Az ’égbĹ‘l Ă©rkezett ĂĽzenetek’ szerepe Ă©s jelentĹ‘sĂ©ge az egyĂ©ni Ărásszokásokban
A dolgozat elkĂ©szĂtĂ©sekor hármas cĂ©l vezĂ©relt. EgyrĂ©szt, hogy bemutassam az Ă©gi levelek (’Himmelsbrief’-ek) Ă©s a velĂĽk rokonságot mutatĂł bajelhárĂtĂł szent levelek kĂĽlönös ismertetĹ‘jegyeit, használatuk mĂłdjait Ă©s lehetĹ‘sĂ©geit az egyĂ©ni Ărásszokásokban. MásrĂ©szt, hogy feltárjam az „égbĹ‘l alábocsátott” vallási funkciĂłjĂş szövegek kapcsán az Ărásban rejlĹ‘ habitusok, mentalitások alapvetĹ‘ vonásait, melynek jelentĹ‘sĂ©gĂ©re már Jean Delumeau is felhĂvta a figyelmet: „A mentális világ feltárása a bejegyzĂ©seken keresztĂĽl beláthatĂłvá teszi olyan mentalitások [’mentalité’], mint pĂ©ldául a fĂ©lelem [’la peur’] vagy a biztonságĂ©rzet [’le sentiment de securité’], a hiedelemrendszer, a kegyessĂ©ggyakorlás […] működĂ©sĂ©t.” (TĂłth, 2006, 419. o.
A sip of tradition
One possible method of representation and conservation of values determined as Hungarikum is the cultural representation. The representation of cultural values can be realized on several levels and ways. The ’szikvĂz’ or soda water - the ordinary name - as a traditional Hungarian craftsman product is qualified as Hungarikum on the basis of Act XXX. of 2012. (henceforward: Act of Hungarikum) and as a registered product of Euroterritoirs Programme (Countries of Europe Programme) is under community protection. Beyond that it can also be categorized as a food industrial heritage. The goal of my research is the national representation of the soda water as a highlighted food industrial product, which I intend to discuss at a wider interpretational horizon, within the perspective of value declaration. The venue of the research is the 77th edition of the National Agriculture and Food Exhibition (henceforward: OMÉK), which is one of the biggest and oldest agrarian and food industrial event in Hungary with great traditions, where the Hungarikum Pavilion got place in 2015 and amongst the represented products soda water was shown. After the modification of Hungarikum Act in 2015, this was the only occasion when food procucts, which are under national protection, were presented together. With the joint application of qualitative and quantitative filters I search for the answer for the question in my article: by what kind of techniques and strategies could the national representation of soda water, which advertised the profile of 77th OMÉK, be executed and what is the importance of this
GasztronĂłmiai hagyományok a mediterrán Ă©s a nyugat-eurĂłpai tĂ©rsĂ©gben : TáplálkozástörtĂ©neti kiállĂtás a rĂłmai Garum-ban
Jelen tanulmány cĂ©lja 2020-ban az Ă–rök Városban a Miasszonyunk Olajfák Rendje (O.S.B. Oliv) szerzeteseinek egykori monostorĂ©pĂĽletĂ©ben, a Garum-ban megnyĂlt memĂłriaintĂ©zmĂ©ny komplex gyűjtemĂ©nyezĂ©si gyakorlatának elemzĂ©se. A tárlat átfogĂł mĂłdon, gazdag tárgyi Ă©s Ărott forrásokra támaszkodva kĂsĂ©ri vĂ©gig a látogatĂłt az Ă©tkezĂ©si szokások törtĂ©neti Ăştján a 15. századtĂłl napjainkig. A magángyűjtemĂ©ny törtĂ©netisĂ©gĂ©ben mutat rá az Ă©trend Ă©s a társadalmi helyzet között fennállĂł szoros összefĂĽggĂ©sre, bizonyos Ă©telek Ă©s italok többletjelentĂ©sĂ©nek hátterĂ©re. A gasztronĂłmiai javakat a kurátorok a hatalmi Ă©s a szociokulturális viszonyok által meghatározott, egyes társadalmi csoportok viselkedĂ©sĂ©t, gondolkodásmĂłdját, mentalitását speciálisan kifejezĹ‘ Ă©s reprezentálĂł tĂ©nyezĹ‘kĂ©nt Ă©rtelmezik. A gyűjtemĂ©ny a hĂ©tköznapi Ă©s a presztĂzsfogyasztás tárgyain, szakácskönyveken, receptfĂĽzeteken, könyvritkaságokon keresztĂĽl nyĂşjt betekintĂ©st a táplálkozás törtĂ©netĂ©be. A kollekciĂł rĂ©szĂ©t kĂ©pezik a háztartásokban, cukrászatokban, pĂ©ksĂ©gekben az Ă©vszázadok során használt konyhai eszközök, keksz-, fagylalt- Ă©s tortaformák. A vizsgálat többek között arra a kĂ©rdĂ©sre keres választ, vajon RĂłma Ăşj gasztronĂłmiai kiállĂtĂłhelye kĂ©pes-e betölteni a Museo Nazionale delle Paste Alimentari bezárását követĹ‘ kulturális vákuumot. Az elemzĂ©s tárgyát kĂ©pezi továbbá, hogy a gyűjtemĂ©ny tĂşlmutatva a könyv- sajtĂł- Ă©s fogyasztástörtĂ©neti szerepĂ©n mikĂ©ppen árnyalja az Ă©letmĂłd, a mindennapi kultĂşra, a szokások Ă©s tradĂciĂłk világával kapcsolatos ismereteket, kĂ©pzeteket. A Biblioteca e Museo della Cucina a gasztronĂłmiai javak kulturális reprezentáciĂłjának egyik eklatáns pĂ©ldája. Az egyes Ă©lelmiszerek, Ăgy többek között a csokoládĂ©fogyasztás alakulása adalĂ©kul szolgálhat a vallási kĂ©rdĂ©sek, dogmatikai viták mögött meghĂşzĂłdĂł elvek Ă©s felfogások jobb megĂ©rtĂ©sĂ©hez. = The aim of this study is to present the complex collection practice and the special
library of Garum, which opened in 2020 in the former monastery building of the monks
of the Order of Our Lady of Mount Olivet (O.S.B. Oliv) in the Eternal City.
The exhibition accompanies the visitor through the history of eating habits from the
15th century to the present in a comprehensive manner, relying on rich material and
writing sources. In its historicity, the private collection points out the close connection
between diet and social status, the background of the additional meaning of certain
food and drinks. The curators interpret gastronomic goods as factors that specifically
express and represent the behaviour, way of thinking, and mentality of certain social
groups determined by power and sociocultural relations.
The special collection offers an insight into the history of culinary through
everyday and prestige consumption items, cookbooks, recipe booklets and rare books.
The collection includes kitchen utensils, biscuit, ice cream and cake molds used in
households, bakeries, and confectioneries over the centuries.
The inquiry also seeks to answer the question of whether Rome’s new culinary
exhibition can fill the cultural vacuum following the closing of the Museo Nazionale
delle Paste Alimentari. The subject of the analysis is also how the collection, beyond its
role in the history of books, press and consumption, shades the knowledge and images
related to the world of lifestyle, everyday culture, customs and traditions.
The Biblioteca e Museo della Cucina is a striking example of the cultural representation
of culinary products. The different types of foodstuff – a good example of this is the
consumption of chocolate – it can serve as an additive for a better understanding of the
arguments and perceptions behind religious questions and dogmatic debates
