Effects of Appearance in Visual Palatability of Dishes for the Elderly under Several Lighting Conditions
This study aims to clarify the effect of the appearance of dishes on the visual palatability for elderly people concerning its color appearance, glossiness, and visual texture. We conducted a subjective experiment on visual palatability of dishes under different light sources. We used the digital images of 12 kinds of food dishes to give the subject the same visual stimuli with no olfactory cues. As a result, we found that elderly's "visual palatability" was affected by not only the "color appearance" but also the "glossiness" of dishes. The effect of the components of cafe facade on the evaluation of the cafe’s fascination : focusing on machiya and western-style cafes in Kyoto
We focused on the effect of the components of cafe facade on the evaluation of cafes. Firstly, we investigated the components of cafes in Kyoto. As a result of an investigation of 144 cafes, we found that the cafe facade was composed of 6 elements : "Opening", "Wall", "Appentice", "Lattice", "Plants" and "Advertisement". Secondly, we conducted experiments on the subjective evaluation of the effect of the components of cafe facade on the evaluation of cafes using facade pictures. Subjects evaluated the 5 evaluation factors, "Clarity", "Enterability", "Restfulness", "Regionality", and "Fascination (General evaluation)". As a result, the evaluations on "Clarity" and "Enterability" were higher, as the size of opening was bigger in both Japanese-style and Western-style cafes. In addition, "Regionality" was higher, as the size of opening was smaller in Japanese-style cafes. Therefore, "Fascination" of Japanese-style cafe was highest, in the appropriate mesh of lattice, and that of Western-style was higher, as the size of opening was bigger
