. SCOPUS, Medline (using PubMed as a search engine), Embase, Web of Sciences, and Google Scholar were used as search engines from January 1, 1980 to June 1, 2021 to evaluate the association between smart drugs and neuro-enhancement. A total of 4715 articles were collected. Of these, 295 duplicates were removed. A total of 4380 articles did not meet the inclusion criteria. In conclusion, 48 articles were included in the present systematic review. Results: Most of the studies were survey studies, 1 was a prospective longitudinal study, 1 was a cross-over study, and 1 was an experimental study in an animal model (rats). The largest group of consumers was school or university students. The most frequent reasons for using smart drugs were: better concentration, neuro enhancement, stress reduction, time optimization, increased wake time, increased free time, and curiosity. There are conflicting opinions, in fact, regarding their actual functioning and benefit, it is not known whether the benefits reported by consumers are due to the drugs, the placebo effect or a combination of these. The real prevalence is underestimated: it is important that the scientific community focus on this issue with further studies on animal models to validate their efficacy

    Near-field spectroscopy of phase segregation in white-light-emitting blends based on low-mass molecules

    We report on the direct observation of phase segregation occurring in thin-film blends of a thiophene monomer and an ammino compound, used in the fabrication of organic white-light-emitting diodes. In the homogeneous and uniform regions of the films, the interaction between the two molecular components gives rise to exciplex states responsible for a broad redshifted photoluminescence emission band, which disappears in the film zones where segregation occurs. This effect has been observed with submicrometer spatial resolution by means of local spectroscopic measurements performed in a scanning near-field optical microscope
