    Processing and characterization of durum wheat bread enriched with antioxidant from yellow pepper flour

    The effect of the addition of yellow pepper flour on bread physico-chemical and sensorial properties was addressed in this study. In particular, vegetable flour concentration was set at 25%; in order to optimize the bread sensorial properties, yellow pepper flour was separately hydrated at three different water content levels. Texture analysis were carried out on both dough and bread samples to evaluate their firmness. Furthermore, tomographic analysis was performed on the same samples in order to provide a more detailed view of their texture. Estimation of the glycemic response, determination of the carotenoids content and sensory analysis of the fortified bread were also determined. Results highlighted that the highest glycemic index was achieved in bread sample having the highest water content and that showed the worst results in terms of texture. Among the studied samples, bread with medium hydration level showed good structural characteristic, double anti-oxidant content compared to the control bread (CTRL S) and the highest sensorial quality

    In the last decade, several investigators have reported that autologous and homologous fresh frozen bones (FFB) are effective materials to restore alveolar ridges previous to insert dental implants. Here we reported a comparative study between spiral implants inserted in FFB and native bone to evaluate their clinical outcome. Patients were grafted and spiral implants were inserted in the same surgical time. Several variables (patient, grafts, anatomic site, implant, prosthetic restoration) were investigated. Implant’ failure and peri-implant bone resorption were considered as predictor of clinical outcome. 51 implants were inserted in 12 patients. Implants were inserted to replace 8 incisors, 4 cuspids, 18 premolars and 21 molars. The mean follow-up was 14 months. No implant was lost. Peri-implant bone resorption (i.e. success rate) was used as predictor of clinical outcome but Kaplan Meier algorithm demonstrates that no studied variable has a statistical significant impact on clinical outcome.     Senior consumers involvement in developing new fish-based foods through dequential hedonic tests

    Older population needs specific food, adequate to age and health requirements, and acceptable from the sensory point of view. To develop functional products the involvement of senior assessors was experimented. A panel of 35 seniors evaluated fish-burgers and fish-sausages through sensory tests adapted to their cognitive capacities. A model of sequential discrimination, ranking and tetrad tests, was applied with the aim to define the shape (burger vs. sausage), The species and relative percentage of fish, the addition of vegetables, and the presence of potato. The panel indicated a preference for sausage, while ranking tests indicated tuna alone or with mackerel to be preferred. The addition of tomato and artichoke improved acceptance. The acceptance scores showed that progressive discrimination tests successfully supported the development products. This study focusing on age related sensory perception, demonstrated how elderly are able to perform not only simple paired comparisons, but also more demanding ranking tests. There are mainly two practical applications in this work: a methodological one and an applicative one. The methodological is related to the evidence that quite complex and up to date sensory studies, if well structured, can be correctly executed by elder consumers. The applicative output is a preliminary recipe of healthy food for elder people that can be used as milestone in future studies

    Cardiac metastasis from renal cell carcinoma, especially without neoplastic thrombosis of the vena cava, is extremely rare. The prognosis of patients with metastatic renal cell carcinoma has been radically influenced by the introduction of tyrosine kinase inhibitors, but very few reports in the literature have described their activity in heart metastasis. We report the case of a woman with a left ventricle metastasis from kidney cancer without renal vein involvement, who was treated with pazopanib. The patient achieved a prolonged partial response, with clear signs of metastasis devascularization and a favorable toxicity profile

    Electrocardiographic characteristics of right-bundle-branch-block premature ventricular complexes predicting absence of left ventricular scar in athletes with apparently structural normal heart

    Background and aims: Left ventricular scar is an arrhythmic substrate that may be missed by echocardiography and diagnosed only by cardiac magnetic resonance (CMR), which is a time-consuming and expensive imaging modality. Premature ventricular complexes (PVCs) with a right-bundle-branch-block (RBBB) pattern are independent predictors of late gadolinium enhancement (LGE) but their positive predictive value is low. We studied which electrocardiographic features of PVBs with a RBBB pattern are associated with a higher probability of absence of an underlying LGE. Methods and results: The study included 121 athletes (36±16 years; 48.8% men) with monomorphic PVCs with a RBBB configuration and normal standard clinical investigations who underwent CMR. LGE was identified in 35 patients (29%), predominantly in those with PVCs with a superior/intermediate axis (SA-IntA) compared to inferior axis (IA) (38% vs 10%, p=0.002). Among patients with SA-IntA morphology, the contemporary presence of qR pattern in lead aVR and V1 was exclusively found in patient without LGE at CMR (51.0% vs 0%, p< 0.0001). Among patients with IA, the absence of LGE correlated to a narrow ectopic QRS (145±16 vs 184±27 msec, p< 0.001). Conclusions: Among athletes with apparently idiopathic PVCs with a RBBB configuration, the presence of a concealed LGE at CMR was documented in 29% of cases, mostly in those with a SA-IntA. In our experience, the contemporary presence of qR pattern in lead aVR and V1 in PVCs with RBBB/SA-IntA morphology or, on the other hand, a relatively narrow QRS in PVCs with an IA, predicted absence of LGE
