    Desarrollo de un filtrante antioxidante a base de coronta de maíz morado (Zea mays L.)

Doctorado en Ciencia de AlimentosEl objetivo de esta investigación fue desarrollar un filtrante natural antioxidante a base de coronta de maíz morado (Zea mays L.) (CMM) y con inclusión de estevia (E), membrillo (M), canela (C) y clavo de olor (CO). Se evaluó el contenido de antocianinas monoméricas totales (AMT), polifenoles totales (PT) y capacidad antioxidante ORACFL (CA-ORACFL) de los ingredientes, luego se optimizó una fórmula con un diseño de mezcla maximizando CA ORACFL y AMT. En el filtrante óptimo, se evaluó la estabilidad en almacenamiento bajo condiciones aceleradas a 30, 40 y 50 °C combinadas con humedades relativas (HR) de 75 y 85 % por 19 días y se estudió el efecto del consumo en biomarcadores de estrés oxidativo en plasma de voluntarios sanos (divididos en grupo control y de consumo). La fórmula del filtrante óptimo fue (%): 83,62 de CMM, 8,33 de E, 4,47 de M, 3,33 de C y 0,25 de CO. La infusión óptima presentó CA-ORACFL de 9,09 μmol ET/mL y AMT de 97,19 mg EC3G/L. Durante el almacenamiento, el filtrante óptimo permaneció sin variación significativa en PT y color en todas las condiciones de almacenamiento, mientras que AMT y capacidad antioxidante se redujeron significativamente en las condiciones más severas, hasta en un 21,89 y 42,66 % de sus valores iniciales, respectivamente. No se encontró variación significativa del consumo del filtrante en los biomarcadores CAT, SOD, GPx y TEAC, pero sí en CA-ORACPGR y carbonilos de proteínas. Sin embargo, los índices OXY-SCORE en ambos grupos fueron cercanos a cero y no variaron significativamente después de 2 y 4 semanas, indicando un equilibrio entre el sistema de defensa antioxidante y los oxidantes. En conclusión, se desarrolló un filtrante óptimo a base de CMM con propiedad antioxidante demostrada in vitro y que es estable en PT y color en las condiciones aceleradas estudiadas.The objective of this research was to develop a natural antioxidant tea from purple corn cob (Zea mays L.) (PCC) and addition of stevia (S), quince (Q), cinnamon (C) and cloves (Cv). The total monomeric anthocyanins content (TMA), total polyphenols (TP) and antioxidant capacity ORACFL (AC-ORACFL) of the ingredients were evaluated, then a formula was optimized with a mixture design, maximizing AC-ORACFL and TMA. The storage stability under accelerated conditions was evaluated for the optimal tea; at 30, 40 and 50 °C combined with relative humidities (RH) of 75 and 85% for 19 days. The effect of consumption on biomarkers of oxidative stress in plasma of healthy volunteers (divided into control and consumption groups) was studied. The optimal tea had (%): 83.62 PCC, 8.33 S, 4.47 Q, 3.33 C and 0.25 Cv. The optimal infusion presented AC-ORACFL of 9.09 μmol TE/mL and TMA of 97.19 mg C3GE/L. During storage, the optimal tea remained without significant variation in TP and color in all storage conditions, while the TMA and antioxidant capacity were significantly reduced in the most severe conditions, up to 21.89 and 42.66 % of their initial values, respectively. No significant variation in tea consumption was found in the biomarkers CAT, SOD, GPx and TEAC, but it was found in AC-ORACPGR and protein carbonyls. However, the OXY-SCORE indices in both groups were close to zero and did not vary significantly after 2 and 4 weeks, indicating a balance between the antioxidant defense system and oxidants. In conclusion, an optimal PCC-based tea was developed with antioxidant property demonstrated in vitro and that is stable in TP and color under the accelerated conditions studied

    The first measurement of the e+e− pair production at low lepton pair transverse momentum (pT,ee) and low invariant mass (mee) in non-central Pb−Pb collisions at sNN−−−√=5.02 TeV at the LHC is presented. The dielectron production is studied with the ALICE detector at midrapidity (|ηe|<0.8) as a function of invariant mass (0.4≤mee<2.7 GeV/c2) in the 50−70% and 70−90% centrality classes for pT,ee<0.1 GeV/c, and as a function of pT,ee in three mee intervals in the most peripheral Pb−Pb collisions. Below a pT,ee of 0.1 GeV/c, a clear excess of e+e− pairs is found compared to the expectations from known hadronic sources and predictions of thermal radiation from the medium. The mee excess spectra are reproduced, within uncertainties, by different predictions of the photon−photon production of dielectrons, where the photons originate from the extremely strong electromagnetic fields generated by the highly Lorentz-contracted Pb nuclei. Lowest-order quantum electrodynamic (QED) calculations, as well as a model that takes into account the impact-parameter dependence of the average transverse momentum of the photons, also provide a good description of the pT,ee spectra. The measured ⟨p2T,ee⟩−−−−−√ of the excess pT,ee spectrum in peripheral Pb−Pb collisions is found to be comparable to the values observed previously at RHIC in a similar phase-space region

    The ALICE Collaboration reports a new differential measurement of inclusive jet suppression using pp and Pb–Pb collision data at center-of-mass energy per nucleon–nucleon collision sNN=5.02\sqrt{s_{\rm NN}} = 5.02 TeV. Charged-particle jets are reconstructed using the anti-kTk_{\rm T} algorithm with resolution parameters RR = 0.2, 0.3, 0.4, 0.5, and 0.6 in pp collisions and RR = 0.2, 0.4, 0.6 in central (0–10\%), semi-central (30–50\%), and peripheral (60–80\%) Pb–Pb collisions. The analysis uses a novel approach based on machine learning to mitigate the influence of jet background in central heavy-ion collisions, which enables measurements of inclusive jet suppression for jet pT40p_{\rm T} \ge 40 GeV/cc in central collisions at a resolution parameter of RR = 0.6. This is the lowest value of jet pTp_{\rm T} achieved for inclusive jet measurements at RR = 0.6 at the LHC, and is an important step for discriminating different models of jet quenching in the quark-gluon plasma. The transverse momentum spectra, nuclear modification factors, and derived cross section and nuclear modification factor ratios for different jet resolution parameters of charged-particle jets are presented and compared to model predictions. A mild dependence of the nuclear modification factor ratios on collision centrality and resolution parameter is observed.     Symmetry plane correlations in Pb–Pb collisions at √sNN = 2.76 TeV

    A newly developed observable for correlations between symmetry planes, which characterize the direction of the anisotropic emission of produced particles, is measured in Pb-Pb collisions at sNN−−−√=2.76 TeV with ALICE. This so-called Gaussian Estimator allows for the first time the study of these quantities without the influence of correlations between different flow amplitudes. The centrality dependence of various correlations between two, three and four symmetry planes is presented. The ordering of magnitude between these symmetry plane correlations is discussed and the results of the Gaussian Estimator are compared with measurements of previously used estimators. The results utilizing the new estimator lead to significantly smaller correlations than reported by studies using the Scalar Product method. Furthermore, the obtained symmetry plane correlations are compared to state-of-the-art hydrodynamic model calculations for the evolution of heavy-ion collisions. While the model predictions provide a qualitative description of the data, quantitative agreement is not always observed, particularly for correlators with significant non-linear response of the medium to initial state anisotropies of the collision system. As these results provide unique and independent information, their usage in future Bayesian analysis can further constrain our knowledge on the properties of the QCD matter produced in ultrarelativistic heavy-ion collisions

    Measurement of Λ(1520) production in pp collisions at √s = 7 TeV and p–Pb collisions at √sNN = 5.02 TeV

    The production of the Λ(1520) baryonic resonance has been measured at midrapidity in inelastic pp collisions at s√ = 7 TeV and in p-Pb collisions at sNN−−−√ = 5.02 TeV for non-single diffractive events and in multiplicity classes. The resonance is reconstructed through its hadronic decay channel Λ(1520) → pK− and the charge conjugate with the ALICE detector. The integrated yields and mean transverse momenta are calculated from the measured transverse momentum distributions in pp and p-Pb collisions. The mean transverse momenta follow mass ordering as previously observed for other hyperons in the same collision systems. A Blast-Wave function constrained by other light hadrons (π, K, K0S, p, Λ) describes the shape of the Λ(1520) transverse momentum distribution up to 3.5 GeV/c in p-Pb collisions. In the framework of this model, this observation suggests that the Λ(1520) resonance participates in the same collective radial flow as other light hadrons. The ratio of the yield of Λ(1520) to the yield of the ground state particle Λ remains constant as a function of charged-particle multiplicity, suggesting that there is no net effect of the hadronic phase in p-Pb collisions on the Λ(1520) yield
