Alimentação popular em São Paulo (1920 a 1950): políticas públicas, discursos técnicos e práticas profissionais

This article discusses how the concept of lower-class eating habits came about and developed in the intellectual circles of São Paulo during the first half of the 20th century. It starts by reconstructing the elements of the debate around the income and ignorance of the underprivileged as the main reasons behind their bad eating habits. Then, it looks at the focal points for interventions and public policies proposed by the government to deal with the problem thus identified, namely: training methods to produce sanitation counselors capable of offering dietary guidance as well; popular educational campaigns and new learning sites in addition to schools (e.g. healthcare centers and households); lunch and other means of offering food at schools; and diagnostic studies about food intake and eating habits among laborers. Because they were translated into technical and scientific language, the proposals and policies implemented in São Paulo left traces in a variety of supporting documents and media (photographs, primers, posters, inquiry notebooks, and academic literature).O artigo discute a construção da idéia de alimentação popular nos meios intelectuais em São Paulo, na primeira metade do século XX. Para isso, reconstitui, como motivos da má alimentação, elementos do debate em torno da renda e da ignorância dos mais pobres. Identificado o problema, as propostas de intervenção e as políticas públicas concentraram-se em alguns setores, abordados neste trabalho: métodos para a formação de educadores sanitários aptos a atuar também na educação alimentar; campanhas de instrução popular e criação de novos lugares de aprendizado (além das escolas, os centros de saúde e os lares); merenda escolar e outras alternativas de alimentação nas escolas; e diagnósticos referentes ao conteúdo e à forma da alimentação dos operários. Com o objetivo de debater o surgimento do campo de saber em alimentação e nutrição no Brasil, em termos de produção científica, tomou-se como objeto obras produzidas e publicadas entre 1934 e 1941, voltadas para difusão e aplicação da base conceitual e metodológica da alimentação racional. Tendo como referencial a teoria sobre a gênese social de campo, o estudo evidenciou a padronização de abordagem e do modus operandi dos intelectuais da área: a indicação de práticas intervencionistas de educação alimentar e nutricional destinadas a grandes contingentes, influenciadas por ideais socioeducacionais da época e pela ideia de educação como instrumento de redenção social.<br>In exploring the emergence of scientific scholarship on the field of eating and nutrition in Brazil, the article examines works produced and published from 1934 to 1941 that disseminated and sought to encourage application of the conceptual and methodological bases of rational eating. Employing theory on the social genesis of a field, the investigation reveals that intellectuals in the area relied on a standardized approach and modus operandi: the indication of interventionist practices in eating and nutritional education which targeted large numbers of people and were influenced by the era's social and educational ideas and by the notion of education as a tool for social redemption

Uma história das práticas alimentares de trabalhadores paulistanos em dois momentos do século XX A history of practices in nourishment among workers in São Paulo city in two moments of the 20th century

A partir de uma discussão sobre estudos que lidaram com os temas alimentares nas Ciências Humanas, este artigo aponta as possibilidades das Pesquisas de Padrão de Vida como fontes para uma história social da alimentação entre trabalhadores que viviam em São Paulo durante a primeira metade do século XX. Apresento os métodos de aplicação, as intenções dessas pesquisas e o perfil das famílias. Em seguida, os produtos e as quantidades consumidas pelas famílias são analisados em temporalidades distintas, tentando verificar o impacto da industrialização, da renda e da propaganda.<br>Based on studies about food issues in the Humanities, this article indicates the possibilities of the Living Standards Research as sources for a social history of nourishment between workers living in Sao Paulo during the first half of the 20th century. I present the methods of application, the intentions of this research and the profile of families analyzed. After, I analyze the products and quantities consumed by families in different times, trying to understand the impact of industrialization, wage income and advertisement
