Wpływ składu surowcowego mieszanek roślinno-mięsnych i temperatury ekstruzji na właściwości fizyczne ekstrudatów
The study was concerned with the effect of the percentage share of meat material,
plant material and extrusion temperature on the process run and physical properties of extrudates.
Meat-bone pulp (MBP) from mechanical de-boning of poultry carcasses, faba bean wholemeal, and
barley grain meal were used in this study. The extrusion process was conducted using a twin-screw
extruder with counter-rotating conical screws. It was demonstrated that the extruder used in this
study permits the processing of blends with up to 25% meat-bone material content. The extrudates
obtained were characterised by a loose, gritty-like granular form. Pellet durability index (PDI) of
extrudates ranged from 60.30 to 96.24%. Increase in the content of MBP caused a decrease of PDI.
Increase of the percentage share of MBP from 5 to 10% caused an increase of the water absorption
index (WAI). However, no clear pattern was observed for WAI value as a result of increases in
MBP above the 10% level. Likewise, no significant effect of MBP on the water solubility index
(WSI) was noted. Extrusion temperature increase from 130 to 250°C caused an increase in PDI.
Analysis of microstructure revealed a significant effect of process temperature on the structure of
extrudates. At higher temperatures the formation of fibrous structures was observed, that might be
responsible for increasing the PDI. Only slight, but statistically significant changes in the values of
WSI and WAI, caused by process temperature change, were noted.
Wykazano
możliwość przetwarzania mieszanek z udziałem miazgi mięsno kostnej dochodzącym do
Wzrost
udziału MBP w mieszankach, z 5 do 10%, spowodował zwiększenie wodochłonności ekstrudatu
(WAI). Nie odnotowano jednoznacznego wpływu MBP, przy jej udziale w mieszance powyżej
10%, na wartość WAI ekstrudatów. Nie wykazano, także istotnych zależności pomiędzy zawartością
MBP a współczynnikiem rozpuszczalności suchej masy (WSI) ekstrudatów. Wzrost temperatury
ekstruzji ze 130 do 250°C spowodował wzrost PDI. Analiza mikrostruktury wykazała istotny
wpływ temperatury procesu na strukturę ekstrudatów, obserwowano m. in powstawanie struktur
włóknistych w wyższych temp. procesu, mogących odpowiadać za zwiększenie wartości PDI ekstrudatów.
Odnotowano nieznaczne, statystycznie istotne (Duncan, p ≤ 0,05), zmiany wartości WSI
i WAI wywołane zmianą temp. procesu
Neurological occupational diseases in Poland
Znaczenie neurologicznych chorób zawodowych (zwłaszcza przewlekłych chorób obwodowego układu nerwowego wywołanych sposobem wykonywania pracy) w ostatnich latach rośnie. Sumaryczna liczba rozpoznanych chorób zawodowych w latach 2003-2008 uległa zmniejszeniu o 18,8%. Największy spadek liczby stwierdzonych chorób zawodowych (o 28,3%) obserwowano w latach 2003-2006. Natomiast liczba stwierdzonych zawodowych, przewlekłych chorób obwodowego układu nerwowego wywołanych sposobem wykonywania pracy w omawianym okresie uległa zwiększeniu o 79,8%. Dlatego też spróbowano przedstawić w obecnym artykule choroby zawodowe mające podłoże neurologiczne. In recent years the significance of neurological occupational diseases (especially work-related chronic diseases of the peripheral nervous system) nas been growing. The total number of diagnosed occupational diseases in 2003 - 2008 decreased by 18.8%. The biggest decrease in the number of diagnosed occupational diseases took place in 2003-2006. However, the number of diagnosed chronic occupational diseases of the peripheral nervous system in the same period increased by 79.8%. That is why this article discusses the problem of occupational diseases of the peripheral nervous system
Badania procesu ekstruzji dwuślimakowej mieszanek roślinno-mięsnych przeznaczonych dla zwierząt domowych
A study was conducted on the possibility of application of “dry” extrusion-cooking technology for the processing of plant-meat mixtures. The effect of the concentration of the meat material (meat-bone pulp), leguminous material (faba bean), wheat grain meal and extrusion temperature on the process run, physicochemical properties and on the microstructure of the extrudates was investigated. It was demonstrated that extrusion-cooking with a twin-screw extruder permits the processing of blends with up to 30% meat-bone pulp content. Increase in the content of the meat material caused a decrease of specific density and water solubility index (WSI) of the extrudates. At the same time, a significant increase in the content of proteins, fat, and ash was observed. Extrusion temperature increase from 130 to 250°C caused an increase in the degree of expansion ratio and impact strength of the extrudates and a decrease in specific density of the products. At the same time, the microstructure of the products was changed from cohesive and compacted to more expanded and porous.Badania procesu ekstruzji dwuślimakowej mieszanek roślinno-mięsnych przeznaczonych dla zwierząt domowych
ekstruzja, bobik, miazga mięsno-kostna, karma, pszenica
Przeprowadzono badania nad możliwością wykorzystania technologii ekstruzji „suchej” do przetwarzania mieszanek roślinno-mięsnych. Określono wpływ udziału komponentów mięsnych (miazga mięsno-kostna), roślin strączkowych (nasiona bobiku), rozdrobnionego ziarna pszenicy oraz temperatury wytłaczania na przebieg procesu, właściwości fizyko-chemiczne oraz mikrostrukturę ekstrudatów. Wykazano, że zastosowanie ekstrudera dwuślimakowego umożliwia przetwarzanie mieszanek z udziałem miazgi mięsno-kostnej dochodzącej do 30%. Zwiększenie udziału komponentu mięsnego powoduje obniżenie gęstości właściwej i rozpuszczalności suchej masy (WSI) ekstrudatów. Jednocześnie mikrostruktura ekstrudatów z formy zwięzłej i zbitej przeszła w formę bardziej wyekspandowaną i porowatą
Dissociation or cyclization : options for a triad of radicals released from oxime carbamates
A set of oxime carbamates, having N-alkyl- and N,N-dialkyl-substituents, was prepared via carbonyldiimidazole intermediates. It was shown by EPR spectroscopy that they underwent clean homolysis of their NO bonds on UV photolysis. During photolysis of acetophenone O-allylcarbamoyl oxime the corresponding oxazolidin-2-onylmethyl radical was detected by EPR spectroscopy, providing the first evidence that N-mono-substituted carbamoyloxyl radicals can hold their structural integrity. N,N-Di-substituted carbamoyloxyl radicals dissociated rapidly at the lowest accessible temperatures. Above room temperature both types of oxime carbamate acted as selective new precursors for aminyl and iminyl radicals. Rate parameters were measured for 5-exo-cyclization of N-benzyl-N-pent-4-enylaminyl radicals; the rate constant was smaller than for C-centered and O-centered analogs. Oxime carbamates derived from the volatile diethylamine afforded aryl-iminyl radicals that proved convenient for phenanthridine preparations.Publisher PDFPeer reviewe
