    Occurrence and specificity of glucose oxidase (E.C: 1.1.3.4) in botrytized sweet white wine. Comparison with laccase (E.C: 1.10.3.2), considered as the main responsible factor for oxidation in this type of wine

    Two types of oxidizing enzymes are present in botrytized white grapes and wines: laccase (PPO) and glucose oxidase (GOX). The evolution of these two enzymes is similar both during the over-ripening of grapes and during wine making. Yet, PPO is severely inhibited by the addition of SO2 following the alcoholic fermentation, and shows a marked instability in both the must and wine environments. GOX, however, remains free and active in solution and helps develop the main characteristics of the wine. In particular, as is to be expected from its activity, GOX oxidizes tartaric acid, ethanol and glycerol, the major components of must and wine, respectively to glyoxylic acid, acetaldehyde and glyceraldehyde. And then, by nucleophilic additions under acidic conditions, these products react with catechins and proanthocyanidins to form several new compounds, some of which appear in a colored form. These reactions can have an impact on the visual quality of the wine.

    Le roman d'entreprise: breaking the silence

    This article looks at three recent French novels novels in order to explore key themes in what has become known as the roman d’entreprise: Pierre Mari’s RĂ©solution (2005), Nathalie Kuperman’s Nous Ă©tions des ĂȘtres vivants (2010) and Thierry Beinstingel’s Retour aux mots sauvages (2010). The figure of the entreprise functions both as a fictional representation of the post-Fordist workplace environment in companies such as France TĂ©lĂ©com, and also as a means of tackling wider issues of work and social organisation in an era of neoliberal managerialism. The concepts of capitalist realism, organisational miasma and virtuality are used to analyse the ways in which the three novels convey the distinctive affective landscape of the contemporary entreprise. Fiction is used to consider the prolix and self-referential nature of the managerialist entreprise, which enables it to exert a significant influence on the individual and collective subjectivities of employees.     Parody of political correctness or allegory of “Immaterial Labour”? A second look at Francis Veber’s Le Placard (2001)

    This article questions whether readings of Francis Veber’s Le Placard (2001) as simply a parody of political correctness have tended to overlook the allegorical significance of its depiction of a middle-aged executive forced to pretend to be gay, simulating libidinal investments he does not in fact possess, in order to protect his job. It argues that the film merits re-interpretation as being not only a parody of political correctness but also a powerful allegory for the increasing demands placed on employees to invest their most personal affects and aptitudes in their work. Drawing on the work of Yann Moulier Boutang, the article interprets such demands as symptomatic of a regime of ‘cognitive capitalism’, in which ‘immaterial’ forms of labour represent the primary source of surplus value. The article thus offers an alternative reading of the film’s treatment of questions of work, gender, sexuality, family, and nation, before situating Le Placard in the context of a broader range of recent French filmic representations of the contemporary workplace

    The reversed-phase preparative high performance liquid chromatographic purification of the methanol extract of the fruits of Ribes biebersteinii Berl. (Grossulariaceae) afforded five cyanidin glycosides, 3-O-sambubiosyl-5-O-glucosyl cyanidin (1), cyanidin 3-O-sambubioside (2), cyanidin 3-O-glucoside (3), cyanidin 3-O-(2G-xylosyl)-rutinoside (4) and cyanidin 3-O-rutinoside (5). They showed considerable free-radical-scavenging properties in the 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay with the RC50 values of 9.29 × 106, 9.33 × 106, 8.31 × 106, 8.96 × 106 and 9.55 × 106 mol L1, respectively. The structures of these compounds were elucidated by various chemical hydrolyses and spectroscopic means. The total anthocyanin content was 1.9 g per 100 g dried fruits on cyanidin 3-glucoside basis.Pet cijanidin glikozida, 3-O-sambubiozil-5-O-glukozil cijanidin (1), cijanidin 3-O-sambubiozid (2), cijanidin 3-O-glukozid (3), cijanidin 3-O-(2G-ksilozil)-rutinozid (4) i cijanidin 3-O-rutinosid (5) izolirani su iz metanolnog ekstrakta plodova Ribes biebersteinii Berl. (Grossulariaceae) koristeći reverzno-faznu preparativnu tekućinsku kromatografiju visoke učinkovitosti. Cijanidin glikozidi pokazali su sposobnost hvatanja slobodnih radikala u pokusu s 2,2-difenil-1-pikrilhidrazilom (DPPH). Dobivene su sljedeće RC50 vrijednosti: 9,29 × 106, 9,33 × 106, 8,31 × 106, 8,96 × 106, odnosno 9,55 × 106 mol L1. Strukture glikozida određene su kemijskom hidrolizom i spektroskopijom masa. Ukupni sadrĆŸaj antocijanina bio je 1,9 g na 100 g suhih plodova preračunato na cijanidin 3-glukozid
