    Objective organoleptic, structural-and-mechanical parameters of vegetables depending on their degree of ripeness

    ArticleOrganoleptic, structural-and-mechanical indicators determine the suitability of fruiting vegetables for harvesting and preservation, as well as the ratio of separate parts of the fruit. All these indicators affect the quality of products. Experimental work was carried out in the conditions of the laboratory of the Department of Technology of Storing and Processing of Grain. A complex of organoleptic, commercial, physical and thermophysical indicators of eggplant, sweet pepper and tomato fruits were developed in the work to determine the time of their harvesting. It was determined that physical density and mechanical strength in the fruits of sweet pepper of technical degree of ripeness were 6% higher than in the fruits of biological degree of ripeness. Peculiarities of the ripeness degree significantly affected the amount of inedible part of the fruit (seeds, seed cavity and peduncle), which was 1.2 times less in sweet pepper fruits of technical degree of ripeness than biological degree of ripeness. Considerable varietal difference of eggplant fruits by the amount of edible and inedible parts of the fruit was determined. Peculiarities of the variety also significantly affected the density and hardness of the fruit. Red tomatoes fruits of Iskorka variety had tender pulp consistency and relatively low fruit density (0.88 g cm- ³) and mechanical strength (3.00 kg cm- ²).     Motif “homecoming” in the Story of Tatyana Gladkikh “Bird of God”

    The story “The Bird of God” (2018), the work of the Far Eastern writer Tatyana Innokentyevna Gladkikh (born 1952), is reviewed in the article. The scientific novelty of the study is that the prose of Gladkikh was not a subject of comprehension in literary criticism. The relevance of this work is due to the importance of studying regional (Far Eastern) literature, which is a necessary condition for the formation of an integral picture of the domestic historical and literary process. The article presents the results of the immanent analysis of the story; attention is paid to issues of the plot, value content, figuratively motivational nature; the typology of the hero is traced and the typological parallel between the image of the hero of the story and the hero of medieval life - Alexy, the man of God, is justified. It is revealed that the hero of the story embodies the “hagiographic” type of world attitude, which manifests itself in a sense of universality with all living things, love, compassion. Particular attention is paid to the “homecoming” motive, which is seen as central in the plot-storyline and value-semantic organization of the work, and also acts as the organizing principle in the motive complex of the story, combining the images of “wandering”, “house”, “memory”, “soul”.     Issues of Geopoetics in Modern Literary Criticism

    The results of the study and systematization of literary research on the problems of geopoetics as a direction in Russian literary criticism are presented in this review article. The relevance of the study is seen in the need to comprehend and systematize the accumulated literary experience in the field of the geopoetic paradigm of literary research. The scope of work identified in the research process is an indicator of a growing scientific interest in the aforementioned problems. In the study of the material, it was shown that the theoretical component of the work is the study of the nature of the geopoetic image, which is understood as the artistic image of the geographical space as a natural, historical-cultural and value-semantic unity. The works representing geopoetic regional models (“texts”) of Russian literature: northern, Crimean, Altai, Ural, Far Eastern, sacred are identified and substantively characterized in the article. The analyzed material allowed us to present a generalized artistic structure of the geopoetic model of the region, including mythopoetic images, natural history and historical-cultural realities, historical aspects of the formation of geopoetic representations, folklore and literary texts. The study represents geopoetic research as a systematic scientific direction uniting scientists from different regions of Russia and having formed within its borders a methodology and scientific tools for identifying and analyzing the geopoetic content of Russian literature. The systematization of the material presented in this article will help create a clear picture of the theoretical and historical-scientific development of the problem

    Analysis Of Bakery Properties Of Grain Of New Varieties And Lines Of Wheat Spelts

    There were studied technological properties of grain of different varieties and lines of wheat spelt. There were analyzed differences between the quality of bread of flour of the highest sort and wholemeal, demonstrated the topicality of the differentiated approach to technological properties of flour for its production, elucidated the possibility of using wholemeal of wheat spelt for producing bread of the increased biological value.It was experimentally confirmed that a value of gloss of the bread surface and its general assessment is influenced by the protein content in grain. The gluten content influences bread quality parameters a bit less. At the same time, the index of gluten deformation also influences the crust surface, size of pores, general assessment of the bread quality. Its quality is high in all studied samples. The highest general culinary mark is put to bread, obtained from flour of the variety Zorya of Ukraine, LPP 3132, lines NAK34/12-2 and TV 1100.Based on studied of organoleptic, physical-chemical parameters of bread, there was confirmed the possibility of the promising use of wheat spelt grain in the bakery technology for raising the quality of products and widening the assortment

    Observations are presented on the features of the documentary and artistic organization of the book by V. M. Golovnin “Journey of Russian Imperial Sloop “Diana” from Kronstadt to Kamchatka...” (1819). Such issues as the thematic content of “Journey...”, the role of the author’s worldview in creating a single artistic whole, and the features of the aesthetic organization of documentary material are considered. The significance of the study is seen in the need to update the memory of the personality and literary work of V. M. Golovnin, an outstanding figure of Russian culture at the beginning of the 19th century. The presented material will allow supplementing with new facts the picture of the genre and style genesis of documentary and artistic genres in the Russian historical and literary process of the early 19th century. The relevance of the study is determined by the attention of modern literary criticism to the poetics of documentary and artistic genres. The novelty of the research is seen in the appeal to a little-known work of Russian literature of the first third of the 19th century. It is reported that the author showed the maritime way of life with its regulations, traditions, experience of intercultural communication. The work is considered in the main thematic lines: everyday life of a round-the-world sea expedition, seascape, battle studies, ethnographic sketches. It is noted that a value-semantic principle is revealed behind the empirical material, which gives the narrative artistic completeness and deeply brings Golovnin's “Journey ...” with the tradition of Russian classical literature

    Geopoetics of Belozerye in Book ‘Journey to Kirillo-Belozersky Monastery’ by S. P. Shevyrev

    The article analyzes S. P. Shevyrev’s book ‘Journey to Kirillo-Belozersky Monastery’ and focuses on the geopoetics of the Belozerye region. The novelty of the study lies in its use of geopoetic paradigm as a tool for analysis and its examination of a relatively understudied work. The relevance of the study is due to the growing interest in literary geography. The article presents an exploration of the spatial and sacred imagery of Belozerye as a local text of Russian North. It argues that Shevyrev’s geopoetic image of Belozerye is characterized by two distinctive features: ‘frontier’ and ‘sacredness’. The former highlights the region as a cultural and territorial ‘frontier’ of Russia, while the latter portrays it as a spiritual center, the ‘heart’ of Russian spiritual and religious culture. The authors of the study emphasize that this antinomic pair constitutes a characteristic feature of Belozerye as a local text of Russian culture. The article also examines the poetics of geographical (landscape) and sacred (monastery, church) objects in Shevyrev’s book, emphasizing how the discovery of the value-laden content of geocultural imagery contributes to the formation of artistic generalization

    The study of technological parameters of Midas wheat flour and possibility to use little-spread plants at wheat bread manufacturing was realized. Parameters and regimes for keeping and baking bread of new recipes were elaborated and selected. The elaborated method of bread manufacturing by new recipes relates to the field of agriculture and food industry and may be used at a laboratory baking of bread.There was experimentally grounded and introduced the change of a part of recipe quantity of wheat flour for dried and comminuted plants of Népeta mussinii L., Polymnia osotolysta L., Amaranthus tricolor L., Cosmos sulphureus L., Tanacetum parthenium L., Cyperus esculentus L., Physalis tomentous L. at baking bread. According to determined physical-chemical, organoleptic parameters of bread, a possibility of baking bread using plants was proved. The expedience of introducing vegetable additives of Népeta mussinii L., Polymnia osotolysta L., Amaranthus tricolor L., Tanacetum parthenium into wheat dough in the dose no more than 5 % to the flour mass; up to 10 % – Cosmos sulphureus L and up to 15 % – Cyperus esculentus L., Physalis tomentous L was proved. At these very dosages bread had an evenly colored crust, without breaks and cracks, elastic crumb, thin-walled porosity, expressed bread taste and pleasant smell of additives as opposite to other experimental samples

    PERSONALITY TYPE D AND THE LEVEL OF SUBCLINICAL INFLAMMATION MARKERS IN CHD PATIENTS

    Aim. To study the level of biomarkers of subclinical inflammation in CHD patients with existence of absence of personality type D.Material and methods. In 62 patients with stable CHD before planned CBG operation we assessed concentrations: of matrix metalloproteases -2, -3, -9, tissue inhibitor of matrix proteases -1, -2, C-reactive protein, soluble CD40 ligand, tumor necrosis factor alpha. For further study we selected two groups: 1 group (n=27) — patients with type D and 2 group (n=35) — with non-D type. Personality type was defined with DS-14 questionnaire. Patients were asked 14 questions with 5 variants of responses to each. Counting of points was done by two scales: negative irritability and social suppression. Type D was set if 10 points and more by each of the scales. All patients underwent: general and biochemical blood tests, echocardiography, color duplex scanning of brachiocephalic arteries and coronary angiography.Results. In intergroup comparison both groups were comparable by the most anamnestic and clinical parameters. There were no any differences in the instrumental assessments data. In type D patients there was higher level of MMP-9 (resp. 53,2 pg/mL and 66,5 pg/mL; р=0,051) and sCD40L (resp. 2,8 ng/mL and 5,7 ng/mL; р=0,013) comparing with those non-D-type. The level of other biomarkers in groups did not differ, concentration of MMP-2 and TNF-α were slightly higher among type-D, of the others — among non-D-typers. There were also statistically significant negative correlations of type-D and MMP-9 and sCD40L.Conclusion. In CHD patients, examined before coronary bypass operation, presence of type D personality was not followed by the increase of subclinical inflammation markers level comparing to patients without such type. In type-D patients there was increase of platelet activation markers activation, that associates with adverse outcomes in CHD
