Kinetics of Oil-in-Water Emulsion Stabilization using Lecithin and Biosilica

Oil-in-water (O/W) emulsion has been widely used in food emulsions such as mayonnaise, dressings, and sauces. However, O/W emulsion is inherently thermodynamically unstable and easily destabilizes with time. Synthetic polymeric emulsifiers have been commonly used to stabilize these emulsions. However, those synthetic emulsifiers may induce obesity and other unexpected side-effects. In this experiment, bio-emulsifier mixtures consisting of soy lecithin and bio-silica were combined to stabilize the o/w emulsion in order to obtain more healthful food emulsions with acceptable quality. Lecithin concentrations were varied from 0.05-1.5% and concentrations of pure bio-silica particles derived from rice husks were in the range of 0.5-3%. The effects of the concentrations of these emulsifier mixtures on the O/W emulsions stability were studied. Additionally, the effects of storage temperatures on the O/W emulsions stability in the presence of both lecithin and bio-silica were investigated. The kinetics parameters of resulting O/W emulsions were analyzed using zero and first order kinetic models. In general, emulsions destabilized with time and followed the first order kinetic model. The destabilization rates of emulsions in the presence of emulsifier mixture would decrease by approximately 25-50% as compared to the destabilization rates of emulsions in the presence of lecithin or bio-silica as their sole emulsifier. Variations of lecithin and bio-silica concentrations in the emulsifier mixtures were not significant to the O/W emulsions stabilization. Furthermore, destabilization rate constants of O/W emulsions stored at the refrigerated temperature were ~2 times lower than those stored at room temperature

ASSISTENCE MEDIA LITERACY FOR YOUTH IN BENGKULU CITY

The background in this paper departs from observations and preliminary data regarding the use of social media by adolescents in Bengkulu City, which is known that they still do not have understanding or knowledge on aspects of Islamic religious norms and legal norms in media use. The purpose of this paper is to provide understanding, information and knowledge for youth in the use of social media, especially in the aspects of religious norms and applicable legal norms. The research method used was a qualitative approach with 30 informants who were determined through a techniquepurposeful sampling. The research results show that: 1). As many as 65% of informants have not used religious norms as a reference in media use; 2). As many as 60% of informants did not know the rules, regulations and legal impacts of media abuse

Kelemahan Material: Analisis Atas Ukuran Pemerintahan dan Belanja Modal Serta Dampaknya terhadap Opini Auditor (Studi pada Kabupaten/ Kota Se-Jawa Tengah)

Good Governance signed with the three main pillars which become the basic element that interlocked with others. The three basic elements are participation, transparency, and accountability. Because of that, the region government has to own an internal controlling system which can form and realize a good governance. In this condition, the total of region income and capital expenditure which become a tool in cotrolling the region's financial become a big role in forming and realizing the good governance. Moreover, the aim of this research is that to analyze whether there is a significance influence between the government size and capital expenditure towards the auditor's opinion in the regent and city in the Central Java Province. This research used 29 regents and 6 cities in the Central Java Province as the sample. The operational data of the variable used the material weakness of internal controlling system and the characteristics of the region government which measured with the total of the region's income and the proportion of capital expenditure toward the total region's charges also auditor's opinion. Moreover, the research's analysis used statistic analysis in descriptive quatitative and inferential statistic using double regrecy analysis and logistic. The result this research proved that there is no significance influence between the government's size and capital expenditure toward the material of internal controlling system's weakness also there is no significance influence between internal controlling system's weakness toward the auditor's opinion

PELATIHAN ANALISIS KUANTITATIF MENGGUNAKAN APLIKASI SMART PLS DAN SEM AMOS BAGI MAHASISWA ADMINISTRASI BISNIS UNIVERSITAS MULAWARMAN

Statistik memiliki peran yang sangat penting dalam penelitian. Dengan meningkatkan pengetahuan statistik, peneliti dapat meminimalkan potensi kesalahan dan meningkatkan kualitas hasil penelitian. Berdasarkan observasi, banyak mahasiswa yang terpaku dengan metode analisis spesifik yang digunakan untuk memproses dan menguji hipotesis penelitian berdasarkan data yang dikumpulkan melalui sebuah kuesioner. Salah satu alasan pengalaman siswa adalah kurangnya pemahaman dan ketidakmampuan dalam mengaplikasikan dan mengolah data dengan metode yang sesuai dengan karakteristik data yang tersedia baik secara teoritis maupun praktis ketika menggunakan perangkat lunak. Pelatihan Smart PLS dan SEM-Amos secara luring ini diselenggarakan sebanyak dua sesi oleh program studi Administrasi Bisnis dan didampingi oleh salah satu dosen Administrasi Bisnis pada tangga 23 sampai 24 Semptember 2022 gedung FISIP Universitas Mulawarman. Metode pelaksanaan kegiatan pelatihan ini menggunakan penyampaian materi melalui metode ceramah dan dipraktekkan secara langsung oleh pemateri dalam penggunakan aplikasi Smart PLS dan SEM-Amos dari awal hingga menghasilkan output dari data penelitian yang dimiliki dan melakukan dikusi interaktif mengenai materi pelatihan. Kegiatan ini dimaksudkan untuk memperkenalkan serta meningkatkan kemampuan dan pemahaman mahasiswa di program studi Administrasi Bisnis Universitas Mulawarman.Oleh karena itu, kegiatan ini juga dapat meningkatkan motivasi mahasiswa untuk melakukan penelitian
