    Diversidade genética de bovinos Brahman no Brasil por meio da análise de pedigree

    The objective of this work was to evaluate the genetic diversity of Brahman cattle in Brazil with pedigree analysis. Genealogical records of a subpopulation were used considering all pedigree information (Pt) and the pedigree information divided into two periods (P1, from 1994 to 2004; and P2, from 2005 to 2012) or according to the raising system (Ppt, animals on pasture; or Pst, on stable). Estimates were obtained for average inbreeding coefficients, generation intervals (GI), number of equivalent known generation (CGE), number of founders (Nf), effective number of founders (fe), effective number of ancestors (fa), and founder genome equivalents (fg). The average inbreeding coefficients were 11.97, 7.79, 11.95, 11.74, and 11.31% for Pt, P1, P2, Ppt, and Pst, respectively. Average GI was 4.4 years, whereas CGE was 3.18. The fe values were similar to those of fa, which were greater than those of fg. The fe/fa and fg/fe ratios were close to 1, which indicates no genetic bottleneck and small losses by genetic drift. The genetic diversity in the Brazilian population of Brahman breed is not significantly reduced.O objetivo deste trabalho foi avaliar a diversidade genética de bovinos da raça Brahman no Brasil com análise de pedigree. Registros genealógicos de uma subpopulação foram usados, tendo-se considerado toda a informação de pedigree (Pt) e a informação de pedigree dividida em dois períodos (P1, de 1994 a 2004; e P2, de 2005 a 2012) ou de acordo com sistema de criação (Ppt, animais a pasto; ou Pst, estabulados). Foram obtidas as estimativas de coeficientes médios de endogamia, intervalos de geração (IG), número equivalente de gerações conhecidas (EGC), número de fundadores (Nf), número efetivo de fundadores (fe), número efetivo de ancestrais (fa) e número efetivo de genomas remanescentes (fg). Os coeficientes médios de endogamia foram de 11,97, 7,79, 11,95, 11,74 e 11,31% para Pt, P1, P2, Ppt e Pst, respectivamente. O IG médio foi de 4,4 anos, enquanto o EGC médio foi de 3,18. O fe foi próximo de fa, cujos valores foram maiores que os de fg. As razões fe/fa e fg/fe foram próximas de 1, o que indica ausência de gargalo genético e pequenas perdas por deriva genética.     Evaluation of three sampling methods for the microbiological analysis of broiler carcasses after immersion chilling

    Countries have different official programs and implement different sampling methods for the detection of Salmonella on poultry carcasses. In Brazil, a 25-g sample of skin and muscle excision (SME) from the wings, neck, and pericloacal parts is used; in the European Union (EU), a 25-g sample of neck skin (NSE) is used; and, in the United States, the whole carcass is rinsed with 400 ml of diluent (WCR). In the present study, these methods were evaluated to compare Salmonella occurrence and counts of hygiene indicator microorganisms (Escherichia coli, Enterobacteriaceae, and total viable count of aerobic mesophilic bacteria) using different carcasses from the same flock and also using different analytical units taken from the same carcass. Eighty flocks, with four broiler carcasses from each, were included in this study; three broilers were sampled according to protocols from Brazil, the EU, and the United States, and the last one by all three methods. SME, NSE, and WCR provided equivalent results (P > 0.05) for Salmonella detection on broiler carcasses when using different carcasses from the same flock and when using the same carcass. The predominant serovar was Salmonella Enteritidis. For the enumeration of hygiene indicator microorganisms, WRC provided higher counts than SME or NSE (P < 0.05), when using both the same or different carcasses. Therefore, it is possible to directly compare Salmonella results in poultry carcasses when using the methods recommended by the legislative bodies of Brazil, the United States, and the EU. However, WCR provides the best results for hygiene indicator microorganisms. Copyright © International Association for Food Protection

    Poultry processing facilities are known for using a great amount of water, which is mainly used on carcasses chilling stage. In Brazil, meat regulations state that each chiller tank must be emptied, cleaned and sanitized every 8 working hours. The aim of the current study was to assess the microbial load of chiller water used in poultry immersion chilling system after 8, 16 and 24 working hours in order to evaluate the reduction of water changes and chiller sanitization. Conventional physicochemical and microbiological assays were done in water supply samples (n=69) to suppress interferences caused by freshwater addition; pre chilled (n=345) post chilled carcasses (n=345) and chiller water samples of the last stage (n=69). The results showed no significant differences on microbial load samples between the three shifts suggesting that the proposed reduction may be secure and reduces the volume of wastewater that would impact the environment, besides improving the rational use of processing time.<br>As atividades dos estabelecimentos de abate de frangos são conhecidas por utilizarem grandes volumes de água durante seus processos, principalmente no processo de resfriamento das carcaças de frangos. Os resultados obtidos demonstraram que não houve diferença significativa na carga microbiana das amostras entre as três jornadas de trabalho do estabelecimento, sugerindo que a redução é segura, diminuindo assim o volume de águas residuais e seu impacto no meio ambiente, bem como melhorando o uso racional do tempo de processamento

    Estimation of genetic parameters for weight traits and Kleiber Index in a Brahman cattle population

    Interest in improving feed efficiency of cattle has been increasing. The residual feed intake (RFI), the most commonly used measurement of feed efficiency, is expensive and can only be used in a small number of animals. The Kleiber Index has also been proposed to measure RFI. In this study, we estimated genetic parameters for the Kleiber Index average daily weight gain and adjusted weights to obtain a more comprehensive understanding of potential responses to selection and support the development of breeding strategies. Genetic analyses were conducted on animal records from a data file with 36,505 animals recorded by ABCZ (Brazilian Association of Zebu Breeders). Restricted maximum likelihood estimates of genetic parameters were computed with Wombat software. Heritabilities ranged from 0.24 to 0.22 for adjusted weights, from 0.12 to 0.26 for Kleiber Indexes and from 0.15 to 0.22 for average daily gains. Correlations between traits ranged from -0.06 to 0.99. Results indicated that Kleiber Indexes at different ages do not constitute a viable solution for the selection of bulls and cows for Brazilian Brahman populations in terms of feeding efficiency

    As atividades dos estabelecimentos de abate de frangos são conhecidas por utilizarem grandes volumes de água durante seus processos, principalmente no processo de resfriamento das carcaças de frangos. Parte desse volume utilizado se faz necessário, em cumprimento à legislação que determina que cada tanque do sistema de pré-resfriadores contínuos por imersão deve ser completamente esvaziado, limpo e desinfetado no final de cada período de trabalho (oito horas).
