    My First Cookbook! Healthy Recipes that Kids Can Make

    The obesity epidemic in the United States continues to negatively impact health outcomes in every age group. Interventions aimed at the pediatric population is an especially attractive public health strategy to help kids early on develop important skills for healthy eating to carry with them into adulthood. Childhood obesity prevalence remains alarmingly high at about 17% and has a huge impact on children’s health including higher likelihood of developing risk factors for heart disease, high blood pressure, asthma, sleep apnea, psychiatric problems and problems with self-esteem. This project aims to help elementary school aged children become more involved in making their own healthy food choices by creating a cookbook with recipes that children in this age bracket can make themselves.     Understanding Refugees\u27 Perspectives on Health Care

    Introduction. Burlington, Vermont accepts refugees from around the world. These individuals face unique barriers to accessing healthcare due to language, culture and finances. Research suggests that cultural beliefs about healthcare can affect ability or willingness to seek medical care. Gaining a better understanding of refugee perspectives of the healthcare system may offer insight into how to rectify this issue. Objectives. The goal of this study was to learn about refugee perspectives of the healthcare system and assess their use of services. Methods. We surveyed a convenience sample of 24 refugees to learn more about thoughts and practices surrounding healthcare and the use of the medical system. Results. Survey findings suggested that refugees who had been living in the US for longer than one year access healthcare resources differently from more recent arrivals. Most respondents agreed that reasons for going to a healthcare provider revolved around the diagnosis and treatment of current ailments. Regardless of time spent in the U.S., most respondents were unlikely to seek out preventive care. Refugees who had been in the U.S. longer than one year were less likely to seek out emergency services for acute symptoms that would be better served by a visit with their PCP. Conclusions. Recent arrivals used the emergency room for primary care needs more than those living in the U.S. longer than one year, suggesting the efficacy of provided health education.     Effect of Ultrafast Imaging on Shear Wave Visualization and Characterization: An Experimental and Computational Study in a Pediatric Ventricular Model

    Plane wave imaging in Shear Wave Elastography (SWE) captures shear wave propagation in real-time at ultrafast frame rates. To assess the capability of this technique in accurately visualizing the underlying shear wave mechanics, this work presents a multiphysics modeling approach providing access to the true biomechanical wave propagation behind the virtual image. This methodology was applied to a pediatric ventricular model, a setting shown to induce complex shear wave propagation due to geometry. Phantom experiments are conducted in support of the simulations. The model revealed that plane wave imaging altered the visualization of the shear wave pattern in the time (broadened front and negatively biased velocity estimates) and frequency domain (shifted and/or decreased signal frequency content). Furthermore, coherent plane wave compounding (effective frame rate of 2.3 kHz) altered the visual appearance of shear wave dispersion in both the experiment and model. This mainly affected stiffness characterization based on group speed, whereas phase velocity analysis provided a more accurate and robust stiffness estimate independent of the use of the compounding technique. This paper thus presents a versatile and flexible simulation environment to identify potential pitfalls in accurately capturing shear wave propagation in dispersive settings
