Factores vinculados a la competitividad de la cadena de suministro de la malanga en Veracruz, México.
The competitiveness of any agricultural product depends on the efficiency of the supply chain. Until now, the competitiveness factors of the taro (Colocasia esculenta (L.) Schott) supply chain have remained undetermined. The issue in terms of research lies in the lack of studies concerning taro supply chain competitiveness and associated factors. The objective was to determine the factors associated with the competitiveness of the taro supply chain and define a competitiveness model. Competitiveness was assessed, based on three key factors: production management (PM), administrative management (AM) and business performance (BP). A questionnaire was applied to 47 people involved in the supply chain. We found a significant relationship between the discerned factors and variables. The variables related to competitiveness were: proximity to importing countries and ability to obtain high yields. PM (0.845**), AM (0.756**) and BP (0.717**) manifested highly significant correlation (P < 0.05, two-sided). The overall competitiveness value for the taro supply chain was 6.3. The factors that contribute most to competitiveness are non-economic, such as production capacity, demand estimate, flexibility and sales planning. Economic factors, totally beyond the control of chain agents include: production costs, distribution and international prices. We concluded that three factors involved in the taro supply chain accord it competitive advantage.La competitividad de cualquier producto agrícola depende de las fortalezas de la cadena de suministro. A la fecha se desconocen los factores de competitividad de la cadena de suministro de malanga (Colocasia esculenta (L.) Schott). El problema de investigación radica en la falta de estudios sobre la competitividad de la cadena de suministro de malanga y los factores asociados. El objetivo fue determinar los factores asociados a la competitividad de la cadena de suministro de malanga y esbozar un modelo de competitividad. La competitividad se operacionalizó en base a tres factores clave: gestión de la producción (GP), gestión administrativa (GA) y desempeño empresarial (DE). Se aplicó un cuestionario a 47 a involucrados en la cadena de suministro. Se encontró una relación significativa entre factores y variables incluidas. Las variables relacionadas a la competitividad fueron: cercanía a los países importadores y capacidad para obtener altos rendimientos. GP (0,845 **), GA (0,756 **) y DE (0,717 **) con una correlación altamente significativa (P <0,05, bilateral). El valor general de competitividad para la cadena de suministro de malanga fue de 6.3. Los factores que más contribuyen a la competitividad son los no económicos como la capacidad de producción, la estimación de la demanda, la flexibilidad y la planificación de ventas. Los factores económicos que los agentes de la cadena no pueden controlar en absoluto son: costos de producción, distribución y precios internacionales. Se concluye que en la cadena de suministro de malanga participan tres factores que le aportan ventajas competitivas
Waste of Fruits, Vegetables and Aromatic Herbs in the wholesale market of Xalapa, Veracruz, Mexico
Objective: To estimate the waste of fruits, legumes and herbs in the Xalapa wholesale market Central de Abasto Xalapa (CAX).
Design/methodology/approach: The tenants and transporters of the wholesale market were interviewed, who estimated the reported information.
Results: It was calculated a daily waste 1.7 t (0.7 %) of fruits, legumes and aromatic herbs commercialized in CAX. Tenants unknown the factors that cause this waste.
Limitations on study/implications: Few reports are available on the waste of fruits, vegetables and herbs in the wholesale markets in the country. Little awareness exists about this problem in the country.

Producción y comercialización de malanga (Colocasia esculenta (L.) Shott) en Actopan, Veracruz, México: Perspectiva de cadena de valor
Objective: To analyze the production and marketing of taro in Actopan, Veracruz,Mexico, with a value chain approach.Design/methodology/approach: Official databases were assessed and 28questionnaires were applied to producers and seven to representatives of packingcompanies, with a value chain approach.Results: fifty percent of producers interviewed are of small-scale (0.5-3 ha) withaverage annual yields of 50 t ha -1 . The main problems faced are: high prices foragricultural inputs, low market prices, pests and diseases. The commercialization ofthe product is done through retail and wholesale gatherers in the region. There areno purchase-sale contracts, the agreements are verbal. The packing companies are
2in charge of carrying out the process of clean assembly, selection, disinfection,labeling, packaging and distribution. Ninety percent of the fresh taro market is for theUnited States.Limitations on study/implications: Taro producers lack a government agency torepresent them, for example the product-system; therefore, the information onproduction, costs and wholesale prices is limited and dispersed.Findings/conclusions: The production and commercialization of taro is of greateconomic and social importance. It generates economic income and temporary jobsthroughout the year. It has relatively low production costs and high performance. Ingeneral, it benefits economic agents in the value chain. However, the lack oforganization of producers does not allow them to use economies of higher scale,access to preferential markets and high prices paid to the producers.Objetivo: Analizar la producción y comercialización de malanga en Actopan, Veracruz, México, con enfoque de cadena de valor.Diseño/metodología/aproximación: Se consultaron bases de datos oficiales y se aplicaron 28 cuestionarios a productores y siete a representantes de empresas empacadoras, con enfoque de cadena de valor.Resultados: El 50% de productores entrevistados son de pequeña escala (0.5-3.0 ha) con rendimientos promedio anual de 50 t ha -1 . Los principales problemas que estos productores enfrentan son: altos precios de insumos agrícolas; bajos precios de mercado del producto; plagas y enfermedades. La comercialización del producto se realiza a través de acopiadores minoristas y mayoristas de la región; no existen contratos de compra y venta, los acuerdos son de palabra. Las empresas 3 empacadoras se encargan de realizar el proceso de maquila: limpia, selección, desinfección, etiquetado, empaque y distribución. El 90% del mercado de la malanga en fresco es para Estados Unidos.Limitaciones del estudio/implicaciones: Los productores de malanga carecen de un organismo gubernamental que los represente, entonces, la información de producción, costos y precios al mayoreo es limitada y dispersa.Hallazgos/conclusiones: La producción y comercialización de malanga es de gran importancia económica y social, genera ingresos económicos y empleos temporales durante todo el año; tiene costos de producción relativamente bajos y alto rendimiento. En general beneficia a los agentes económicos de la cadena de valor. Sin embargo, la falta de organización de los productores no les permite utilizareconomías de escala, acceso a mercados preferentes y altos precios pagados al productor

Mercados regionales de Huixcolotla y Zacapoaxtla, Puebla : un enfoque de desarrollo rural.
El presente estudio es resultado del análisis de información obtenida mediante cuestionarios y entrevistas estructuradas, directamente de los agentes económicos que participan en el proceso de producción y comercialización de productos agrícolas en la región que impacta al mercado de Huixcolotla y Zacapoaxtla, Puebla. El trabajo de campo se llevó a cabo en los años 2010 y 2011. Es un estudio explicativo que persigue profundizar en el conocimiento de dichos mercados con respecto a las áreas de abasto, productos agrícolas que se producen y comercializan, costos de producción y comercialización, agentes económicos, municipios que lo abastecen, factores que han influido en su desarrollo y su impacto en el desarrollo rural. El análisis se centra en seis municipios y cultivos por cada región. Para Huixcolotla se eligieron las hortalizas más representativas de la zona y para Zacapoaxtla granos, tubérculos y frutales, tomando en cuenta superficie sembrada y el valor de producción. Los resultados indican que ambos mercados son un catalizador para que haya un proceso de desarrollo rural en cada una de las regiones. Comparándolos, Huixcolotla genera más empleos, mayor inversión en la compra de insumos agrícolas, mejores ingresos y cantidad de alimentos; sin embargo, si no fuera por la presencia de ambos mercados rurales, los productores no tendrían oportunidad de obtener ingresos y la actividad económica sería escasa. _______________ REGIONAL MARKETS HUIXCOLOTLA AND ZACAPOAXTLA, PUEBLA: RURAL DEVELOPMENT APPROACH. ABSTRACT: This study is the result of the analysis of information gathered through questionnaires and structured interviews, the operators directly involved in the process of production and marketing of agricultural products in the region that impacts the market and Zacapoaxtla Huixcolotla, Puebla. Fieldwork was conducted in 2010 and 2011. It is an exploratory study that aims to deepen the knowledge of these markets over the areas of supply, agricultural products are produced and sold, costs of production and marketing, operators, municipalities that supply, factors that have influenced its development and their impact on rural development. The analysis focuses on six municipalities and crops for each region. To Huixcolotla vegetables were chosen most representatives of the area and to Zacapoaxtla grains, tubers and fruit, taking into account acreage and value of production. The results indicate that both markets are a catalyst for there to be a process of rural development in each of the regions. Factores que influyen en la calidad y decisión de compra de carne res en Chiapas, México
In recent years, the competitiveness of the livestock sector has increased. This has led the marketers to purchase the beef from local suppliers, subsequently they are slaughtered on the private trail and marketed in their own butcher shop; the slaughter is carried out without taking care of good hygiene and sanitation practices within the process. In relation to local butchers, cattle are slaughtered on the municipal trail, even on clandestine trails where they do not have the minimum standards of quality and hygiene, so they resort to price competition to attract customers. The main objective for this study was to know the factors that determine the choice of the purchase of beef by the housewives of the city of Huehuetán, Chiapas, Mexico. This was achieved through an exploratory‐descriptive research where 73 housewives were interviewed by convenience. The results showed that texture, price and service accessibility by employees are the most important factors in the choice of purchase. We recommend traininig employees in customer service and good handling practices.En los últimos años se ha incrementado la competitividad dentro del sector ganadero. Esto ha llevado a los comercializadores a adquirir carne de res con proveedores locales, quienes sacrifican a las reses cuidando buenas prácticas de higiene y sanidad, dentro de rastros privados. En relación a las carnicerías locales, el ganado es faenado en el rastro municipal, incluso en rastros clandestinos donde no se cuentan con los más mínimos estándares de calidad e higiene, por lo que recurren a la competencia desleal en precios para atraer clientes. La razón de ser de este estudio fue conocer los factores que determinan la elección de la compra de la carne por parte de las amas de casa de la ciudad de Huehuetán, Chiapas, México. Esto se logró mediante una investigación tipo exploratoria–descriptiva a un total de 73 amas de casa, seleccionadas por conveniencia. Los resultados muestran que la textura de la carne (suavidad), el precio y la accesibilidad en el servicio por parte de los empleados son los factores más importantes en la elección de compra. Se recomienda a las carnicerías de la localidad, brindar capacitación a quienes las atienden en servicio al cliente, además de buenas prácticas de higiene
Análisis de producción y comercialización hortícola del estado de Puebla: un enfoque de cadena de valor
The value of agricultural production in the State of Puebla ranks sixth nationally. However, the benefits for vegetable growers in the region have not been expected largely due to the absence of middlemen and analyses related to the value chain, logistics and supply chain. This study collected information from various actors in the value chain of production-marketing of vegetables in four municipalities in the District Rural Development of Tecamachalco, Puebla, Mexico. Using a mixed research approach (functional methodology, value chain and LEADER), supplemented with other exploratory, descriptive and cross-range identified and analysed the agents of the chain (external services, production-harvest and marketing). In autumn 2013 survey structured to 165 producers with "limited market attachment, transition and fragile profitability" on four vegetables were applied. The three links do not work under the horizontal and vertical approach. The redesign of this chain could optimize the distribution and accessibility of food, reduce wastage with the respective increase their competitiveness, income levels and food security.El valor de la producción agroalimentaria del estado de Puebla ocupa el sexto lugar a nivel nacional. Sin embargo, los beneficios para los productores de hortalizas de la región no han sido los esperados en gran medida debido al intermediarismo y ausencia de análisis relacionados a la cadena de valor, logística y cadena de suministro. El presente estudio recopiló la información de algunos agentes que participan en la cadena de valor de la producción- comercialización de hortalizas en cuatro municipios del Distrito de Desarrollo Rural de Tecamachalco, Puebla, México. Producción de flores y uso de recursos naturales en Zinacantán, Chiapas
La superficie destinada a producir cultivos básicos
tradicionales cambia a otros comerciales: hortalizas y
flores, contribuyen a la creación de ingresos y empleos. Su
instalación, requiere de invernaderos para evitar daños a
las flores, deforestar bosques para su instalación; utilizan
agroquímicos; provocan basura y generan altos costos para
la producción. El objetivo de la investigación es analizar
la sustentabilidad del sistema de producción de flores y su
importancia para las familias campesinas de Zinacantán,
Chiapas. El trabajo de campo se realiza en el ciclo agrícola:
invierno-primavera-verano (2015-2016) en la cabecera
municipal de Zinacantán. Metodología con enfoque mixto
(cualitativo y cuantitativo); el cualitativo con técnicas de
investigación social; y cuantitativo, se aplica un cuestionario a
productores de flores (81), usando el marco para la evaluación
de manejo de recursos naturales incorporando análisis de
sustentabilidad (MESMIS). Resultados obtenidos indican que
de los indicadores propuestos para la evaluación sustentable
(17), indicadores (11) tienen un índice mayor a 50% ayuda
a fortalecer el sistema y seis lo debilitan. La producción no
es sustentable por deterioro y contaminación de recursos
naturales; campesinos entrevistados conocen los problemas
ocasionados con la producción hacía los recursos naturales;
son muy pocas actividades que realizan para su cuidado. Se
concluye que la producción de flores es una a producción no
sustentable, es importante para las familias campesinas porque
les genera ingresos.The area destined to produce traditional basic crops
changes to other commercial ones: vegetables and flowers,
contributing to the creation of income and jobs. Its
installation, requires greenhouses to avoid flowers damage,
deforesting forests; using agrochemicals; causing waste
and generating high costs of production. The objective
of this research was to analyze the sustainability of the
flower production system and its importance for the peasant
families of Zinacantán, Chiapas. The field work was carried
out in the agricultural cycle: winter-spring-summer (2015-
2016) in the municipality of Zinacantán. A methodology
with mixed approach (qualitative and quantitative); the
qualitative one with social research techniques; and
quantitative one using a questionnaire that was applied
to flower producers (81), using the framework for the
evaluation of natural resources management incorporating
sustainability analysis (MESMIS). Results obtained
indicate that of the indicators proposed for sustainable
evaluation (17), indicators (11) have an index greater than
50% help to strengthen the system and six of them weaken
it. Production is not sustainable due to deterioration and
contamination of natural resources; peasants interviewed
know the problems caused by the production of natural
resources; and there are very few activities they do in order
to take care of it. It is concluded that flower production is a
non-sustainable production and it is important for peasant
families because it generates income
