    Overview of the incorporation of legumes into new food options : an approach on versatility, nutritional, technological, and sensory quality

    Consumers are more aware and demanding of healthy food options, besides being concerned with environment-friendly consumption. This paper aims to evaluate nutritional, technological, and sensory characteristics of legumes and their products’ quality and versatility, considering potential applications in new food options. Legumes are foods that have a recognized nutritional group since they have high protein and fiber content. However, their consumption is still somehow limited for some reasons: in some countries it is not easy to find all the species or cultivars, they need an organization and planning before preparation since they need soaking, and there is the presence of antinutritional factors. Due to the different functionalities of legume proteins, they can be applied to a variety of foods and for different purposes, as grains themselves, aquafaba, extracts, flours, brans, and textured proteins and sprouts. These products have been inserted as ingredients in infant food formulations, gluten-free foods, vegetarian diets, and in hybrid products to reduce food costs as well. Foods such as bread, cakes, cookies, meat analogues, and other baked or cooked products have been elaborated with nutritional, technological and sensory quality. Further development of formulations focused on improving the quality of legume-based products is necessary because of their potential and protein quality

    Influence of the amount and type of whey protein on the chemical, technological, and sensory quality of pasta and bakery products

    In addition to being an important source of nutrients, pasta and bakery products are consumed globally and so there is a growing need to study them in addition to other ingredients such as whey proteins. These dairy proteins are intended to improve the quality of these foods, as they have important nutritional, technological, and sensory properties that can be exploited. The importance of new formulations in the quality features of pasta and bakery products and gaining an understanding of how the ingredients can interfere with these foods are described. A summary of the latest progress in the application of whey protein in bakery products, as well as their types and quantities from a physicochemical and sensory point of view, is presented. This review was reported following PRISMA recommendations and included articles (n = 32) from scientific journals that evaluated the use of whey protein in bakery products over the past ten years. More than half of the authors (n = 20) used WPC, likely due to its nutritional composition, cost, and easy access. Cake formulations were those with the highest amounts of whey protein, unlike researchers who made bread and pasta, possibly due to the fragility of these preparations. The addition of whey proteins modified the physical characteristics and improved the chemical composition of the bread. However, at higher concentrations (≥30%), they caused damage to the texture characteristics

    Emotional eating : historical narrative and a current panorama

    Introdução: A ingestão alimentar quando utilizada para lidar com emoções negativas, como forma de resposta as mesmas, chama-se de alimentação emocional. Objetivo: Demonstrar o histórico e direcionamento das pesquisas relacionadas ao tema alimentação emocional. Materiais e métodos: Revisão narrativa da literatura realizada nas bases de dados eletrônicos (Pubmed e Scielo), utilizando os descritores: “alimentação emocional”, “restrição alimentar”, “dieta restritiva”, “afeto negativo” e “humor negativo”. Foram incluídos artigos publicados desde o ano 1983. Resultados: Os estudos encontrados associam a alimentação emocional com fatores biopsicossociais relacionados com alteração emocional e consequente influência sobre a ingestão alimentar, como a obesidade e os transtornos alimentares, além de instrumentos de avaliação e intervenção para lidar com tal comportamento. Pode-se constar um aumento na disponibilidade de trabalhos sobre o tema ao longo dos anos, sendo a maioria deles desenvolvidos em países de língua inglesa. Conclusão: O interesse pelo tema se mostrou aumentado ao longo de todo o período revisado e provavelmente permanecerá nos próximos anos tendo em vista o estilo de vida moderna com impacto emocional, como aumento dos níveis de estresse, ansiedade e depressão, e também o aumento de casos de obesidade e transtornos alimentares.Introduction: The food intake when used to deal with negative emotions, as a form of response to them, is called emotional eating. Objective: Demonstrate the history and direction of research related to emotional eating. Materials and Methods: A narrative review of the literature was performed in the electronic databases (Pubmed and Scielo), using the descriptors: "emotional eating", "restrained eating", "dietary restraint", "negative affect" and "negative mood". In this review, papers since 1983 have been included. Results: The studies found relate the emotional eating with biopsychosocial factors related to emotional alteration and consequent influence on food intake, such as obesity and eating disorders, besides evaluation instruments and intervention to deal with this behavior. There has been an increase in the availability of papers on the theme over the years, most of them being developed in English-speaking countries. Conclusion: Interest in the topic has been increased throughout the review period and will likely remain in the next years due to the modern lifestyle with emotional impact, such as increased levels of stress, anxiety and depression, as well as increased cases of obesity and eating disorders

    Chemical, technological, and sensory quality of pasta and bakery products made with the addition of grape pomace flour

    Grapes are one of the most cultivated fruits in the world. Concomitantly, a large amount of waste is generated from this product. Grape pomace (GP) flour can be used as an increment for making new food products. GP is rich in fibers and phenolic compounds, and in addition could be used to reduce agro-industrial residues. Thus, the objective of this study was to evaluate the influence of the addition of different percentages of grape pomace (GP) on the chemical, technological, and sensory characteristics in pasta and bakery products. An integrative review was conducted. The selection of papers was carried out by searching studies in databases. An improvement in chemical quality with the addition of GP was observed, such as fiber, anthocyanin, and micronutrient content. Biscuits, cookies, cakes, breads, and pasta did not show any impairment in terms of acceptability. However, biscuits and cookies had the best global acceptance. The degree of acceptance still seems to be low for the use of GP to be included in high quantities in successful products. Samples with a maximum of 10% addition of GP flour seem to be accepted. On the other hand, the higher the percentage of GP flour, the healthier benefits they seem to promote

    Elaboration and evaluation of gluten-free cookies made with rice bran and rice and soy flours

    A exclusão do glúten da dieta é um grande desafio, pois muitos produtos que o contém fazem parte dos hábitos alimentares da população. Esse trabalho teve como objetivo avaliar as características físicas, químicas e sensoriais de biscoitos sem glúten, elaborados a partir de farinha de arroz, farelo de arroz e farinha de soja. Foram elaboradas quatro formulações: FT- padrão (trigo); FAFS- farinhas de arroz e de soja; FEFS- farelo de arroz e farinha de soja (1:1); FAFEFS- farinhas de arroz e de soja e farelo de arroz (1:1:1). Foram avaliados os seguintes parâmetros físicos: peso pós-cocção, diâmetro e espessura pós-cocção, e fator de expansão. Foram determinadas as quantidades de umidade, proteínas, lipídios, cinzas e carboidratos. Na análise sensorial, avaliou-se os atributos de aparência, cor, textura, sabor e aceitação global, e a intenção de compra. Em relação aos parâmetros físicos, FAFEFS apresentou diferença estatística significativa (p < 0,05) quanto ao aumento de diâmetro e fator de expansão. Quanto às análises químicas, FEFS apresentou valores estatisticamente significativos (p < 0,05) quanto ao teor proteico. Sobre a aceitabilidade, os biscoitos dos tratamentos alternativos não diferiram estatisticamente do padrão. Os biscoitos do tratamento FAFEFS obtiveram maior porcentagem de intenção de compra. Pode-se concluir, portanto, que os biscoitos elaborados com farelo de arroz e farinha de soja (FEFS) como substituto de farinha de trigo, se caracterizaram como uma alternativa viável do ponto de vista nutricional e sensorial.The exclusion of gluten from the diet is a great challenge, since a lot of products that contain it are part of the population’s food habits. The objective of this work was to evaluate the physical, chemical and sensory properties of gluten-free cookies, made with rice flour, rice bran and soy flour. Four formulations were made: FT- standard (wheat); FAFS- rice flour (50%) and soy flour (50%); FEFS- rice bran (50%) and soy flour (50%); FAFEFS- rice flour (33%), soy flour (33%) and rice bran (33%). The following physical parameters were evaluated: weight loss after cooking, increased diameter and thickness after cooking, and the expansion factor. The moisture, protein, fat, ash and carbohydrate contents were also determined. In the sensory analysis the attributes of appearance, colour, texture, flavour and overall acceptance were evaluated and the purchase intent determined. Regarding the physical parameters, FAFEFS showed statistically different results for the increase in diameter and expansion factor. As for the chemical analyses, FEFS showed statistically different values for the protein and dietary fibre contents. With respect to acceptability, the alternative treatments did not differ from the standard. The FAFEFS cookies showed the highest percentages for purchase intention. It can be concluded that cookies made with rice bran and soybean flour (FEFS) as a substitute for wheat flour are a viable alternative from the nutritional and sensory points of view
