Nutritional contribution of berries while fighting oxidative stress
Stres je prisutan u svakom organizmu, stoga je nužna ravnoteža izmeÄu proizvodnje slobodnih radikala i unosa antioksidanasa. Organizam najbolje iskoriÅ”tava nutrijente iz prirodnih izvora tj. hrane, a slabije iz dodataka prehrani. Å umsko voÄe nudi bogatstvo vitamina, mineralnih tvari i fitokemikalija od kojih veÄina imaju antioksidacijska svojstva. Cilj je rada bio ispitati udio ukupnih fenola (UF) i Briggs-Rauscherovom metodom odrediti antioksidacijsku aktivnost (AOA) Å”umskog voÄa (jagode, kupine, maline, borovnice i crveni ribizl) te dodatka prehrani vitamina C. Prilikom ekstrakcije fenolnih spojeva primijenjene su dvije metode: refluksiranje i ekstrakcija u ultrazvuÄnoj kupelji. TakoÄer se provela kolorimetrijska analiza uzoraka. Rezultati ukazuju na najveÄu koncentraciju UF u uzorku dodatka prehrani vitamina C, ali i najmanju AOA istog uzorka. KoriÅ”teni su jednostavni regresijski modeli kako bi se ustanovilo postoji li linearna povezanost ispitivanih parametara. Prema navedenom modelu, koncentracija UF Å”umskog voÄa je u pozitivno linearnoj vezi s AOA izraženoj kao BriggsRaucherov antioksidacijski indeks. Kolorimetrijska analiza pokazala je da tamniji i viÅ”e plavo-zeleni ekstrakti imaju jaÄu AOA od onih svjetlijih i žuto-crvenih. Rezultati t-testa i ANOVA pokazuju da ne postoje signifikantne razlike izmeÄu uzoraka dobivenih razliÄitom metodom ekstrakcije (p > 0,05).The balance between the production of free radicals and antioxidant intake is very important because of the stress that is present in every organism. Human body utilizes better the nutrients from natural sources, i.e. food, then from supplements. Wild berries offer a range of vitamins, minerals and phytochemicals, and the most of them have antioxidant properties. The aim of this work was to examine the berries (strawberries, blackberries, raspberries, blueberries and red currants) and supplements of vitamin C, by determining the share of total phenols (TP) and the antioxidant activity (AOA) using the Briggs-Rauscher's method. In the extraction were used two methods: with reflux and using ultrasound. Also was conducted a colorimetric analysis of the samples. The results indicate the highest concentration of TP in the vitamin C (supplement sample) that had also the smallest AOA. Simple regression models were used to identify if some correlation between the measured variables can be detected. According to such model, the concentration of TP in berries is positively correlated with the AOA expressed as Briggs-Rausher antioxidant activity index. Colorimetric analysis showed that the darker and extracts with domination of blue-green color have more antioxidant power than the lighter and yellow-red samples. The results of t-test and ANOVA showed no significant differences between the sample extraction (p > 0,05)

Ochratoxin a impact on sensory evaluation of some meat products
Mikotoksini predstavljaju znaÄajan problem u hranidbi svinja. Kao sekundarni metaboliti plijesni, toksiÄne su tvari koje negativno utjeÄu na zdravlje i proizvodnost životinja te na kakvoÄu njihovih proizvoda. Kontaminacijom hrane za svinje Aspergillus ochraceusom, Penicillium viridicatumom i Penicillium Verrucosumom, okratoksin A je dospio u tkiva svinje koja je kasnije upotrijebljena kao sirovina za izradu suhomesnatih proizvoda. Testom usporeÄenja u paru pokuÅ”ali smo utvrditi postoje li razlike u senzorskim karakteristikama izmeÄu kontrolnih i kontaminiranih uzoraka. Pratili smo boju, miris i konzistenciju. Utvrdili smo da postoje znaÄajne razlike izmeÄu uzoraka, ali u sklopu rezultata treba uzeti u obzir i problematiku domaÄe proizvodnje mesnih proizvoda.Mycotoxins are a significant problem in feeding of pigs. As secondary metabolites of molds, they are toxic substances that negatively affect the health and productivity of animals and the quality of their products. Thru contamination of food for pigs with Aspergillus ochraceus, Penicillium viridicatum and Penicillium verrucosum, the ochratoxin A got into pig tissue, which was later used as feedstock for the production of meat products. Using the paired comparison test we tried to determine whether there are differences in sensory characteristics between control and contaminated samples. We have monitored the color, smell and consistency. We found that there are significant differences between samples, but the results should take into account the issue of domestic production of meat products

Near-Infrared Spectroscopic Analysis of Total Phenolic Content and Antioxidant Activity of Berry Fruits
This study evaluates the feasibility of using near-infrared (NIR) spectroscopy as a rapid and environmentally friendly technique for validation and prediction of the total phenolic content (TPC) and antioxidant activity (AOA) indices (as 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging, inhibition time (IT) of the Briggs-Rauscher oscillating reaction, and relative antioxidant capacity (RAC)) of berry fruit extracts. The analysed berry samples originated from Croatia (blackberries, wild blueberries, raspberries, red currants and strawberries) and Bulgaria (wild blueberries, raspberries and strawberries). Principal component analysis and partial least squares (PLS) regression were used from the set of chemometric tools in distinguishing and validating the measured berry fruit extract. ANOVA and PCA showed no significant impact of the origin and freshness of the samples. PLS models were developed to validate the relationship of NIR spectra with TPC and AOA of berry fruits. Representativeness of the models was expressed with the R2 and the ratio of performance to deviation. Calculated R2 values were above 0.84 and the ratio of performance to deviation was between 1.8 and 3.1, indicating adequacy of the PLS models
