    Structure and dynamics of the macrobenthic communities of Ubatuba Bay, southeastern Brazilian Coast

    A composição, distribuição, densidade, biomassa, diversidade e relações tróficas das comunidades macrobênticas da Enseada de Ubatuba, costa sudeste brasileira, foram estudadas sazonalmente, de agosto de 1995 a junho de 1996. As amostragens foram realizadas em 9 estações de coleta, situadas entre 4 e 13 m de profundidade, e obtidas em duplicata com pegador de fundo van Veen de 0,1 m² de área amostral. Duzentas e cinco espécies macrobênticas foram obtidas, a maioria apresentando baixa dominância e freqüência. Poliquetas e nemátodes dominaram, representando 89% da fauna total. As variações espaciais na estrutura das comunidades foram correlacionadas ao tipo de sedimento, ao passo que as variações temporais o foram com o aumento da perturbação causada pelas ondas e correntes sobre o substrato durante o período de chuvas. Poliquetas carnívoros e detritívoros foram dominantes, totalizando 81% das espécies. O diâmetro médio das partículas, conteúdo de areia fina, areia muito fina, silte e argila estiveram entre os principais fatores relacionados aos padrões de distribuição da fauna, densidade, diversidade e com a dominância dos grupos tróficos. Análises multivariadas mostraram que a área de estudo pode ser dividida em dois grupos de estações, caracterizados, respectivamente, pela presença de Magelona papillicornis e Mediomastus capensis.Species composition, distribution, density, biomass, diversity and trophic relationships of the macrobenthic communities in Ubatuba Bay, southeastern Brazilian coast, were investigated seasonally from August 1995 to June 1996. Sampling was carried out at 9 stations of between 4 and 13 m depth and taken in duplicate with a 0.1m² van Veen grab. Two hundred and five macrofaunal species were identified, presenting low dominance and frequency. Polychaetes and nematodes dominated, representing 89% of the whole fauna. Spatial variations in the structure of the communities were correlated to sediment type whereas seasonal variations were correlated to the increase in wave size and current disturbance over the substrate during the rainy period. Carnivore and surface deposit-feeder polychaetes were dominant, totalling 81% of the species. Mean grain size, fine sand, very fine sand, silt and clay contents were among the main factors related to the patterns of macrofaunal distribution, density and diversity and to the dominance of trophic groups. Multivariate analysis showed that the area may be divided into two groups of stations each of them characterized, respectively, by the presence of Magelona papillicornis and Mediomastus capensis

    The Cumacea community of the southeastern Brazilian Continental Shelf: structure and dynamics

    Specific composition, abundance, diversity and dynamics of the Cumacea community from the southeastern Brazilian continental shelf were studied. The area is characterized by the intrusion of a cold and highly saline water mass in summer, the South Atlantic Central Water (SACW), from the slope towards the coast, changing the hydrographic structure of the shelf and the species distribution. During the other seasons the inner shelf, area shallower than 50 m, is filled with warm and low saline water, the Coastal Water (CW). The presence of the SACW seems to favor the abundance and diversity of Cumacea due to its higher primary production and stability. Three groups of species were related to the water masses. Depth and fine sand fraction were shown to be the main factors structuring the Cumacea community. The role of the SACW in maintaining the Cumacea populations in the area through the passive transport of pre-ovigerous and ovigerous females is discussed.No disponibl

    Production of Cookies Enriched with Bioactive Compounds through the Partial Replacement of Wheat Flour by Cocoa Bean Shells

    Approximately 500 thousand tons of cocoa bean shells (CSs) are generated annually and treated as waste. However, their composition is of great nutritional, technological, and economic interest due to their dietary fiber (46.4 to 60.6%), protein (11.6 to 18.1%), and lipid contents (2 to 18.5%), as well as the presence of flavonoids and alkaloids. Thus, this study aimed to obtain CS flour by milling the CSs, characterizing the flour according to its chemical composition and functionalities, and then applying it in the production of cookies, substituting a wheat flour portion (10, 20, 30, and 40%) with CS flour. Cookies were characterized in terms of water, lipids, proteins, phenolic (PC), and total flavanol (FLA) contents, and specific volume (SV), hardness (H), and L*, a*, and b color scale parameters. Increasing the amount of CS showed positive results, as the cookies were enriched with PC (0.68 to 2.37 mg gallic acid equivalents/g of sample) and FLA (0.10 to 0.19 mg epicatechin equivalents/g of sample) but increased hardness (353 to 472 N). By associating the responses, it was concluded that the wheat flour replacement with 30% CS presented values of PC and FLA 3 and 1.6 times higher than the control and could be a formulation of interest to consumers

    From Orange Juice By-Product in the Food Industry to a Functional Ingredient: Application in the Circular Economy

    In the orange juice industry, more than 50% of raw material becomes by-products that are rich in active compounds and have high nutritional content. Improved use of these by-products could represent a key strategy for a circular economy. The objective of this study was to produce a flour from orange juice by-product, characterize it, and then apply this flour to produce cookies. Orange by-product flour (OBPF) was characterized in terms of its chemical composition, dietary fiber, phenolic compounds, antioxidant potential, and hygroscopic properties. Subsequently, the effect of substituting wheat flour by OBPF in cookies was evaluated. OBPF presented a very high content of dietary fiber (73.61% dry matter (DM)), minerals (ash = 2.72% DM), and total phenolic compounds (534 ± 30 mg gallic acid equivalent (GAE)/100 g of DM). In general, the properties of cookies were not significantly influenced by using OBPF as a substitution for wheat flour. Sensorial analyses showed that cookies produced with 10% OBPF presented the higher scores. Therefore, OBPF showed interesting characteristics, suggesting its possible use in the development of fiber enriched foods such as cookies; and its production represents a key strategy for the orange juice processing industries towards the application of a circular economy in the food system

    Characterization of low cost orally disintegrating film (ODF)

    Abstract Orally disintegrating films (ODF) produced with a hydrophilic polymers are a thin and flexible material, wich disintegrate in contact with saliva and can vehicule bioactive materials. The aim of this study was to develop and characterize ODF formulation with potential to act as a carrier for different bioactives compounds prepared with low cost polymers. Gelatin (G), starch (S), carboxymethyl cellulose (CMC) and their blends (G:S, CMC:S, CMC:G, and CMC:S:G) were prepared by casting technique with sorbitol as a plasticizer. The formulations were characterized in terms of visual aspects, FTIR, SEM, mechanical characteristics, hygroscopicity, dissolution (in vitro and in vivo) and swelling index. FTIR analysis revealed that no interaction between polymers in ODF was observed. By SEM, it was possible to observe differences on surfaces by different polymers. ODF made with CMC and CMC:G presented higher water absorption (P<0.05) and higher swelling index probably due to the higher water affinity by CMC. Formulations with G, CMC:G and CMC:S:G presented the highest values of tensile strength (P<0.05). ODF prepared with S alone presented the highest disintegration time, the others formulations showed in vitro dissolution ranging from 5.22 to 8.50 min, while in vivo dissolution time ranged from 2.15 to 3.38 min. By the formulations made with G and blend of G:S and CMC:S:G it is possible to develop a ODF of low cost with desired characteristics being an alternative vehicle to deliver functional compounds for continuous use
