    Preparación de películas para alimentos a partir de concentrados proteicos de haba (vicia faba)

    El trabajo se planeó con el objeto de evaluar la factibilidad de utilizar concentrados proteicos de haba en la preparación de películas para recubrir alimentos, utilizando como patrón de comparación películas preparadas con albúmina fresca de huevo.Los resultados muestran que utilizando concentrados proteicos de haba sin deshidratar, en suspensiones que contengan 5 g de proteína por 100 g de agua, y adicionando glicerol como agente plastificante,se pueden obtener películas cuyas características de permeabilidad alvapor de agua, solubilidad y contenido de agua dependen de las condiciones de secado del material

    Efecto de la acetilación sobre las propiedades funcionales y nutricionales de almidones de haba (vicia faba)

    Se analizaron algunas propiedades funcionales del almidón de haba (Vicia faba), con dos niveles de proteína -12,89% y 4,41%-, obtenido por fraccionamiento por vía húmeda de las semillas secas. Se comparan el secado en rodillos y la liofilización como métodos para deshidratar la muestra, así como las propiedades funcionales del almidón antes y después de acetilarlo con anhídrido acético. También se investigaron ciertas propiedades de interés nutricional con el fin de observar la influencia de la modificación química en la biodisponibilidad del almidón de haba. Se realizó la determinación de almidón total, almidón resistente por retrogradación (AR3), almidón disponible y la velocidad de hidrólisis enzimática en el almidón nativo y en el modificado.Sorne functional properties of the faba (Vicia faba) starch were analyzed. The faba starch had two protein levels:12,89 % and 4,41 %. It was obtained by fractionation by wet process of the dry seeds; it was compared the drying in rollers and the freeze-drying as methods to dehydrate the sample, as well as their functional properties before and after acetylated with acetic anhydride. Certain properties of nutritional interest were also investigated with the purpose of ascertaining the influence of the chemical modification in the bioavailability of the bean starch.     Primary and Secondary Immunodeficiency Diseases in Oncohaematology: Warning Signs, Diagnosis, and Management

Early diagnosis and management have significant prognostic implications. Secondary immunodeficiencies (SID) may also be induced by oncohaematological diseases and their treatments. Haematologists and oncologists must therefore be aware of the association between blood disorders and cancer and ID, and be prepared to offer their patients appropriate treatment without delay. Our aim was to define the warning signs of primary and secondary IDs in paediatric and adult patients with oncohaematological manifestations. Methods: A multidisciplinary group of six experts (2 haematologists, 2 immunologists, and 2 paediatricians specializing in ID) conducted a literature review and prepared a document based on agreements reached an in-person meeting. An external group of 44 IDs specialists from all over Spain assessed the document and were consulted regarding their level of agreement. Results: This document identifies the haematological and extra-haematological diseases that should prompt a suspicion of PIDs in adults and children, in both primary care and haematology and oncology departments. Cytopenia and certain lymphoproliferative disorders are key diagnostic pointers. The diagnosis must be based on a detailed clinical history, physical exploration, complete blood count and standard laboratory tests. The immunological and haematological tests included in the diagnostic process will depend on the care level. Patients who are candidates for immunoglobulin replacement therapy must be carefully selected, and treatment should be offered as soon as possible to avoid the development of complications. Finally, this document recommends procedures for monitoring these patients. Conclusions: This document combines scientific evidence with the opinion of a broad panel of experts, and emphasizes the importance of an early diagnosis and treatment to avoid complications. The resulting document is a useful tool for primary care physicians and specialists who see both adult and paediatric patients with oncohaematological diseases

    Propuesta de economía solidaria con base a los factores productivos de una propiedad horizontal ubicada en el sector de la Cabrera en la ciudad Bogotá

    El presente proyecto de investigación es una propuesta de economía social solidaria con base a los factores productivos (tierra, trabajo, capital y capacidad empresarial) existentes en una propiedad horizontal. Se toma como caso de estudio un conjunto residencial de estrato 6 ubicado en el sector de la Calabria al norte de Bogotá. A través del análisis financiero del estado de situación financiera comparativo entre los años 2018 y 2019 se encuentra que la fuente de financiación de esta copropiedad son sus pasivos corrientes expuestos en las cuotas de administración que para dichos años presenta saldos negativos por el no pago de estas. La falta de ingresos de este rubro hace que la copropiedad sea insostenible económicamente. En vista de lo anterior los autores consultan en relación a la literatura expuesta y la ley 675 de 2001 a economistas, contadores, administradores y abogados especialistas en el tema de propiedad horizontal sobre la posibilidad de crear un modelo de economía social solidaria el cual permita mejorar los indicadores financieros (liquidez, eficiencia, rentabilidad, endeudamiento, viabilidad y solvencia) de la propiedad horizontal y a su vez responder a las necesidades sociales y económicas de un sector con escenario de desigualdad y pobreza oculta.This presentation is a proposal for a solidarity economy based on the productive factors (land, labor, capital and technology) existing in a horizontal property. The case study is a stratum 6 residential complex located in the Calabria sector north of Bogotá. Through the analysis of the structure and trend of the statement of comparative financial position between the years 2018 and 2019, it is found that the source of financing of this joint ownership is its current liabilities exposed in the administration fees that for those years presents negative balances due to the no payment of these. The lack of income from this item makes co-ownership economically unsustainable. Taking into account the above, the ACTIVOS ECACEN Assets hotbed, an analysis of the literature was developed to characterize the different problems, ideas found in different texts were contrasted and then a Delphi-type instrument was applied to 32 residential complex administrators in an attempt to collect information and deepen on the problems that affect the community that lives in units subject to the horizontal property regime

    Characterisation and antimicrobial activity of active polypropylene films containing oregano essential oil and Allium extract to be used in packaging for meat products

    Cooked ham is more prone to spoilage than other meat products, making preservation a key step in its commercialisation. One of the most promising preservation strategies is the use of active packaging. Oregano essential oil (OEO) and Proallium® (an Allium extract) have previously been shown to be useful in polylactic acid (PLA)-active films for ready-to-eat salads. The present work aims to study the suitability of polypropylene (PP) films containing OEO and Proallium® in the preservation of cooked ham. Concerning the technological features of the studied material, no significant changes in the mechanical or optical properties of PP films containing the active substances were recorded in comparison to the PP film without extracts. However, films containing both active substances were more flexible than the control film and less strong, highlighting the plasticisation effect of the natural extracts. Moreover, physical properties changed when active substances were added to the film. Incorporation of 4% Proallium® affected the transparency of the film to a higher extent compared to 8% OEO, undergoing decreases in transparency of 40% and 45%, respectively. Moreover, only the film containing the highest amount of OEO (8%) significantly decreased the thickness. Both active substances showed antibacterial properties; however, Proallium®-active films seemed to be more effective against Brochothrix thermosphacta than PP films containing OEO, with all percentages of Proallium® killing the bacterial population present in the ham after 60 days. In addition, materials containing the lowest Proallium® content exhibited higher acceptability by consumers in the sensory analyses with 63–100% willing to purchase, better even than the control package (56–89%).     Influence of the COVID-19 Pandemic on the Lifestyles of Health Sciences University Students in Spain: A Longitudinal Study

    The COVID-19 pandemic has significantly impacted daily activities worldwide. University students may have experienced substantial changes in daily living as a result of restrictions on university attendance. The return to normalcy may take a long time, and understanding the influence that shifts in daily routines have had on the lifestyles of university students may inform approaches to support overall well-being. We analyzed changes in the lifestyles of students enrolled at a health sciences university during the COVID-19 pandemic. This longitudinal study took place at the Faculty of Medicine and Nursing in the University of the Basque Country in Spain, and the final sample consisted of 113 nursing students, 109 medical students, and 45 physiotherapy students. Our results demonstrate changes in lifestyles of university students during the pandemic. MedDiet adherence scores and the percentage of students with high adherence increased during the pandemic. This increase was due to the increased consumption of vegetables and nuts. In terms of physical activity, the practice of moderate and intense physical activity was maintained. These results provide important information for both public health authorities and educational institutions to guide strategies to maintain the well-being of students and enhance opportunities for young adults to lead a healthy lifestyle.This research was funded by the Official College of Nursing of Gipuzkoa (COEGI), grant number S0040/2020
