    Integrating service-learning into dietetics and nutrition education

    This article presents a review of the service-learning literature as a foundation for a discussion on integrating service-learning into dietetics and nutrition education. The purposes of this review are to (1) define service-learning, (2) discuss how service-learning can enhance dietetics and nutrition education programs, (3) explain principles and best practices fur integrating service-learning into dietetics and nutrition curricula, and ( 4) outline practical tips for orienting students for this experience and establishing sites for service-learning activities. The information shared has pedagogical implications and is transferable to any dietetics and nutrition education program

    Food insecurity is associated with poorer glycemic control in patients receiving free versus fee-based care

This study examined differences in household food security (HFS), household adult food security (HAFS), and indicators of diabetes management between clients using free and fee-for-service clinics for diabetes care and management. The study’s 166 participants (free clinic, n = 41; fee-for-service clinic, n =125) had a mean age of 53 ± 16 years and were primarily Caucasian (n = 147 [91.9%]). Both HFS (P \u3c0.001) and HAFS (P \u3c0.001) differed between the clinic groups, as did A1C (free clinic 8.7 ± 1.7%; fee-for-service 7.8 ± 1.6%; P = 0.005). A1C increased as HFS (r = 0.293, P \u3c0.001) and HAFS (r = 0.288, P = 0.001) worsened

    The Relationship of Red and Photographic Infrared Spectral Data to Grain Yield Variation Within a Winter Wheat Field

    Two band hand-held radiometer data from a winter wheat field, collected on 21 dates during the spring growing season, were correlated within field final grain yield. Significant linear relationships were found between various combinations of the red and photographic infrared radiance data collected and the grain yield. The spectral data explained approximately 64 percent of the within field grain yield variation. This variation in grain yield could not be explained using meteorological data as these were similar for all areas of the wheat field. Most importantly, data collected early in the spring were highly correlated with grain yield, a five week time window existed from stem elongation through antheses in which the spectral data were most highly correlated with grain yield, and manifestations of wheat canopy water stress were readily apparent in the spectral data

    Remote sensing of total dry-matter accumulation in winter wheat

    The author has identified the following significant results. Red and photographic-infrared spectral data collected on 21 dates over the growing season with a hand-held radiometer was quantitatively correlated with total dry-matter accumulation in winter wheat. The spectral data were found to be highly related to vigor and condition of the plant canopy. Two periods of drought stress and subsequent recovery from it were readily apparent in the spectral data. Simple ratios of the spectral data compensated for variations in solar intensities and, when integrated over the growing season, explained 79% of the variation in total above-ground accumulation of dry matter

    Agriculture Multiband Experiment Radiometer (Amber) was designed and built in 1979 to 1980 and deployed in 1981. Amber was designed to simultaneously measure sunlight reflected from vegetation in 15 optical bands. In 1982, program interest shifted from ground truth to satellite image reduction and Amber was retired. Early in 1987, the project scientists concluded that Amber, because of its 15 simple and independent optical systems, would be ideally suited to study polarized light. Changes were made to add polarimeter capability to the instrument. The changes are listed and briefly discussed

    The Angstrom Exponent and Bimodal Aerosol Size Distributions

    Powerlaws have long been used to describe the spectral dependence of aerosol extinction, and the wavelength exponent of the aerosol extinction powerlaw is commonly referred to as the Angstrom exponent. The Angstrom exponent is often used as a qualitative indicator of aerosol particle size, with values greater than two indicating small particles associated with combustion byproducts, and values less than one indicating large particles like sea salt and dust. In this study, we investigate the relationship between the Angstrom exponent and the mode parameters of bimodal aerosol size distributions using Mie theory calculations and Aerosol Robotic Network (AERONET) retrievals. We find that Angstrom exponents based upon seven wavelengths (0.34, 0.38, 0.44, 0.5, 0.67, 0.87, and 1.02 micrometers) are sensitive to the volume fraction of aerosols with radii less then 0.6 micrometers, but not to the fine mode effective radius. The Angstrom exponent is also known to vary with wavelength, which is commonly referred to as curvature; we show how the spectral curvature can provide additional information about aerosol size distributions for intermediate values of the Angstrom exponent. Curvature also has a significant effect on the conclusions that can be drawn about two-wavelength Angstrom exponents; long wavelengths (0.67, 0.87 micrometers) are sensitive to fine mode volume fraction of aerosols but not fine mode effective radius, while short wavelengths (0.38, 0.44 micrometers) are sensitive to the fine mode effective radius but not the fine mode volume fraction

    Selective Plating Underestimates Abundance and Shows Differential Recovery of Bifidobacterial Species from Human Feces

    The aim of the present work was to compare the efficacies and levels of selectivity of different culture-dependent and -independent methods for analyzing bifidobacteria in human stool samples. The three different culture media used here significantly differed from each other, particularly with regard to the recovery of Bifidobacterium adolescentis. Bifidobacterium medium failed to recover B. adolescentis; Beerens medium recovered some B. adolescentis organisms (17% of total bifidobacteria), whereas tomato-Eugon medium recovered mainly B. adolescentis organisms (58% of total bifidobacteria). A culture-independent method that combines GC fractionation of bacterial community DNA and 16S rRNA sequencing indicated that B. adolescentis organisms accounted for 85% of all bifidobacteria. Methodological biases, such as those described in this paper, should be taken into account in interpreting earlier studies and designing future experiments

    Aerosol Data Sources and Their Roles within PARAGON

    We briefly but systematically review major sources of aerosol data, emphasizing suites of measurements that seem most likely to contribute to assessments of global aerosol climate forcing. The strengths and limitations of existing satellite, surface, and aircraft remote sensing systems are described, along with those of direct sampling networks and ship-based stations. It is evident that an enormous number of aerosol-related observations have been made, on a wide range of spatial and temporal sampling scales, and that many of the key gaps in this collection of data could be filled by technologies that either exist or are expected to be available in the near future. Emphasis must be given to combining remote sensing and in situ active and passive observations and integrating them with aerosol chemical transport models, in order to create a more complete environmental picture, having sufficient detail to address current climate forcing questions. The Progressive Aerosol Retrieval and Assimilation Global Observing Network (PARAGON) initiative would provide an organizational framework to meet this goal

    Household Food Insecurity Is Inversely Associated with Social Capital and Health in Females from Special Supplemental Nutrition Program for Women, Infants, and Children Households in Appalachian Ohio

    Food insecurity has been negatively associated with social capital (a measure of perceived social trust and community reciprocity) and health status. Yet, these factors have not been studied extensively among women from households participating in the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) or the WIC Farmers’ Market Nutrition Program. A cross-sectional, self-administered, mailed survey was conducted in Athens County, Ohio, to examine the household food security status, social capital, and self-rated health status of women from households receiving WIC benefits alone (n=170) and those from households receiving both WIC and Farmers’ Market Nutrition Program benefits (n=65), as well as the relationship of food security, social capital, and self-rated health status. Household food security and perceived health status were not significantly different between groups; however, high social capital was greater (χ2=8.156, P=0.004) among WIC, compared to WIC/Farmers’ Market Nutrition Program group respondents. Overall, household food insecurity was inversely associated with perceived health status (r=−0.229, P=0.001) and social capital (r=0.337, P\u3c0.001). Enabling networking among clients, leading to client-facilitated programs and projects, and developing programs that strengthen social capital, including community-based mentoring programs and nutrition education programs that are linked to community-based activities, are needed, as is additional research to verify these findings
