    Programa de auditoría para el Sistema de Gestión HACCP Productos Alimenticios “Carnecitas”

Informe de auditoría fase 2.El siguiente plan de auditoria esta aplicado al sistema de gestión HACCP, verificando el cumplimiento por procesos, ejecutado por la empresa Productos Alimenticios “carnecitas”, teniendo en cuenta los estándares sanitarios reglamentarios en la Resolución 2674 del 2013 y del Decreto 60 del 2002. Se establece el cumplimiento de los procesos de calidad, planes de mejora y acciones correctivas para dar cumplimiento al plan HACCP. Para la ejecución del plan de auditoria se tomó como referente la norma ISO 19011: 2018. Durante el desarrollo, se determinaron diferentes hallazgos de gran impacto para la gestión de calidad, dando prioridad a los impactos relacionados con BPM y HACCP, teniendo en cuenta la pirámide de calidad, es imprescindible cumplir con los programar prerrequisitos, para poder implementar un sistema gestión de calidad e inocuidad de los alimentos. El Plan HACCP de la empresa Productos Alimenticios “Carnecitas", evidencio falencias asociadas a los programas prerrequisitos, BPM y sistema HACCP, por lo tanto, se revisaron los hallazgos encontrados frente a la normatividad relacionada, estableciendo acciones correctivas, principalmente con los temas relacionados al personal manipulador de alimentos, ya que se evidencio que las falencias vienen principalmente del personal.The following audit plan is applied to the HACCP management system, verifying compliance by processes, executed by the company food products "Carnecitas", taking into account the regulatory health standards in Resolution 2674 of 2013 and Decree 60 of 2002. It establishes compliance with quality processes, improvement plans and corrective actions to comply with the HACCP plan. The ISO 19011: 2018 standard was used as a reference for the execution of the audit plan. During the development, different findings of great impact for quality management were determined, giving priority to the impacts related to BPM and HACCP, taking into account the quality pyramid, it is essential to comply with the prerequisite program, in order to implement a quality management system and food safety. The HACCP Plan of the company food products "Carnecitas", evidenced deficiencies associated with prerequisite programs, BPM and HACCP system, therefore, the findings were reviewed against the related regulations, establishing corrective actions, mainly with issues related to food handling personnel, since it was evident that the shortcomings come mainly from the staff

    SCN1A Variants as the Underlying Cause of Genetic Epilepsy with Febrile Seizures Plus in Two Multi-Generational Colombian Families

    Genetic epilepsy with febrile seizures plus (GEFS+) is an autosomal dominant disorder with febrile or afebrile seizures that exhibits phenotypic variability. Only a few variants in SCN1A have been previously characterized for GEFS+, in Latin American populations where studies on the genetic and phenotypic spectrum of GEFS+ are scarce. We evaluated members in two multi-generational Colombian Paisa families whose affected members present with classic GEFS+. Exome and Sanger sequencing were used to detect the causal variants in these families. In each of these families, we identified variants in SCN1A causing GEFS+ with incomplete penetrance. In Family 047, we identified a heterozygous variant (c.3530C > G; p.(Pro1177Arg)) that segregates with GEFS+ in 15 affected individuals. In Family 167, we identified a previously unreported variant (c.725A > G; p.(Gln242Arg)) that segregates with the disease in a family with four affected members. Both variants are located in a cytoplasmic loop region in SCN1A and based on our findings the variants are classified as pathogenic and likely pathogenic, respectively. Our results expand the genotypic and phenotypic spectrum associated with SCN1A variants and will aid in improving molecular diagnostics and counseling in Latin American and other populations
