    Fluorescence-based analyser as a rapid tool for determining soluble protein content in dairy ingredients and infant milk formula

    peer-reviewedAbstract: Milk protein, in particular native whey protein, is of interest to dairy manufacturers as a measure of functional and nutritional quality. However, quantification of soluble whey protein (SP) is time consuming; giving rise to the need to develop rapid, accurate, and portable at-line process analytical technology. In this study, the performance of a fluorescence-based analyser(F) (Amaltheys II, Spectralys Innovations, France) was evaluated for quantification of SPF and whey protein nitrogen index (WPNI)F in skim milk, whey protein concentrate and infant formula powders. Rehydration of powders prior to analysis was a key factor for ensuring repeatability and reproducibility. A comparison of the analyser with reference methods for SPF and WPNIF resulted in coefficient of determination (R2) > 0.993 for both SPKjeldahl method and WPNIGEA. The results show the fluorescence-based analyser to be rapid, compact, and accurate device, suited for providing reliable support to dairy ingredient and infant formula manufacturers. Industrial relevance: The fluorescence based analysis investigated in this article is suitable for application in the dairy industry where it can be used as a rapid, at-line PAT tool for both liquid and powder samples. The technology has the potential to replace well-established methods for measurement of soluble protein. The main benefit to industry is the ability to respond more rapidly to variations in soluble protein without compromising on the accuracy associated with more time consuming methods

    Successful Engineering and Technology Student Mobility: Key Student Perspectives and Quality Determinants Before, During and After Student Exchange Under the Atlantis Programme

    In this paper, we describe the lessons learned, and determinants of quality, from two Atlantis programmes. Additionally our two student authors will share key student perspectives relevant to student mobility: (1) before they visited the partner university, (2) while they were studying at the partner university and (3) after they returned to their home university. Purdue University and the Technological University Dublin, together with the Hochschule Darmstadt and Pennsylvania State University, were successful in securing an Atlantis mobility grant [1] for four years to support student and staff mobility between the United States and Europe. The programme has just completed its third year and both engineering and technology students have benefitted from it. Subsequently Purdue University, Technological University Dublin and the Universitat Politècnica De Catalunya were successful in securing an Atlantis grant to implement a dual degree MSc in Sustainability, Technology & Innovation [2]. This programme is now underway and the first students have begun study in partner universities. Given that the core theme for this SEFI Annual conference is global engineering recognition, sustainability, mobility, this paper will address aspects of all three of these topics from both a student and an academic perspective. Among the key determinants of quality [3] that will be highlighted are student selection, student preparation and orientation (both out-going and incoming), student housing considerations; instructional culture differences; student plan of study establishment; student finances; accommodation of miss-matched calendars; purposes and nature of faculty mobility; programme operation and personnel; project communication and evaluation [4]. The concept of sustainability will be approached in terms of both the content and experiences designed into the students’ plan of study as well as the continuation of the exchanges and dual degree programme beyond the four year externally funded projects that enabled their initiation. Because no academic paper can present first person student insights, perspectives, and concerns and because these are also central to the success of such programmes, we have carefully involved two students in the preparation of our paper and delivery of the presentation. In turn, they have interacted with other exchangees so that a broad perspective is presented. The summary findings of the projects’ third party evaluator [5] will be summarized to yield a complete 360° overview of what makes such important exchange and study-abroad programmes in engineering and technology fields successful. Finally, we will conclude with a brief highlighting of the evaluation design, assessment and monitoring systems needed to maintain effective forward progress for such project. The paper will be presented by two faculty/academics associated with managing the Atlantis programmes and by two students who participated in the Atlantis programmes

    The EU-US Agreement through the Atlantis Programmes supports consortia of higher education and training institutions working together at undergraduate or graduate level to improve their educational services, to compare and modernise curricula and to develop joint study programmes with full recognition of credits and qualifications. The EU-US Atlantis Programme funds innovative projects across three strands: mobility projects, double or joint “transatlantic degrees” for students in the EU and US and policy-oriented measures. The main focus of activities must be on transatlantic rather than intra-European or intra-American interactions. Funded activities, such as the development of curricula, joint study programmes, exchanges and study abroad with provision for mutual credit recognition and language and cultural preparation, should be of demonstrable benefit to higher education students, vocational education and training learners and teachers/trainers/administrative staff

    Improved Food Safety through Sterility of Air in Food Processing and Packaging.

    End of Project ReportThe aims of this research were to develop reliable methods for evaluating the level of airborne micro-organisms in food processing facilities and to study the viability and behaviour of micro-organisms in air filtration systems. The main conclusions were as follows: · Assessment of air quality involves monitoring both particulate and microbial levels as there is no simple relationship between these phenomena in a food process environment. · The large fluctuations in microbial levels found in air in these studies underline the necessity of frequent and regular air sampling in processing facilities. · It was established that micro-organisms can grow inside an air filter under certain environmental conditions and give rise to intermittent microbial germ contamination of the cleaned air. · It was demonstrated that flowing air affects the survival of microorganisms and the survival rate is dependent on filter class. Hence more emphasis on filter design aimed at effective microbial control is advised. · A combined system for filtering and sterilisation by ozone was demonstrated to be an efficient technique for extending the microbial separation efficiency of air filters.European Unio

    Multiple-locus variable number of tandem repeat analysis (MLVA) of Irish verocytotoxigenic Escherichia coli O157 from feedlot cattle: uncovering strain dissemination routes

    <p>Abstract</p> <p>Background</p> <p>The identification of the routes of dissemination of <it>Escherichia coli (E. coli) </it>O157 through a cohort of cattle is a critical step to control this pathogen at farm level. The aim of this study was to identify potential routes of dissemination of <it>E. coli </it>O157 using Multiple-Locus Variable number of tandem repeat Analysis (MLVA).</p> <p>Results</p> <p>Thirty-eight environmental and sixteen cattle faecal isolates, which were detected in four adjacent pens over a four-month period were sub-typed. MLVA could separate these isolates into broadly defined clusters consisting of twelve MLVA types. Strain diversity was observed within pens, individual cattle and the environment.</p> <p>Conclusion</p> <p>Application of MLVA is a broadly useful and convenient tool when applied to uncover the dissemination of <it>E. coli </it>O157 in the environment and in supporting improved on-farm management of this important pathogen. These data identified diverse strain types based on amplification of VNTR markers in each case.</p
