    Bioaccessibility In Vitro

    The aim of this study was to investigate and to compare the extractability, bioaccessibility, and bioavailability in vitro of antioxidative compounds from bark of selected Salix species: S. alba (SA), S. daphnoides (SD), S. purpurea (SP), and S. daphnoides x purpurea (SDP) hybrid willow clones originating from their natural habitats and cultivated on the sandy soil. The highest amount of phenolic glycosides was found in the bark of SDP and SD. The best source of phenolics was bark of SDP. The highest content of flavonoids were found in SD bark samples, whereas the highest concentration of bioaccessible and bioavailable phenolic acids was determined in SDP bark. Bark of all tested Salix species showed significant antiradical activity. This properties are strongly dependent on extraction system and genetic factors. Regardless of Salix genotypes, the lowest chelating power was found for chemically-extractable compounds. Bark of all Salix species contained ethanol-extractable compounds with reducing ability. Besides this, high bioaccessibility and bioavailability in vitro of Salix bark phytochemicals were found. Obtained results indicate that extracts from bark tested Salix genotypes can provide health promoting benefits to the consumers; however, this problem requires further study

    Wheat Bread with Pumpkin (Cucurbita maxima L.) Pulp as a Functional Food Product

    U ovom je radu prikazan novi način uporabe pulpe bundeve u proizvodnji kruha. Svrha je rada bila odrediti utjecaj svježe pulpe bundeve na fizička, senzorska i biološka svojstva pšeničnog kruha, a ispitana je i biološka dostupnost aktivnih sastojaka. Povećanjem se udjela pulpe bundeve od 5 do 20 % (izraženo kao suha tvar) smanjio volumen kruha, a povećala se tvrdoća i kohezivnost mrvica. Senzorska su svojstva kruha bila bolja pri zamjeni do 10 % brašna s pulpom bundeve. Najbolje su ocjene okusa, arome i ukupne prihvatljivosti dobili kontrolni uzorak kruha (bez pulpe bundeve), te kruh s dodatkom 5 ili 10 % pulpe. Dodatkom veće količine pulpe dobiven je kruh lošije arome i okusa. Pulpa bundeve obogaćuje kruh biološki dostupnim fenolnim spojevima (ponajprije flavonoidima), a naročito peptidima. Najveća je antioksidativna aktivnost izmjerena u uzorcima s 10 i 15 % pulpe bundeve. Dodatak pulpe znatno je povećao udjel bioraspoloživih inhibitora angiotenzin konvertirajućeg enzima (engl. ACE). Najveća je aktivnost izmjerena u kruhu s 15 i 20 % pulpe bundeve. Biološka je dostupnost ACE inhibitora u ispitanom kruhu bila vrlo velika in vitro. Pulpa je bundeve bogat izvor aktivnih sastojaka, a njezinim dodavanjem izravno u brašno postignuti su dobri rezultati pečenja i smanjeni troškovi proizvodnje. Osim toga, pulpa bundeve često zaostaje kao otpad pri proizvodnji koštica, pa se njezinim iskorištenjem povećava i ekološka te ekonomska dobit.In this study, a new application of pumpkin pulp in bread production is shown. The aim of this work is to determine the influence of the addition of fresh pumpkin pulp directly into wheat flour on physical, sensorial and biological properties of bread. The bioaccessibility of active compounds was also studied. An increase in the addition of pumpkin pulp from 5 to 20 % (converted to dry matter) caused a decrease of bread volume and increase of crumb hardness and cohesiveness. The sensory characteristics of the bread showed that a partial replacement of wheat fl our with up to 10 % of pumpkin pulp gave satisfactory results. The taste, aroma and overall acceptability of control bread and bread containing 5 or 10 % of pulp had the highest degree of liking. The addition of higher levels of pumpkin pulp caused an unpleasant aroma and taste. Pumpkin pulp is a good material to complement the bread with potentially bioaccessible phenolics (including flavonoids) and, especially, with peptides. The highest antioxidant activity was observed, in most cases, of the samples with added 10 and 15 % of pumpkin pulp. The addition of the pulp significantly enriched the bread with potentially bioaccessible angiotensin-converting enzyme (ACE) inhibitors. The highest activity was determined in the bread with 15 and 20 % pumpkin pulp. ACE inhibitors from the tested bread were highly bioaccessible in vitro. Pumpkin pulp seems to be a valuable source of active compounds to complement the wheat bread. Adding the pulp directly to the wheat flour gives satisfactory baking results and reduces the cost of production.     Minichromosome maintenance (MCM) and AgNOR proteins expression in desmoid tumours: a tissue microarray analysis.

    In the present study, nuclear proliferative proteins: MCM2, MCM5, MCM7, Ki-67 and AgNORs expression was assessed in paraffin sections from sporadic desmoid tumours using a tissue microarray (TMA)-based immuno- and histochemistry, respectively. Nuclear expression of MCM7, where the percentage of positive cells was 0.87% (Âą 1.64) (range 0-5%), was found in 4/20 (20.0%) cases. In 32/32 (100%) of the examined desmoid cases no expression of nuclear proteins MCM2 and MCM5 was detected. Nuclear expression of Ki-67 was observed in 4/21 (19%) cases. Paraffin sections from 30 cases of desmoid tumours were silver-stained to visualize AgNORs. The following AgNOR parameters were calculated: mean AgNOR number per nucleus (N), mean AgNOR area per nucleus, mean AgNOR dot area per nucleus (A), and mean AgNOR content (C = N/A). In the investigated group the mean values of AgNOR parameters were the following number: 4.34 (Âą 0.11); area: 0.74 Îźm2 (Âą 0.19); dot area: 0.18 m2 (Âą 0.01), and AgNOR content: 23.73 (Âą 1.85).     The Effect of Chia Seeds ( Salvia hispanica

    The aim of the study was to analyze and characterize the influence of chia seeds (CS) addition (0, 2, 4, 6, and 8%) on wheat bread properties. Bread properties that underwent evaluation included chemical composition, fatty acid composition, total phenolics content, volume, baking losses, crumb texture, and color and sensory analysis. The addition of CS decreased baking losses and the volume of bread. The color of the crumb with CS was much darker as compared with the control sample. The texture analysis showed that the CS caused a decrease in the hardness of the crumb. Most importantly, the addition of CS increased the nutritional value of the bread. Bread with CS contained more dietary fiber and mineral components. Moreover, it has been observed that in comparison to the control product bread with CS was characterized by a rich fatty acids composition and higher level of phenolic compounds. Most importantly, the results showed that the substitution of wheat flour with chia seeds up to 6% did not negatively affect the final product acceptance

    Surgical treatment of patients with peritoneal metastases in combination with Hyperthermic intraperitoneal Chemotherapy (HIPEC) and systemic treatments is applied with increasing frequency and, with correct patient qualification, allows for obtaining 5-year survival at a level of 32–52%. The conditions necessary for positive results of such treatment include the high experience of a given centre, its appropriate infrastructure, and appropriate patient qualification for the procedure. As a result of the debate connected with the need to evaluate treatment quality and results, at the request of the Peritoneal Cancer Section of the Polish Society of Oncological Surgery, the conditions for quality assurance were worked out and a Quality Assurance Commission was set up for the centres performing cytoreductive procedures and HIPEC procedures in the treatment of primary and secondary peritoneal tumours

    The milling process has evolved over time, employing various techniques to produce flour with different particle sizes and applications. This paper discusses the advancements in the wheat flour milling process and examines their impact on flour quality. The concept of wheat milling value is also introduced, which refers to the ability of wheat to produce flour with desirable properties and high yield. The importance of wheat cleaning in the milling process is highlighted, along with technological advancements such as color sorting machines and debranning of wheat grains before grinding, which facilitate efficient cleaning and increase flour yield. The progress of wheat conditioning in preparing wheat for milling is also discussed, along with current trends in grinding the wheat kernel. These advancements collectively contribute to enhancing flour quality, production efficiency, and overall milling performance.Sposób przemiału ziarna pszenicy ewoluował na przestrzeni ostatnich lat, poprzez wykorzystanie nowych technik, pozwalających na uzyskanie mąki o zmiennym składzie granulometrycznym i różnych zastosowaniach. W niniejszej pracy omówiono najnowsze trendy związane z produkcją mąki pszennej, analizując wpływ różnych metod i technologii na jej jakość. Omówiono także wartość przemiałową ziarna, pod kątem otrzymywania mąki o wysokim wyciągu i pożądanych właściwościach wypiekowych. Skupiono się również na innowacjach w procesie oczyszczania pszenicy, omawiając maszyny do sortowania ziarna względem barwy oraz urządzenia do obłuskiwania. Przeanalizowano także postęp w procesie kondycjonowania i rozdrabniania ziarna pszenicy. Wszystkie omówione innowacje przyczyniają się do poprawy jakości mąki oraz efektywności i wydajności produkcji mąki
