Hybrid Food Preservation Program Improves Food Preservation and Food Safety Knowledge
The growing trend in home food preservation raises concerns about whether the resulting food products will be safe to eat. The increase public demand for food preservation information led to the development of the comprehensive food preservation program, Preserve the Taste of Summer (PTTS). PTTS is a comprehensive hybrid food preservation program comprised of online lessons and corresponding in-person workshops. Algebras of operations in K-theory
We describe explicitly the algebras of degree zero operations in connective
and periodic p-local complex K-theory. Operations are written uniquely in terms
of certain infinite linear combinations of Adams operations, and we give
formulas for the product and coproduct structure maps. It is shown that these
rings of operations are not Noetherian. Versions of the results are provided

Sequential Online Wellness Programming Is an Effective Strategy to Promote Behavior Change
The growing number of United States youth and adults categorized as overweight or obese illustrates a need for research-based family wellness interventions. Sequential, online, Extension-delivered family wellness interventions offer a time- and cost-effective approach for both participants and Extension educators. The 6-week, online Healthy Families Challenge (HFC) resulted in increased daily fruit and vegetable servings and leisure-time physical activity. These findings suggest that an Extension-delivered, sequential, online family wellness program is an effective education strategy
Latinos Living Well—A Diabetes Education Program for Rural-Residing Latinos
Diabetes is a health issue for many Latinos. Extension can help provide diabetes self-management education for rural-residing Latinos. In a pilot study, we evaluated the Extension-delivered diabetes program Latinos Living Well (LLW), as provided to 76 rural-residing Latino adults in a midwestern state. LLW consists of four weekly lessons that include hands-on activities and cooking practicums. Participants completed diabetes self-management, self-efficacy, and knowledge questionnaires; significant (p ≤ .05) changes from before to after the program were detected for each outcome measure. Additionally, participants viewed LLW favorably. Results suggest that LLW is an effective, culturally relevant diabetes self-management education program for Latinos and is appropriate for Extension deliver
Promoting Nutrition and Wellness Statewide Through an Electronic Newsletter
The Words on Wellness (WOW) newsletter was designed as an electronic newsletter intended to provide research-based nutrition and wellness information to Iowans. An evaluation was conducted to assess to what extent the newsletter is being used by its readership and whether readers are making lifestyle changes as a result. Those who completed the online survey (n = 154) report making lifestyle changes and finding the information to be current, understandable, and relevant to their lives. These results indicate that the use of indirect nutrition and wellness educational materials (i.e., a newsletter) is effective in promoting research-based information that results in self-reported behavior change
