    Cause and Effect Analysis between Influencing Factors Related to Environmental Conditions, Hunting and Handling Practices and the Initial Microbial Load of Game Carcasses

    Environmental, hunting and handling factors affect the microbial load of hunted game and the resulting meat products. The aim of this study was to systematically investigate the influence of several factors on the initial microbial load (IML) of game carcasses during the early hunting chain. Eviscerated roe deer body cavities (n = 24) were investigated in terms of total viable count and the levels of Pseudomonas spp., Lactobacillus spp., Enterobacteriaceae and Escherichia coli (E. coli). Furthermore, a risk analysis based on the obtained original IML data, literature search and a Failure Mode and Effects Analysis (FMEA) was performed. The IML could be explained in a regression model by factors including the higher body weight (BW), damaged gastrointestinal tract by the shot, ambient temperature or rain. The levels of Lactobacillus spp. (p = 0.0472), Enterobacteriaceae (p = 0.0070) and E. coli (p = 0.0015) were lower on the belly flap surface when gloves were used during evisceration. The literature search revealed that studies examining influencing factors (IF) on the IML of game carcasses found contradictory effects of the comparable IF on IML. Potential handling failures may lead to a higher IML of game carcasses during the early hunting chain ranked by FMEA. Several handling practices for game carcasses are recommended, such as ensuring efficient cooling of heavier BW carcasses to limit bacterial growth or eviscerating heavier carcasses before lighter ones

    Suitability of Different Thermometers for Measuring Body Core and Skin Temperatures in Suckling Piglets

    Monitoring the temperature of piglets after birth is critical to ensure their well-being. Rectal temperature measurement is time-consuming, requires fixation of the animal and is stressful for piglets. This study aims to evaluate the effectiveness of infrared thermometry and thermography as compared to rectal temperatures. We investigated digital thermometers for rectal measurements, infrared ear thermometers, infrared forehead thermometers, infrared laser thermometers and an infrared camera during field trials with piglets aged 1–13 days. Temperatures differed between the left and right ear and ear base (p < 0.01), but not between temples. Three forehead and laser devices yielded different temperatures (p < 0.01). Temperatures assessed with a laser thermometer decreased with distance from the target (p < 0.01). The highest correlation observed was between the rectal and tympanic temperatures (r = 0.89; p < 0.01). For temperatures assessed with the camera, inner thigh and abdomen correlated most closely to core temperature (0.60 ≀ r ≀ 0.62; p < 0.01). Results indicate that infrared ear thermometry commonly used in humans is also suited for assessing temperature in piglets. The inner thigh and abdomen seem promising locations for estimating core temperature with an infrared camera, but this approach needs to be adapted to reduce time exposure and stress for the piglets to be used under practical conditions

    High toxinogenic potential of Staphylococcus aureus from wild ungulates in Brandenburg, Germany with a low level of antibiotic resistance

    IntroductionData regarding the occurrence and virulence of Staphylococcus (S.) aureus in wild living animals is rare. However, S. aureus may carry a multitude of virulence factors and express resistance to several antimicrobial substances. Handling game meat may thus lead to serious infections or food poisoning. The aim of this study was to provide insights into the occurrence and characteristics of S. aureus in wild ungulates from Brandenburg, Germany.MethodsNasal swabs of externally healthy-looking wild boars, roe, fallow and red deer were collected in hunts during season 2021/2022 and analyzed for S. aureus by selective enrichment. Species were determined using matrix assisted laser desorption ionization mass spectrometry and tested for phenotypic antimicrobial resistance. Whole-genome sequencing was conducted for genotyping, determination of virulence associated genes and analysis of phylogenetic relationships.ResultsS. aureus were recovered from approximately 8% of nasal swabs. However, the strains were only obtained from the sampled wild ruminants. S. aureus isolates were associated with sequence types (ST) 1, ST30, ST133, ST425, ST582 and ST6238. Isolates of ST1 clustered closely together in the phylogenetic analysis. Genes encoding staphylococcal enterotoxin (SE) or SE-like (SEl) were found in 14/17 isolates. In particular, a seh gene was present in 12/17 isolates. Moreover, two isolates harbored a multiplicity of genes encoding SE or SEl. In addition, the toxic shock syndrome toxin encoding tst gene was detected in one isolate. This isolate was resistant to penicillin and cefoxitin and accordingly harbored the blaZ gene.DiscussionWild ungulates intended for human consumption may carry potentially virulent S. aureus. In one case, the close phylogenetic relationship of S. aureus isolates indicates a possible intraspecific spread within a common territory. However, for others, the origin or the spread pattern can only be inferred. Handling of animals or their carcasses might contribute to staphylococcal infections in humans. Moreover, food poisoning due to SE producing strains may occur, if recommended hygiene practices are not applied during processing of game meat

    Radio broadcasts, TV shows and online media make a significant contribution today-to-day consumer information and have a great impact on public opinion. Thepresent study provides an overview of the German reporting about the qualitystandards of the agri-food industry in the context of the negotiations towards a EUUSTransatlantic Trade and Investment Partnership (TTIP). On the basis of aguided empirical content analysis, 436 publications released via radio, TV orInternet in the period from June 2013 to December 2016 were quantitatively andqualitatively analyzed. The quantitative analysis showed that the agri-food industrywas generally of minor relevance in the coverage of TTIP, but focused mainly onquality standards. The term ‘quality and consumer protection standards‘ frequentlyappeared in the reportings with the topics such as genetic modification, use ofhormones, antibiotics or pesticides and the ‘chlorine-washed chicken‘. These arenot standards for official definition of the general food law. It was established thatall publications lacked information about specific standards. Thus, the quantitativeanalysis showed a superficial view of quality standards with only symboliccharacteristics. The results of the qualitative media analysis indicated a negativepicture of the effects of TTIP concerning the agri-food sector and its standards.Due to the complex structure of the globalised agri-food chains, the importance ofcomprehensive consumer information was highlighted. Overall, German mediafailed to provide scientifically based information. Unfortunately, they justhighlighted the possible negative changes which could be caused by TTIP

    Impact of tearing spermatic cords during castration in live and dead piglets and consequences on welfare

    Background!#!Although the tearing of tissues during castration is forbidden in the EU, it is still routinely applied in many countries. The goal of this study was to evaluate vocalizations and movements of male piglets undergoing castration by applying different techniques and pain treatments based on scores under practical conditions (Trial 1, n = 50) and to investigate anatomical features after castration of dead piglets with different techniques (Trial 2, n = 28).!##!Results!#!In Trial 1, treatment groups did not significantly influence the duration of castration. Both the duration of vocalization and the scores for vocalizations and movements were lower in piglets castrated under general anesthesia (P < 0.05). Behavior scores in conscious piglets did not differ. The incision and extraction caused lower vocalizations and movements than the pulling and severing of spermatic cords (P < 0.01). Movements were more intense during tearing of the spermatic cords than during cutting at the first and second severing (P < 0.01). In both trials, the remains of spermatic cords protruded tendentially more often from castration wounds after severing by tearing (P < 0.09). In Trial 2, the minimum, mean and maximum lengths of the testicles and spermatic cords were extended when severing was realized by tearing (P < 0.01). The mean relative testicle weight of 1.05‰ in dead piglets castrated by tearing was larger than that in dead piglets castrated by cutting (0.91‰) (P < 0.05).!##!Conclusions!#!The trials uncovered significant differences between behavior expressed by piglets castrated by tearing or cutting, indicating a higher pain level in the tearing group. It was found that the castration technique tearing increased the amount of removed tissues and might cause intraabdominal damage to the remaining tissues and vessels in a yet unknown dimension. These findings should be considered for implementation and stricter enforcement of the ban on tearing for castration

    Feasibility Study on the Use of Infrared Thermography to Classify Fattening Pigs into Feeding Groups According Their Body Composition

    Fattening pig husbandry and associated negative environmental impacts due to nitrogen inputs by ammonia emissions are current issues of social discussion. New resource-efficient feeding systems offer great potential to reduce excess nutrient inputs into the environment. Using ultrasound measurements, fattening pigs can be divided into performance groups based on their backfat/muscle ratio to feed them according to their nutritional needs. Ultrasound measurements are not suitable for practical use, so alternatives have to be found. As a non-invasive, contactless method, infrared thermography offers many advantages. This study investigated whether infrared thermography can be used to differentiate between “fat” and “lean” animals. Two evaluation methods with different measurement spot sizes were compared. During a fattening period, 980 pigs were examined three times with an infrared camera. Both methods showed significant differences. Body surface temperature was influenced by factors like measurement spot size and soiling of the animals. Body surface temperature decreased (−5.5 °C), while backfat thickness increased (+0.7 cm) in the course of the fattening period. Significant correlations (R > |0.5|; p < 0.001) between both parameters were found. Differentiation between “fat” and “lean” animals, based on temperature data, was not possible. Nevertheless, the application of thermography should be investigated further with the aim of resource-efficient feeding. The results of this feasibility study can serve as a basis for this

    Understanding the Importance of International Quality Standards Regarding Global Trade in Food and Agricultural Products: Analysis of the German Media

    Rapid globalization of the agrifood industry has important impacts on international trade and quality management (QM). Likewise, the European Union has negotiated a series of bilateral free trade agreements. Of note was the Transatlantic Trade and Investment Partnership (TTIP) with the United States of America, where the debate focused on the mutual recognition and harmonization of quality standards, especially for agricultural and food products. This topic offered the mainstream media excellent substances for coverage. This paper explores German print media, television, and radio on the importance of international quality standards in the agrifood sectors in light of the TTIP. A quantitative and qualitative empirical content analysis was performed to investigate media reporting regarding (a) it is scientific character, (b) the use of the term “quality standards” of the agrifood industry, and (c) the reporting on the agrifood industry and QM linked with TTIP, focused on harmonization. The results showed that interrelations between QM and global trade were not presented to recipients in-depth. A trend toward information asymmetries in recipient’s knowledge is indicated. The study addresses recommendations for future collaborations between media, policy-makers, and further cooperation in the mutual recognition and harmonization of quality standards and control procedures within global trade

    Ontogenic Changes of Villus Growth, Lactase Activity, and Intestinal Glucose Transporters in Preterm and Term Born Calves with or without Prolonged Colostrum Feeding

    Oral glucose supply is important for neonatal calves to stabilize postnatal plasma glucose concentration. The objective of this study was to investigate ontogenic development of small intestinal growth, lactase activity, and glucose transporter in calves (n = 7 per group) that were born either preterm (PT; delivered by section 9 d before term) or at term (T; spontaneous vaginal delivery) or spontaneously born and fed colostrum for 4 days (TC). Tissue samples from duodenum and proximal, mid, and distal jejunum were taken to measure villus size and crypt depth, protein concentration of mucosa and brush border membrane vesicles (BBMV), total DNA and RNA concentration of mucosa, mRNA expression and activity of lactase, and mRNA expression of sodium-dependent glucose co-transporter-1 (SGLT1) and facilitative glucose transporter 2 (GLUT2) in mucosal tissue. Additionally, protein expression of SGLT1 in BBMV and GLUT2 in crude mucosal membranes and immunochemical localization of GLUT2 in the enterocytes were determined. Villus height in distal jejunum was lower in TC than in T. Crypt depth in all segments was largest and the villus height/crypt depth ratio in jejunum was smallest in TC calves. Concentration of RNA was highest in duodenal mucosa of TC calves, but neither lactase mRNA and activity nor SGLT1 and GLUT2 mRNA and protein expression differed among groups. Localization of GLUT2 in the apical membrane was greater, whereas in the basolateral membrane was lower in TC than in T and PT calves. Our study indicates maturation processes after birth for mucosal growth and trafficking of GLUT2 from the basolateral to the apical membrane. Minor differences of mucosal growth, lactase activity, and intestinal glucose transporters were seen between PT and T calves, pointing at the importance of postnatal maturation and feeding for mucosal growth and GLUT2 trafficking
