    Effect of Antimicrobial Starch Edible Coating on Shelf-Life of Fresh Strawberries.

    Strawberry is a very sensitive fruit and presents a short post-harvest shelf-life. Among the factors responsible for strawberries’ quality loss are high metabolic activities and mold decay. To increase product shelf-life, cassava starch–based edible coatings (3%), added or not with potassium sorbate (0.05%), were applied on minimally processed strawberries. Uncoated minimally processed strawberries were used as control samples. Physical and chemical properties, respiration rate and sensorial acceptance of uncoated and coated strawberries stored up to 15 days at 5C were monitored. The results showed that coatings had no significant effect on soluble solids, titrable acidity, pH and colour of strawberries. Besides reducing the respiration rate of samples, cassava starch edible coatings were efficient in delaying weight and firmness loss of strawberries during storage. In the studied conditions, potassium sorbate was not efficient in controlling microbial growth. Strawberries coated with cassava starch without the antimicrobial agent showed good conditions for consumption and good sensorial acceptance up to 12 days of storage, whereas the control samples and the samples treated with the coating containing potassium sorbate achieved a shelf-life of 9 days because of microbial spoilage

    When work keeps us apart: a thematic analysis of the experience of business travellers

    Whilst business travel is deemed important for organizational success and economic outcomes, little is known about the actual process of business travelling from the perspective of individuals who undertake such travel on a regular basis. Thus the current qualitative study examined how business travellers (three women and eight men) attempt to find a balance between work and family, by focusing on how time together and time apart are experienced. The results can be interpreted and framed within work/family border theory in that business travellers’ borders are less defined and less permeable, thus requiring them to border-cross more frequently. This necessitates a process of negotiation with key border-keepers (their spouse/partner). Business travellers also undertake compensatory behaviours to make up for their time away from family. In order to find a work/family balance they go through a process of adapting, negotiating and tailoring their lives around their work commitments to alleviate work-life conflict

    Comparação da cinética da desidratação osmótica de goiabas em sistema batelada e semicontínuo

    Um desidratador osm´otico, em escala piloto, foi constru´ıdo para a desidrata¸c~ao de frutas com reaproveitamento da solu¸c~ao desidratante. Cin´eticas de desidrata¸c~ao osm´otica de goiabas foram realizadas no desidratador (sistema semicont´ınuo), variando a rela¸c~ao fruta:solu¸c~ao (1:10 e 1:20) e o fluxo da solu¸c~ao osm´otica (77 e 540 kg/h). Os resultados encontrados foram comparados com as respostas de ensaios cin´eticos obtidos em b´equeres (sistema batelada). As condi¸c~oes de processo para ambos sistemas foram: solu¸c~ao de sacarose a 60 % (m/m) e 40oC para o tempo de processamento de 0.5, 30, 60, 120, 180, 300 e 420 minutos. A solu¸c~ao desidratante no sistema semicont´ınuo foi reaproveitada por seis vezes. O fluxo atrav´es do leito de s´olidos no desidratador semicont´ınuo foi misto, entretanto as diferen¸cas na perda de peso (26.5 e 29.1%) e de ´agua (39.0 e 40.5%) em tr^es horas de desidrata¸c~ao n~ao foram significativas entre os sistemas batelada e semicont´ınuo (540 kg/h), respectivamente
