Bacteriology of cheese V. Defects of blue (Roquefort-Type) cheese
A black discoloration and a musty flavor in blue cheese were attributed to the growth of Hormodendrum olivaceum, particularly in punch holes and cracks in the surface.
Gas formation is of relatively little importance in blue cheese, presumably because of the open texture, which permits the gas to escape, and the unfavorable conditions in the cheese for growth of the common gas-forming organisms. Trials with a culture of Aerobacter aerogenes recently isolated from gassy cheddar cheese showed that inoculations (of the milk) which resulted in very gassy cheddar cheese caused no gas holes or only insignificant numbers in blue cheese.
A defect of blue cheese in which a portion of the edges became soft appeared to be caused by excessive moisture in the softened parts of the cheese. The defect was readily reproduced by placing cheese near a humidifier where free moisture could strike it. Various conditions encountered in curing rooms favor the accumulation of moisture on the cheese and thus may be involved in the defect
An ultra-compact low temperature scanning probe microscope for magnetic fields above 30 T
We present the design of a highly compact High Field Scanning Probe
Microscope (HF-SPM) for operation at cryogenic temperatures in an extremely
high magnetic field, provided by a water-cooled Bitter magnet able to reach 38
T. The HF-SPM is 14 mm in diameter: an Attocube nano-positioner controls the
coarse approach of a piezo resistive AFM cantilever to a scanned sample. The
Bitter magnet constitutes an extreme environment for SPM due to the high level
of vibrational noise; the Bitter magnet noise at frequencies up to 300 kHz is
characterized and noise mitigation methods are described. The performance of
the HF-SPM is demonstrated by topographic imaging and noise measurements at up
to 30 T. Additionally, the use of the SPM as a three-dimensional dilatometer
for magnetostriction measurements is demonstrated via measurements on a
magnetically frustrated spinel sample.Comment: 6 pages, 5 figure
Time use choices and healthy body weight: A multivariate analysis of data from the American Time use Survey
<p>Abstract</p> <p>Background</p> <p>We examine the relationship between time use choices and healthy body weight as measured by survey respondents' body mass index (BMI). Using data from the 2006 and 2007 American Time Use Surveys, we expand upon earlier research by including more detailed measures of time spent eating as well as measures of physical activity time and sedentary time. We also estimate three alternative models that relate time use to BMI.</p> <p>Results</p> <p>Our results suggest that time use and BMI are simultaneously determined. The preferred empirical model reveals evidence of an inverse relationship between time spent eating and BMI for women and men. In contrast, time spent drinking beverages while simultaneously doing other things and time spent watching television/videos are positively linked to BMI. For women only, time spent in food preparation and clean-up is inversely related to BMI while for men only, time spent sleeping is inversely related to BMI. Models that include grocery prices, opportunity costs of time, and nonwage income reveal that as these economic variables increase, BMI declines.</p> <p>Conclusions</p> <p>In this large, nationally representative data set, our analyses that correct for time use endogeneity reveal that the Americans' time use decisions have implications for their BMI. The analyses suggest that both eating time and context (i.e., while doing other tasks simultaneously) matters as does time spent in food preparation, and time spent in sedentary activities. Reduced form models suggest that shifts in grocery prices, opportunity costs of time, and nonwage income may be contributing to alterations in time use patterns and food choices that have implications for BMI.</p
Multiband theory of quantum-dot quantum wells: Dark excitons, bright excitons, and charge separation in heteronanostructures
Electron, hole, and exciton states of multishell CdS/HgS/CdS quantum-dot
quantum well nanocrystals are determined by use of a multiband theory that
includes valence-band mixing, modeled with a 6-band Luttinger-Kohn Hamiltonian,
and nonparabolicity of the conduction band. The multiband theory correctly
describes the recently observed dark-exciton ground state and the lowest,
optically active, bright-exciton states. Charge separation in pair states is
identified. Previous single-band theories could not describe these states or

Perancangan Media Panduan Wisata Kuliner Khas Indonesia Khususnya Warung Makan Kaki Lima Yang Berpotensi Di Surabaya
Surabaya merupakan kota besar sekaligus ibukota dari provinsi Jawa Timur. Surabaya ini memiliki keanekaragaman kuliner baik dari dalam maupun luar daerahnya. Namun seiring dengan perkembangan jaman, muncul banyak sekali restoran dan kafe yang menyajikan berbagai masakan yang berasal dari negara-negara lain yang mampu menarik minat masyarakat kota Surabaya. Sedangkan makanan-makanan khas Indonesia sendiri saat ini kebanyakan hanya berada di depot kecil, maupun warung kaki lima saja. Karena itulah dirancang sebuah panduan yang terdiri dari buku dan website tentang wisata kuliner warung kaki lima yang menjual makanan khas Indonesia di Surabaya. Panduan ini berisi ulasan warung-warung kaki lima yang layak dan berpotensi di Surabaya secara keseluruhan, beserta media pendukung lainnya
Calibrated Sub-Bundles in Non-Compact Manifolds of Special Holonomy
This paper is a continuation of math.DG/0408005. We first construct special
Lagrangian submanifolds of the Ricci-flat Stenzel metric (of holonomy SU(n)) on
the cotangent bundle of S^n by looking at the conormal bundle of appropriate
submanifolds of S^n. We find that the condition for the conormal bundle to be
special Lagrangian is the same as that discovered by Harvey-Lawson for
submanifolds in R^n in their pioneering paper. We also construct calibrated
submanifolds in complete metrics with special holonomy G_2 and Spin(7)
discovered by Bryant and Salamon on the total spaces of appropriate bundles
over self-dual Einstein four manifolds. The submanifolds are constructed as
certain subbundles over immersed surfaces. We show that this construction
requires the surface to be minimal in the associative and Cayley cases, and to
be (properly oriented) real isotropic in the coassociative case. We also make
some remarks about using these constructions as a possible local model for the
intersection of compact calibrated submanifolds in a compact manifold with

Gauge invariant grid discretization of Schr\"odinger equation
Using the Wilson formulation of lattice gauge theories, a gauge invariant
grid discretization of a one-particle Hamiltonian in the presence of an
external electromagnetic field is proposed. This Hamiltonian is compared both
with that obtained by a straightforward discretization of the continuous
Hamiltonian by means of balanced difference methods, and with a tight-binding
Hamiltonian. The proposed Hamiltonian and the balanced difference one are used
to compute the energy spectrum of a charged particle in a two-dimensional
parabolic potential in the presence of a perpendicular, constant magnetic
field. With this example we point out how a "naive" discretization gives rise
to an explicit breaking of the gauge invariance and to large errors in the
computed eigenvalues and corresponding probability densities; in particular,
the error on the eigenfunctions may lead to very poor estimates of the mean
values of some relevant physical quantities on the corresponding states. On the
contrary, the proposed discretized Hamiltonian allows a reliable computation of

Differential Dynamic Microscopy of Bacterial Motility
We demonstrate 'differential dynamic microscopy' (DDM) for the fast, high
throughput characterization of the dynamics of active particles. Specifically,
we characterize the swimming speed distribution and the fraction of motile
cells in suspensions of Escherichia coli bacteria. By averaging over ~10^4
cells, our results are highly accurate compared to conventional tracking. The
diffusivity of non-motile cells is enhanced by an amount proportional to the
concentration of motile cells.Comment: 4 pages, 4 figures. In this updated version we have added simulations
to support our interpretation, and changed the model for the swimming speed
probability distribution from log-normal to a Schulz distribution. Neither

Application of advanced technologies to small, short-haul aircraft
The results of a preliminary design study which investigates the use of selected advanced technologies to achieve low cost design for small (50-passenger), short haul (50 to 1000 mile) transports are reported. The largest single item in the cost of manufacturing an airplane of this type is labor. A careful examination of advanced technology to airframe structure was performed since one of the most labor-intensive parts of the airplane is structures. Also, preliminary investigation of advanced aerodynamics flight controls, ride control and gust load alleviation systems, aircraft systems and turbo-prop propulsion systems was performed. The most beneficial advanced technology examined was bonded aluminum primary structure. The use of this structure in large wing panels and body sections resulted in a greatly reduced number of parts and fasteners and therefore, labor hours. The resultant cost of assembled airplane structure was reduced by 40% and the total airplane manufacturing cost by 16% - a major cost reduction. With further development, test verification and optimization appreciable weight saving is also achievable. Other advanced technology items which showed significant gains are as follows: (1) advanced turboprop-reduced block fuel by 15.30% depending on range; (2) configuration revisions (vee-tail)-empennage cost reduction of 25%; (3) leading-edge flap addition-weight reduction of 2500 pounds
